2 cups whipping cream
6 tablespoons Irish cream liqueur
1/4 cup sugar
1/2 teaspoon vanilla extract
2 teaspoons cornstarch
2 teaspoons water
Bread pudding
14 cups 3/4-inch cubes French bread with crust (about 12 ounces)
6 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
6 ounces imported white chocolate, chopped
4 large eggs
1/2 cup plus 4 tablespoons sugar
2 teaspoons vanilla extract
2 cups whipping cream
1/2 cup whole milk
Nonstick vegetable oil spray

Steps:

  • For sauce:
  • Bring cream, liqueur, sugar, and vanilla to boil in heavy medium saucepan over medium-high heat, stirring frequently. Mix cornstarch and 2 teaspoons water in small bowl to blend; whisk into cream mixture. Boil until sauce thickens, stirring constantly, about 3 minutes. Cool, then cover and refrigerate until cold, about 2 hours. (Can be made 3 days ahead. Keep refrigerated.)
  • For bread pudding:
  • Combine bread, chocolate, and white chocolate in large bowl; toss to blend. Using electric mixer, beat eggs, 1/2 cup plus 2 tablespoons sugar, and vanilla in another large bowl to blend. Gradually beat in 1 1/2 cups cream and milk. Add cream mixture to bread mixture; stir to combine. Let stand 30 minutes.
  • Preheat oven to 350°F. Spray 13x9x2-inch glass baking dish with nonstick spray. Transfer bread mixture to prepared dish, spreading evenly. Drizzle with remaining 1/2 cup cream. Sprinkle with remaining 2 tablespoons sugar. Bake pudding until edges are golden and custard is set in center, about 1 hour. Cool pudding slightly.
  • Drizzle bread pudding with sauce and serve warm.

1 cup white sugar, divided
2 tablespoons all-purpose flour
1 egg
2 cups milk
4 (1 ounce) squares semisweet dark chocolate (such as Baker's®)

  • Mix 1/2 cup sugar and flour together in a small bowl.
  • Mix remaining sugar and egg in another bowl. Add to flour mixture and mix together.
  • Heat milk in a heavy saucepan over medium-low heat until warm, about 5 minutes; do not let boil. 2 tablespoons/30 grams unsalted butter, softened
1 teaspoon/5 milliliters vanilla extract
2 1/2 cups/590 milliliters whole milk
1/2 cup/120 milliliters heavy cream
1/3 cup/67 grams light or dark brown sugar
2 tablespoons/15 grams unsweetened cocoa powder
2 tablespoons/20 grams cornstarch
1/4 teaspoon/2 grams fine sea salt

Steps:

  • In a small heatproof bowl, whisk together egg and yolks. Set aside.
  • Place chocolate, butter and vanilla extract in a food processor or blender but don't turn on.
  • In a medium pot, whisk together milk, cream, brown sugar, cocoa, cornstarch and salt until smooth. Bring to a full boil, whisking, and let bubble for 1 to 2 minutes to activate cornstarch. At that point, it will start to thicken, and when it does immediately pull the pot off the heat. (You don't want to overboil the cornstarch, which can cause it to thin out again.)
  • Pour a little of the hot cornstarch mixture into the eggs, stirring constantly to prevent them from curdling, then pour eggs back into the pan with the remaining cornstarch mixture. Cook over low heat, whisking constantly, until mixture just returns to a bare simmer (one bubble is plenty). Immediately pour into the food processor or blender. Run the machine until the pudding is very smooth (the hot milk mixture will melt the chocolate).
  • Pour into individual bowls or teacups or 1 large decorative bowl and cover with plastic wrap. Refrigerate until firm and cold, at least 4 hours for individual servings and as many as 8 hours for 1 large bowl. Pudding can be made 3 days ahead. Serve with whipped cream or whipped crème fraîche, decorated with chocolate shavings and a pinch of sea salt, if you like.

  • Whisk the egg yolks and 2 tablespoons coffee liqueur in a medium bowl. Whisk the milk, granulated sugar, cocoa powder, cornstarch and salt in a medium saucepan until smooth. 60g butter , plus extra for the ramekins
2 tbsp cocoa powder
100g 70% dark chocolate
2 eggs
100g caster sugar
½ tsp malt powder (we used Ovaltine)
100ml double cream
2 tbsp muscovado sugar
1 tbsp malt powder
9 Maltesers , crushed into large chunks
3 glacé cherries , cut in half
1 tbsp chopped salted pistachios

Steps:

  • Butter three ramekins, dust with cocoa and set aside. Heat oven to 200C/180C fan/gas 6. Melt the butter and chocolate in a bowl over a pan of simmering water. In a separate bowl, whisk together the eggs and sugar until light and fluffy, then whisk in the chocolate mixture with the malt powder and a pinch of salt. Divide the mixture between the ramekins and bake for 14 mins until they are just cooked with a slight wobble in the middle to make a fondant, or 18 mins for a pudding. Remove from the oven, turn out and serve warm now, or leave to cool in their ramekins.
  • Whisk the cream, sugar and malt powder together to soft peaks. Carefully turn the puddings out onto plates, then pile on the Maltesers, cherries and pistachios, and serve with the malted cream.

60 g large glace cherries, quartered (2 1/4 oz)
1 tablespoon black treacle
4 tablespoons extra virgin olive oil
1 small apple, cored, peeled, grated
2 tablespoons whiskey
40 g plain flour (1 1/2 oz)
25 g molasses sugar (1 oz)
15 g cocoa powder (1/2 oz)
2 teaspoons mixed spice
1 teaspoon salt
85 g bitter chocolate, 70% cocoa solids, grated (3oz)
1 large egg, beaten
227 g clotted cream, to serve (8 oz)

Steps:

  • Mix together the dried fruit, treacle, olive oil, apple and whiskey and leave for at least 4 hours , or overnight if possible.
  • Mix all dry ingredients together.
  • Add the egg to the soaked fruit and mix well.
  • Finally add the dry ingredients and mix well, but do not over-mix.
  • Place the mixture in a pudding basin, 617cm (6 1/2 in) in diameter and 9cm (3 1/2 in) deep, and cover with a circle of greaseproof paper.
  • Place a large piece of foil on top of a large piece of greaseproof paper, then fold in the centre to make a pleat.
  • Place the pleated papers on top of the pudding basin and use a long piece of string to tightly tie just below the rim of the basin.
  • With an extra piece of string, tie a long loop across the top, you can use this as a handle to help lower and lift the pudding in and out of the pan.
  • Place a heatproof sauce in the bottom of a large saucepan and sit the pudding on top.
  • Fill the pan with enough boiling water to come halfway up the side of the basin, then cover with a tightly fitting lid.
  • Bring the water to the boil, reduce the heat and simmer gently for 4-5 hours.
  • Check the water every couple of hours, and add extra boiling water as necessary to maintain the water level until the pudding had cooked.

DARK CHOCOLATE AND EARL GREY PUDDING

Number Of Ingredients 6

1 cup milk
1 teaspoon salt
2 tea bags Earl Grey
4 sheets gelatin
6 ounces bittersweet chocolate
3 cups heavy whipping cream

Steps:

  • Place the milk, salt and tea bags in a small pot. Bring to a simmer, then remove from the heat and steep for at least 30 minutes.
  • Bloom the gelatin in ice water until soft. Bring the milk back to a boil, and then remove from the heat. Remove the tea bags and discard; add the gelatin to the milk, stirring until dissolved. Place the chocolate in a medium bowl. Pour the hot milk over the chocolate, and stir until completely melted. Cool to room temperature.
  • Using an electric hand mixer, whip the cream to soft peaks, and fold into the chocolate. Pour the pudding into desired serving container and chill to set, at least 4 hours.

12 tablespoons Irish cream liqueur
1/4 cup sugar
1/2 teaspoon vanilla extract
3 teaspoons cornstarch
3 teaspoons water
Pudding
12 ounces bread, cubed, Challah or Hawaiian bread
6 ounces bittersweet or semisweet chocolate chips or chopped
6 ounces white chocolate chips or chopped
4 each eggs
1/2 cup & 4 tbl sugar
2 teaspoons vanilla extract
2 cups whipping cream
1/2 cup whole milk

Steps:

  • 1. For Sauce: 2. Bring cream, liqueur, sugar and vanilla to boil in heavy medium saucepan over medium-high heat, stirring frequently. 3. Mix cornstarch and water in small bowl; whisk into cream mixture. Boil until sauce thickens, stirring constantly, about 3 minutes. 4. Cool, then cover and refrigerate until cold, about 2 hours. 5. Can be made 3 days ahead. Keep refrigerated. 6. 7. For Pudding: 8. Combine bread cubes, chocolate and white choclate in large bowl; toss to blend. 9. Using an electric mixer, beat eggs, 1/2 cup plus 2 teaspoons sugar, and vanilla in another large bowl to blend. Gradually beat in 1-1/2 cups cream and milk. 10. Combine bread and cream mixture; stir. Let stand 2-3 hours. Or cover and refrigerate up to a day. 11. Preheat oven to 350 degrees F. Spray 13/9/2-inch glass baking dish with nonstick spray. Spread bread mixture evenly in prepared dish. 12. Drizzle with remain 1/2 cup cream (more if bread appears dry). Sprinkle with 2 tablespoons sugar. 13. Bake pudding until edges are golden and custard is set in center, about 1 hour. Cool slightly. 14. Serve pudding warm with cold sauce.

1/4 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
2 cups milk
3 egg yolks, beaten
7 ounces dark chocolate candy bars, melted
1 teaspoon vanilla extract
whipped cream (optional)
grated chocolate (optional)
pirouette cookies (optional)

Steps:

  • In a large saucepan, combine the sugar, cornstarch and salt.
  • Stir in milk until smooth.
  • Cook and stir over medium-high heat until thickened and bubbly.
  • Reduce heat; cook and stir 2 minutes longer.
  • Remove from the heat.
  • Stir a small amount of hot mixture into egg yolks; return all to pan, stirring constantly.
  • Bring to a gentle boil; cook and stir 2 minutes longer.
  • Remove from the heat; gradually whisk in chocolate and vanilla until smooth.
  • Press plastic wrap onto surface of pudding.
  • Refrigerate.
  • Spoon into dessert dishes.
  • Garnish with whipped cream, grated chocolate and cookies.
  • Serve warm or cold.
  • Yield: 4-6 servings.

¼ cup Ghirardelli® Unsweetened Cocoa Powder
¾ cup boiling water

Steps:

  • Preheat oven to 350 degrees F. In a medium bowl, combine flour, 1/4 cup of the sugar, the baking powder, and salt. Add half-and-half. Whisk until smooth. Stir in chocolate-hazelnut spread and Ghirardelli® 60% Cacao Bittersweet Chocolate Baking Chips.
  • Divide batter evenly among six 5- to 6-ounce oven-safe ramekins or bowls. Place in a 15x10x1-inch baking pan. Set aside. In a small bowl, stir together the remaining 1/2 cup sugar and the Ghirardelli® Unsweetened Cocoa Powder. Gradually stir in boiling water. Pour evenly over batter in ramekins.

1 tsp. baking soda
1 cup butter or margarine, softened

1-1/2 pkg. (4 oz. each) BAKER'S Bittersweet Chocolate (6 oz.), chopped

Steps:

  • Heat oven to 350°F.
  • Mix flour, dry pudding mix and baking soda until blended. Beat butter and sugar in large bowl with mixer until light and fluffy. Blend in eggs. Gradually add flour mixture, beating well after each addition. Stir in chopped chocolate.

4 large egg yolks
2 cups whole milk

1/2 vanilla bean, split lengthwise
6 ounces bittersweet chocolate, melted, slightly cooled
1 tablespoon unsalted butter
1 teaspoon vanilla extract
Whipped cream and chopped pretzels (for serving)

Steps:

  • Whisk sugar, cornstarch, cocoa powder, and salt in a medium saucepan. Whisk egg yolks, milk, and cream in a large bowl; scrape in vanilla seeds and add pod. Gradually whisk milk mixture into dry ingredients, whisking until smooth.
  • Bring mixture to boil over medium-high heat, whisking constantly. Reduce heat to medium and continue cooking, whisking, until mixture is thick enough to coat a spoon, about 4 minutes.
