This is a simple dinner my husband came up with when I was on bed rest. It is now his "signature dish" and the whole family loves it! Even better the next day!

1 small minced onions or 2 tablespoons onion flakes
1/2 cup Worcestershire sauce
1/2 cup balsamic vinegar
1 cup water
1 cup packed brown sugar
2 lbs kielbasa, cut in 1/4-inch rounds
1/4 cup cold water
1 tablespoon cornstarch
1 lb pasta, cooked

Steps:

  • In a large skillet saute onion until translucent.
  • Add Worcestershire sauce, balsamic vinegar, water, and brown sugar. Stir until sugar dissolves.
  • Add Kielbasa.
  • Cover and simmer for about 30 minutes, stirring occasionally.
  • Mix the 1/4 cup cold water with the 1 tablespoon of corn starch in a small glass until smooth.
  • Add cornstarch mixture to the skillet, stir well and remove from heat. Sauce will thicken as it stands.
  • Serve over pasta or as an appetizer with toothpicks.

My husband came up with this quick, healthy and tasty one dish dinner. I can't handle spicy foods, so we have tuned down the cajun seasonings, but feel free to add more if you like. You can also use beef or pork kielbasa if you prefer.

1 lb turkey kielbasa
1 cup white rice
1 3/4-2 cups cold water
1/2 teaspoon kosher salt
1 teaspoon cajun seasoning
1/2 teaspoon olive oil
1 cup frozen peas

Steps:

  • Chop the kielbasa in half lengthwise and then in 1/2" pieces.
  • Combine all ingredients except the peas in a medium pot, adjusting the amount of water to the directions listed on your rice package.
  • Cook uncovered on high until it comes to a boil. Then turn down to low and cook for 20 minutes or per your rice package directions.
  • Remove from heat and add frozen peas. Mix peas in by fluffing rice with a large fork. Replace lid and let sit for a few minutes until the peas are just warm.
