DAVID'S FAMOUS BUFFALO WING RECIPE



David's Famous Buffalo Wing Recipe image

My son's recipe for Buffalo wings. It doesn't involve deep frying so you can kid yourself into thinking it is more healthy.

3/4 cup flour
1 tablespoon Lawry's Seasoned Salt
1/2 tablespoon salt
1/2 tablespoon garlic powder
20 chicken wings, sectioned
12 ounces Frank's red hot sauce
1 tablespoon italian seasoning

Steps:

  • Put 3/4 cup flour, big tablespoon of Lawry's seasoning salt, big tablespoon garlic powder, and 1/2 tablespoon salt into a freezer bag.
  • Toss wings (recipe good for up to 20 wings) in the bag (few at a time) and place them on a cookie sheet (with a greased sheet of aluminum foil on it).
  • Refrigerate for an hour or more.
  • Dip wings in Frank's Redhot BUFFALO sauce (not just normal Frank's, they do make a Buffalo sauce) and place them back on the aluminum foil.
  • Put wings in oven for 30 minutes at 400 degrees Fahrenheit.
  • Turn wings over.
  • Drizzle leftover sauce on top and sprinkle some Italian seasoning on top as well.
  • Cook for another 30 minutes at 400 degrees Fahrenheit.

SOURCE THE FRUGAL GOURMET . According to Jeff Smith ( The Frugal Gourmet) this is the way these wings were orginally prepared in Buffalo. This recipe also includes the famous dipping sauce.

1 tablespoon white wine vinegar
1/2 cup milk
2 tablespoons fine chopped yellow onions
1 garlic clove, crushed
1/4 cup parsley, minced
1 cup mayonnaise
1/4 cup blue cheese, crumbled into fine pieces
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper, fresh ground
1 pinch cayenne pepper
1/4 lb butter
2 tablespoons Tabasco sauce
50 pieces chicken wings (either center or upper portion or both)
peanut oil (for deep frying)
celery rib (to garnish)

Steps:

  • Mix the wine vinegar with the milk, and allow the milk to curdle.
  • Add the yellow onion, garlic, parsley, mayonnaise, blue cheese, lemon juice, salt, pepper, and cayenne.
  • Mix well.
  • Refrigerate before serving.
  • In a large skillet melt the butter over low heat, and stir in the hot sauce.
  • Add more or less to taste.
  • Deep fry the wing pieces in small batches in peanut oil at 385f for about 10 minutes, or until browned and crisp.
  • Drain on paper towels ( if you wish to avoid the fat, bake the wings in a 400f oven for 25 minutes).
  • When all the wings have been fried, reheat the skillet containing the hot sauce, and toss the wings about in the sauce.
  • Serve with the dressing for a dip and celery sticks on the side.

24 lean chicken wings
1/2 cup dark brown sugar
1 tablespoon chili powder
1 tablespoon sweet smoked paprika
1 tablespoon ground cumin
1 teaspoon cayenne pepper
2 tablespoons garlic powder
1 tablespoon mustard powder
2 tablespoons kosher salt (or to taste)
1 tablespoon black pepper
1 cup oil

Steps:

  • Thoroughly whisk together the dark brown sugar, chili powder, sweet smoked paprika, ground cumin, hot cayenne pepper, ground garlic powder, ground mustard powder, table salt, and black pepper.
  • Evenly coat each chicken wing with the pure vegetable oil.
  • With the dry rub in a shaker evenly coat chicken generously.
  • Evenly coat with the seasonings and save remaining seasoning.
  • Preheat your oven to 400 degrees.
  • Cook 30-45 minutes or until desired texture is achieved.
  • At about the half way baking marker, sprinkle the remaining seasonings over the top of the baking chicken.

4 pounds chicken wings
salt and pepper to taste
4 cups vegetable oil
ΒΌ cup butter
2 teaspoons hot pepper sauce
1 teaspoon distilled white vinegar

Steps:

  • Heat oil in a deep-fat fryer or large heavy pot to 375 degrees F (190 degrees C).
  • Cut off tips, and separate each wing at the joint. Sprinkle with salt and pepper.
  • Place half of the wings in the deep fryer. When the wings are golden brown and crisp, remove them and drain well. Salt wings to taste. Add remaining wings and repeat frying process. Once wings have drained a bit, place them in a large mixing bowl.
  • Melt butter or margarine in a small saucepan. Mix in hot sauce and vinegar. Pour melted sauce over the cooked wings, and mix to coat the wings with sauce.

12 ounces Frank's red hot sauce
4 ounces butter
1/2 lemon, juice of, a medium
black pepper
flour (for dredging)
cayenne pepper
Tabasco sauce, for extra heat
2 teaspoons Good Seasons Italian dressing, mix

Steps:

  • If you don't have the Good Season dressing packet you can substitute this seasoning mixture using some or all of these items and use one teaspoon and save the rest:.
  • 1 tsp oregano.
  • 1/2 tsp basil.
  • 1/4 tsp thyme.
  • 1 tsp garlic powder.
  • 1 tsp onion powder.
  • 1/2 tsp celery salt.
  • If making seasoning mix, add some to the flour with salt and pepper.
  • Cover wings in flour.

4 lbs chicken wings, tips removed (about 24)
1 (2 ounce) envelope Lipton golden onion soup mix
1/2 cup butter or 1/2 cup margarine, melted
1 tablespoon lemon juice or 1 tablespoon vinegar
2 tablespoons water
3 garlic cloves
1 1/2-2 teaspoons cayenne pepper
1 teaspoon ground cumin
1 cup blue cheese dressing

Steps:

  • Halve wings at joint.
  • Blend soup mix, butter, vinegar, water, garlic, pepper, and cumin in food processor or blender; set aside.
  • Broil chicken until brown (12 minutes), turning once halfway through cooking.

I found this recipe on the back of a Frank's Hot Sauce bottle. I modified the cooking directions. I found it better to bake the wings after the sauce has been added, but feel free to bake beforehand if that's your thing. Absolutely Yummy!

4 lbs chicken wings (the party wings kind, not full wings)
1 cup frank's hot sauce
2/3 cup butter (I use I Can't Believe It's Not Butter) or 2/3 cup margarine, melted (I use I Can't Believe It's Not Butter)

  • Preheat oven to 350 degrees.
  • Season chicken to taste.

Steps:

  • Set air fryer to 350-degrees F.
  • Add chicken wings to air fryer basket and cook for 10 to 12 minutes, pause the machine halfway through cooking and shake the basket to make sure the wings aren't sticking. Continue to cook until wings are golden and crispy*.
