- Simmer potatoes in boiling water with 2 tablespoons salt until tender, 12 to 15 minutes. In a small saucepan, combine olive oil, garlic, and rosemary; simmer over medium 3 to 4 minutes. Drain potatoes, return to pot, and smash with oil mixture, chicken broth, and salt and pepper.
CREAMY DAIRY-FREE MASHED POTATOES
Mashed potatoes can be creamy without butter, milk, or cream. Either chicken stock or broth can be used, although stock has fewer ingredients. These are luscious and super healthy.

Steps:
- Cut each potato into quarters. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and let dry.
- Return potatoes to the same pot. Add chicken stock and garlic and mash potatoes with a potato masher. Add more stock if needed for desired consistency. Season with salt and pepper. Garnish with parsley.
