HOT ASIAGO AND SPINACH DIP

This cheesy and creamy hot dip is perfect for entertaining and can also be served as an appetizer. Serve with pita bread, baguette, tortilla chips, or veggies.

1 (8 ounce) package cream cheese, softened
½ cup mayonnaise
½ cup sour cream
2 teaspoons minced garlic
2 cups grated Asiago cheese
½ cup minced fresh parsley
1 ½ cups frozen chopped spinach, thawed and drained

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine the cream cheese, mayonnaise, sour cream, and garlic in a mixing bowl. Add the Asiago cheese and parsley; mix well. Press as much moisture out of the spinach as you can; stir into the mixture. Spread into the bottom of an 8 1/2 x 10 baking dish.
  • Bake in the preheated oven until the middle is bubbling and the edges are golden brown, 20 to 25 minutes.

1 package (8 ounces) cream cheese, softened
1/2 cup mayonnaise
1/4 cup grated Parmesan cheese
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup shredded part-skim mozzarella cheese

Steps:

  • In a small bowl, beat the cream cheese, mayonnaise and Parmesan cheese until blended. Stir in spinach and mozzarella cheese. Spoon into an ungreased microwave-safe 9-in. pie plate., Microwave, uncovered, on high for 4-5 minutes or until bubbly, stirring twice. Serve with crackers or vegetables.

Fusilli with Fresh Spinach and Ricotta - Lidia Bastianich Recipe image

1 ½ pounds young spinach
1 pound fusilli
2 tablespoons extra virgin olive oil
1/4 cup trimmed and chopped spring onions or scallions
Freshly ground black pepper
1 cup ricotta, preferably fresh
1 cup half‑and‑half or light cream
1 tablespoon unsalted butter
½ cup reserved pasta cooking water
½ cup freshly grated Parmigiano-Reggiano

Steps:

  • Bring a large pot of salted water to a boil. Remove the stems from the spinach. Swish the spinach leaves in a large bowl or sinkful of cool water to clean. If there is a lot of sand and grit in the bottom of the bowl, change the water and wash the leaves again. Drain the spinach leaves and dry them well, preferably in a salad spinner. Stack several of the leaves and cut them crosswise into 1/4 inch strips. Repeat with the remaining spinach. You should have about 8 packed cups of shredded spinach. Stir the fusilli into the boiling water. Cover the pot and reheat to boiling, stirring once or twice. When the water returns to a boil, uncover the pot. Cook the pasta, stirring occasionally, until al dente- tender but firm- about 12 minutes.Meanwhile, in a large skillet heat the olive oil over medium heat. Add the onions and cook until wilted, about 3 minutes. Stir in the spinach and a pinch each of salt and pepper. Cover the skillet and steam the spinach until wilted but still bright green, about 3 minutes. In a small bowl stir the ricotta and half and half until smooth. Stir the ricotta mixture and the butter into the skillet. Add salt and pepper to taste. Reduce the heat and simmer 5 minutes. Reserve ½ cup of the pasta cooking liquid. Drain the pasta well and return it to the pot over low heat. Add the spinach mixture and enough of the reserved cooking liquid to make a sauce that lightly coats the pasta. Toss thoroughly. Remove the pot from the heat and stir in the grated cheese. Transfer the pasta to a warm serving platter or individual bowls and serve immediately.

Number Of Ingredients 8

2 - 10 oz. boxes frozen chopped spinach, defrosted in the refrigerator overnight.
4 oz. (1 stick) unsalted butter
4 oz. (3/4 c. plus 1 1/2 tbsp.) all purpose flour
1 qt. half and half cream
8 oz. (2 cups) fresh grated parmesan cheese
2 tsp kosher salt
1 tsp Tabasco sauce, or to taste
Fresh ground white pepper, to taste

Steps:

  • Squeeze as much moisture as possible from the defrosted spinach - set aside In a large, heavy saucepan, melt the butter over med heat. Stir in the flour and let it bubble, stirring constantly, 2 minutes. Do not let it take on color. Slowly whisk in the half and half, making sure to reach the edges of the pan as you whisk. Continue to whisk while the mixture slowly comes to a boil. Stir in the parmesan cheese and salt. Turn off the heat and add the Tabasco sauce and white pepper. Cool about 20 minutes, stirring occaisonally, then stir in the spinach, making sure it is evenly distributed. It is easier if you separate the squeezed spinach with our hands as you add it to the cheese mixture. This is best served warm. Can be kept, covered and refrigerated, for up to four days. Reheat in a microwave or in the top of a double boiler over boiling water to loosent he mixture, which firms up when refrigerated.
