My dad would make these easy steaks as a surprise Sunday dinner w/ mashed potatoes and homemade biscuits, yum!

2 lb ground beef, or ground turkey breast if you want less fat
1 pkg lipton's onion soup mix
1/2 c cracker crumbs, i used saltines, crushed
1 large egg
2 .75 oz packets of dry brown gravy mix
1 c sour cream, i used light
1 small can mushroom stems, drained
mashed potatoes

Steps:

  • 1. Heat oven to 350. Spray a 9" x 13" baking pan w/ cooking spray. Make patties using ground beef or ground turkey, cracker crumbs, egg and soup mix.
  • 2. Spray a lg skillet w/ cooking spray, place over medium heat. Fry patties until browned all both sides. In bowl, mix together dry gravy mix, water as instructed on gravy package and sour cream.
  • 3. Lay patties in baking pan. Cover patties w/ gravy mix. Cover, bake 30-40 mins, turning patties over 1/2 way through. Serve w/ mashed potatoes.

Growing up in the sixties, Salisbury steak with mushroom gravy was a pretty common menu item. Change up your weeknight menu with this delicious Jersey diner-style dish!

½ medium onion (grated)
⅓ cup panko breadcrumbs
1 lb ground beef ( lean)
1 clove garlic (finely minced)
1 large egg
2 tbsp ketchup
1 tbsp Worcestershire sauce
1 tbsp spicy deli mustard
1 tbsp vegetable oil
2 cloves garlic (finely minced)
2 tbsp shallots (finely chopped (onion can be substituted))
8 ounces mushrooms (sliced)
2 tbsp butter (unsalted)
3 tbsp all-purpose flour
2 cups beef broth
1 cup water
2 tsp spicy deli mustard
2 tsp Worcestershire sauce
sea salt and black pepper to taste

Steps:

  • Place the breadcrumbs in a large mixing bowl and using a box grater, grate the onion over the breadcrumbs (let all the juice go into the breadcrumbs).Use your fingers to mix and leave them to soak for a few minutes
  • Add the remaining Salisbury Steak ingredients into the bowl and using your hands mix the ingredients until fully combined.Continue to mix the ingredients until the mixture becomes sticky. This will help keep the patties together.
  • Divide the mixture into 8 portions and press the mixture firmly together into oval patties about ¾ of an inch thick
  • Add the cooking oil to a large skillet over medium-high heat and gently add the formed Salisbury Steaks. Cook the first side for 1-2 minutes or until nicely browned, then gently flip the steak over and brown the other side.
  • When the Salisbury steaks have browned on both sides remove them from the pan and set them aside in a baking dish while you make the mushroom gravy.*they will still be raw inside
  • Using the same skillet add the mushrooms, chopped onion and garlic. Add more oil to the pan if needed. Saute until the mushrooms are partially cooked.
  • Turn the heat down to medium-low and add the butter.
  • When the butter has melted, add the flour to the mixture, mix well and allow to cook for 2 minutes. Keep stiring the mixture so the roux doesn't burn.
  • Gradually add in the beef broth, stirring as you add to keep the gravy smooth and lump free.
  • Add the mustard, worchesteshire, salt and pepper. Mix well.*If the mixture is too thick add a little water or more stock to the pan. If the mixture is too loose, allow it to cook a little longer to reduce the sauce and thicken.
  • Place the Salisbury steaks in a baking dish and pour the mushroom gravy over top of the steaks.
  • Cover the baking dish with foil and bake at 350 degrees F for 30 minutes or until an internal temperature of 165 degrees has been reached.
  • Garnish with chopped parsley and serve the Salisbury steaks topped with mushroom gravy with a sice of homemade mashed potatoes.

This Salisbury steak with mushroom gravy is a classic family favorite ready in only 30 minutes. Perfect for a quick and easy weeknight dinner!

1 ½ pounds lean ground beef
½ cup seasoned breadcrumbs
1 large egg (beaten)
1 Tablespoon ketchup
1 teaspoon dry mustard
1 teaspoon onion powder
½ teaspoon garlic powder
1 teaspoon kosher salt
½ teaspoon black pepper
1 Tablespoon butter
1 Tablespoon olive oil
2 Tablespoons butter
½ cup sliced onion
8 ounces sliced mushrooms
2 garlic cloves (minced)
2 Tablespoons flour
1 ½ cups beef broth
2 teaspoons Worcestershire sauce
1 teaspoon dried thyme
salt and pepper to taste

Steps:

  • Add the ground beef, breadcrumbs, dry mustard, onion powder, garlic powder, salt, pepper, ketchup, and egg to a large bowl and mix until well combined.
  • Divide the mixture into 4 evenly sized patties around ¾ inch thick.
  • Heat the olive oil in a large pan or cast iron skillet over medium-high heat. Add the patties to the pan and cook, undisturbed, for 2-3 minutes per side until they are browned. Transfer to a plate and set aside.
  • After searing your patties do not wipe the pan! We want all of the brown bits to help flavor the gravy. Reserve around 1 tablespoon of the beef fat and drain off any excess
  • Reduce the heat to medium then add the sliced onions and mushrooms and cook for 5-6 minutes, stirring occasionally, until all of the liquids from the mushrooms have cooked off and they are lightly browned. Add the minced garlic and cook for around 30 to 45 seconds until fragrant, stirring constantly to avoid burning.
  • Add the butter and let melt, then add in the flour and cook for around 2 minutes, stirring frequently, until the flour is golden brown. Slowly add the beef stock while whisking. Continue whisking for about 45 seconds to avoid clumps and scrape up any brown bits on the bottom of the pan. Stir in the Worcestershire sauce and dried thyme.
  • Add the hamburger steaks back to the pan. Cover and cook for 5 to 10 minutes until the patties are cooked through and the gravy is thickened. Top with fresh chopped parsley before serving.

1-1/2 lb lean ground beef or ground turkey breast
1 8 oz can cut green beans, drained, chopped
1 large onion, finely chopped, divided
1/2 tsp paprika
1/2 tsp garlic powder
1/4 tsp each salt and pepper
3 Tbsp flour
3/4 c low-sodium beef broth

Steps:

  • 1. In lg bowl, combine ground beef or ground turkey, 1/2 cup onion, green beans, paprika, garlic powder, salt and pepper.
  • 2. Mix well with hands. Form into 6 oval shaped patties, about 1"-thick. Spray a lg skillet w/ cooking spray. Place skillet over med-high heat. Add patties to skillet. Place remaining onions around patties. Cook 10 mins, flipping over 1/2 way through.
  • 3. In bowl, whisk together flour, broth and a little pepper.until smooth. Add to skillet, bringing to a boil. Reduce heat to low, simmer 5 mins, or until sauce thickens, stirring occasionally. Serve w/ mashed potatoes and fresh green beans.

DINER STYLE SALISBURY STEAK

Just like we had for hot lunch at school! Quick and easy, and real comfort food. Not too bad for you, either.

3/4-1 lb ground turkey
3/4-1 lb ground beef
1/2 cup breadcrumbs
1 egg
1/4 teaspoon pepper
2 (10 1/2 ounce) cans fat-free cream of mushroom soup
2 tablespoons Worcestershire sauce
1/2 teaspoon ground mustard
1/4-1/2 cup water
1 teaspoon Kitchen Bouquet (optional)
1 -2 tablespoon white wine (optional)
1 (8 ounce) package fresh mushrooms, sliced

Steps:

  • Mix together 1/3 can of soup with meat, bread crumbs, egg, salt and pepper. Make sure the turkey and beef are fully mixed together.
  • Spray a large frying pan with cooking spray. Form meat mixture into oval shaped patties about 1/2 inch thick.
  • Cook patties in pan over medium high heat until edges appear to be cooked, then turn them over. Continue cooking until they are cooked almost all the way through. (It helps to do this in two batches so that they are not crowded and can get nice and brown.).
  • Remove a few of the patties and keep warm on a plate in a low oven, leaving 3 or so in the pan. Add the water and let it sizzle around the remaining patties for about 30 seconds.
  • Stir together remaining soup, Worcestershire sauce, ground mustard, and Kitchen Bouquet and wine, if using (and I recommend both). Pour in pan with water and stir to incorporate. Simmer for 5 minutes until bubbly, reducing the heat if necessary. Add water as needed to keep consistency of sauce smooth.
  • Add remaining meat patties and fresh mushrooms to pan and press mushrooms down into the sauce. Cover pan and cook additional 10 minutes or until mushrooms are tender.
  • Serve with rice, noodles or mashed potatoes.
