Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan. In a saucepan over medium heat, bring dates and water to a boil. Stir in 1/2 cup butter and 1 cup sugar until melted. Remove from heat and stir in baking soda. Let cool for 10 minutes.
- Place date mixture into a large bowl. Blend in flour, eggs and vanilla. Stir in chopped walnuts. Pour batter into prepared pan.
- Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Serve slices with Warm Sauce.
- To make Warm Sauce: In a saucepan over medium heat, combine 1/4 cup butter with cream and brown sugar. Heat, stirring constantly, until mixture boils and sugar is dissolved.

- Combine dates, butter, baking soda, salt and brown sugar in a bowl. Add hot coffee over date mixture. Stir well. Heat mixture for 3 minutes in the microwave. Cool for 15 minutes. Stir egg in a separate bowl with Boiled Apple Cider. Add to cooled date mixture. Stir in the dry ingredients: cinnamon, baking powder, unbleached All-Purpose flour, buttermilk powder, and coarsely chopped Pecans. Beat on low to blend ingredients. Be careful not to over mix; too much mixing will interfere with leavening. Preheat oven to 350 degrees. Lightly grease an 8 1/2" x 4 1/2" loaf pan. Pour the batter into the pan, gently tapping the pan on the counter to settle the batter. Bake the bread from 45 to 55 minutes. Loaf is done at 180 to 200 degrees measured one inch from edge with an instant read thermometer. After 10 minutes gently turn the bread out of the pan onto a rack to cool. Cool completely. Continue cooling in the refrigerator. Do not seal or slice before fully cooled. Slice into 12 slices and spread with cream cheese if desired.

- Preheat oven to 350 degrees. Toast the walnuts for just about 8 - 10 minutes. Prepare an 8 1/2" x 4 1/2" loaf pan with oil and a piece of parchment paper large enough to form an overhang along the length of the pan. Pit the dates and remove the stems. Chop into coarse pieces and place in a medium bowl. Cover the dates with 1 cup of strong coffee. Add the zest of 1 orange and the baking soda. Melt butter and beat in the sugars. Add the egg and beat until the mixture is emulsified. Add the date mixture and combine thoroughly. Sift the flour, cocoa powder, salt, cinnamon and nutmeg. Combine milk, liquor (if using) and vanilla. Alternate adding half the flour and all the milk mixture, beginning and ending with the flour. Once all the ingredients have been added, mix just a minute or so until everything is fully combined. Fold in the toasted walnuts. Pour the mixture into the prepared loaf pan. Bake the cake for about 55 minutes or until a toothpick inserted in the center comes out with a few moist crumbs attached. Cool the cake on a wire rack for about 30 minutes. Remove it from the pan, carefully peel off the parchment paper and cool the cake completely.
