Quick and easy. egg recipe given to me by an elderly neighbor, she always gave me a jar at Christmastime. The last time she gave me some she gave me the recipe too , said she could no longer make them, she was 97.

1 1/2 c red wine vinegar or cider vinegar
1/2 c water
1 Tbsp dark brown sugar
1 tsp pickling spices
1/4 tsp liquid smoke
2 tsp salt
2 tsp granulated sugar
6 to 8 large hard boiled eggs, shells off
glass jar

Steps:

  • 1. Combine all ingredients except eggs and glass jar. In a saucepan , bring the ingredients to a boil, simmer for 5 minutes. Put peeled eggs in glass jar and pour liquid through strainer over eggs. Seal jar and refrigerate to season. Takes at least 2 to 4 week to season. Worth the wait,believe me. I always make at least 6 jars when eggs go on sale.

Yield Makes 6 pickled eggs

Number Of Ingredients 21

6 hard-boiled eggs, peeled
1 cup distilled white vinegar
2 teaspoons kosher salt
2 teaspoons sugar
For pink pickled eggs:
1/2 small beet, peeled, quartered
1 shallot, sliced
1 bay leaf
For yellow pickled eggs:
1 (1/2-inch) piece ginger, thinly sliced
2 teaspoons black peppercorns
1/4 teaspoon turmeric powder
For purple pickled eggs:
1 cup chopped purple cabbage
1 teaspoon caraway seeds
2 teaspoons baking soda, divided
For orange pickled eggs:
1 medium carrot, peeled, sliced
2 garlic cloves
1 sliver peeled beet
Small pinch of saffron

Steps:

  • Place eggs in a medium glass heatproof jar. Cook vinegar, salt, sugar, and 1 cup water in a small pot over high heat, stirring, until salt and sugar dissolve.
  • To make pink pickled eggs:
  • Add beet, shallot, and bay leaf and bring to a boil. Remove from heat and let cool slightly. Pour over eggs, stir, and chill at least 3 hours or up to overnight for a darker shade of pink.
  • To make yellow pickled eggs:
  • Add ginger, peppercorns, and turmeric and bring to a boil. Remove from heat and let cool slightly. Pour over eggs, stir, and chill at least 3 hours or up to overnight for a darker shade of yellow.
  • To make purple pickled eggs:
  • Add cabbage and caraway seeds and bring to a boil. Remove from heat and let cool slightly. Pour over eggs. Add 1 tsp. baking soda and stir until foaming subsides, then stir in remaining 1 tsp. baking soda. Chill at least 3 hours or up to overnight for a darker shade of purple.
  • To make orange pickled eggs:
  • Add carrot, garlic, beet, and saffron and bring to a boil. Remove from heat and let cool slightly. Pour over eggs, stir, and chill at least 3 hours or up to overnight for a darker shade of orange.
  • Do Ahead
  • Pickled eggs can be made 5 days ahead. Remove from pickling brine once desired color has been reached, transfer to an airtight container, and chill.

Love pickled eggs? It's easy to make them, and you can add spices like chilli flakes, turmeric, curry powder or mustard seeds to flavour and colour them

400ml white wine vinegar
100g caster sugar
2 bay leaves
1 tbsp black peppercorns
1 tbsp coriander seeds
6 large eggs

Steps:

  • Put the vinegar, sugar, bay, spices, ½ tbsp salt and 150ml water in a small pan and heat for a few mins until the sugar dissolves. See tip below about adding other flavours and spices. Leave to cool completely while you boil the eggs.
  • Bring a large pan of water to the boil, lower in the eggs with a slotted spoon and set a timer for 10 mins. Once the timer goes off, immediately plunge the eggs into ice cold water and leave to cool. Gently tap the eggs on the work surface and peel off the shells.
  • Put the boiled eggs in a sterilised jar where they all fit, about 1 litre, and pour over the cooled pickling liquid to cover. Seal and leave in a cool, dark place for at least two weeks, or up to three months. Once opened, keep in the fridge and eat within two weeks.

I personally have never eaten a pickled egg in my life. My husband on the other hand loves pickled eggs. I took a couple of different recipes for pickled eggs and came up with this one. It's a real hit with him and his family!

4 dozen hard-boiled eggs
4 cups vinegar
1 onion, sliced
8 habanero peppers
7 jalapenos
1/2 cup pickled jalapeno pepper
2 tablespoons red pepper flakes
5 dashes hot sauce
2 tablespoons salt
3 tablespoons mustard seeds
3 pinches alum
4 tablespoons peppercorns
5 cloves garlic
2 cups sliced carrots or 2 cups cauliflower (or both)

Steps:

  • boil everything except the eggs for about 15 minutes.
  • put the eggs in a huge jar.
  • pour the hot brine on top of the eggs.
  • top off with hot water to completely cover the eggs.
  • let sit in the refrigerator for 2 weeks.

GARLIC PICKLED EGGS

These tasty pickled eggs are great to keep around as a snack. For red eggs, substitute beet juice for water.

12 eggs
1 onion, sliced into rings
1 cup distilled white vinegar
1 cup water
¼ cup white sugar
10 cloves garlic, peeled

Steps:

  • Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.
  • Place the eggs in a 1 quart jar with the onion rings.
  • In a medium saucepan, bring to a boil the vinegar, water, sugar and garlic. Remove from heat and allow to cool approximately 15 minutes.
  • Pour the vinegar mixture over the eggs and cover. Refrigerate 1 week before serving.
