OATMEAL (DAD'S) COOKIE SQUARES
This is an excellent square which is very easy to make, looks good and tastes scrumptious. I have had this recipe for many years. It freezes well.

Steps:
- Crush 2 dozen cookies in the blender and add 1/4 cup melted butter.
- Mix together, reserving 1/4 cup for topping.
- Pat in greased 8 x 8 pan and bake for 10-15 minutes at 350°.
- Let cool.
- Melt together in double boiler 3 squares semi-sweet chocolate and 1/4 cup butter.
- Add 1 teaspoon vanilla and 1 egg and mix well.
- Remove from heat and add 1 1/2 cups icing sugar and 1/2 cup chopped nuts.
- Put on top of cooled crust and sprinkle remaining cookie mixture on top of filling.
- Place in fridge and let cool before slicing.

Steps:
- Grease cookie tins.
- Preheat oven to 375°F (190°C).
- Beat butter, eggs, sugar and vanilla together until they are light and fluffy.
- Sift flour with baking powder, soda and salt and stir them into the first mixture. Blend well.
- Stir in coconut and rolled oats.
- Drop by heaping teaspoonfuls onto cookie sheets and bake for 10 minutes.
- Cool on wire racks and store in tightly covered cookie tins.

This is a recipe I got from my friend Mabel many years ago. They are a delicious and easy cookie to make. You can freeze the logs and take them out when you want to bake them. Chill time is not reflected in the preparation time so plan ahead.

- Cream together butter and sugars.
- Beat in eggs and vanilla.
- Stir in salt, soda and flour, mixing well.
- Stir in oatmeal.
- Shape into 4 round logs.
- Wrap well in wax paper and chill.
- Slice 1/4-inch thick, place on baking sheets and bake at 350°F for 10 minutes.
- You can add 1 cup of any of the following if you wish for a variation: coconut, nuts, raisins or chocolate chips.

- Mix crushed cookies and butter together. Line pan with parchment paper. Press 2/3 of the mixture into pan. Bake for 10 min in a 350 oven. Put chocolate and butter in a double boiler to melt. Add icing sugra, eggs , vanilla. Beat until fluffy. Add walnuts. Put on top of hot crumbs and sprinkle rest of crumbs on top. Press down gently. Place in fridge to cool.

- Cream first three ingredients until fluffy, add eggs and vanilla.
- Mix all dry ingredients into butter mixture.
- Stir in oats.
- Let.
- dough stand at room temperature for 2 hours.
- Preheat oven to 375 degrees F (190 degrees C).
- Drop dough by tablespoonfuls onto lightly greased cookie sheets.

- Do not overbake.
