DANG GOOD PIE
The name is right ... this pineapple coconut pie is dang good! It reminds us of a creamy pina colada. In each bite, you taste little bits of coconut and pineapple. It's super easy to make too. Just delightful!

Steps:
- 1. Bake prepared pie crust at 350 for 10 minutes.
- 2. Mix eggs in small bowl. Then melt butter. Mix all ingredients together in medium bowl. Do not drain the pineapple.
- 3. Pour into prepared pie shell and bake. Bake at 350 for 45 min or until the center is set.

My Great Aunt Lola was an AWESOME lady and the best baker in the WORLD! She lived to be in her 90's, she passed away back in '82. She is still missed by everyone!! This is one of her pies with pineapple and coconut! Enjoy!

DANG GOOD PIE
Steps:
- In a large mixing bowl, cream buter and sugar with electric mixer until light and fluffy. Beat in eggs, one at a time. Add vanilla and beat until well combined. Using a wooden spoon, stir in pineapple, coconut, and flour. Pour into pie shell and bake at 350 degrees for 60 minutes or until set and golden brown. Cool pie completely and refrigerate. Serve cold. Leftovers should be refrigerated.
