Steps:
- Heat chili about 5 minutes. For an extra-cheesy omelet, stir in a handful or 2 of the cheese.
- While this is cooking, heat an 8-inch skillet over medium-low heat and melt the butter.
- Beat the eggs and pour into the pan. Cook until the egg forms a solid yellow circle.
- Cover half of the omelet with the chili mixture, reserving 1/4 cup.
- Add a layer of cheese, reserving 1/4 cup.
- Fold the omelet and top with the remaining chili and cheese.
- Slide the omelet onto a plate and garnish with a large dollop of sour cream, if desired.
CHEF'S SPECIAL OMELET
Steps:
- Put eggs in a blender, and mix on high until egg mixture is almost white.
- Put potato, onion, ham and bacon on grill pan and saute for 30 seconds. Then pour egg mixture over vegetables. Let eggs cook until slightly firm around edges.
- Add cheese slices. Then gently roll eggs over into omelet shape. Cook 2 minutes until firm.
- Plate the omelet on a plate and pour 1 cup cooked meat or bean chili on top.
SOLO GREEN CHILI CHEESE OMELETTE
The green chili will add a little excitement to the breakfast table, and the cheese will add some dairy to the diets of those who find milk difficult to digest.

Steps:
- Beat 2 whole eggs lightly until the yokes are broken up, but not totally homogenized.
- Add jalapeno pepper or Green Salsa and beat for another 30 seconds.
- Melt the butter in a frying pan and swirl until the bottom of the pan is totally covered.
- Pour in the egg mixture, and lift the edges until it has have started to set and is no longer liquid Add cheese evenly over the eggs, and remove the pan from the heat.
- Tip the pan towards the center of the plate and start to slide the eggs out.
- When half of the omelette is out of the pan, twist the pan so that the second half flops over the first half, covering the cheese inside.
- Before serving, allow the folded omelette to sit for 30 seconds so that the cheese can melt.
CHILI OMELET

- Cut the sausage into 1/4-inch chunks. In a medium skillet over medium-low heat, brown the sausages. When brown, add the chili and heat through, about 5 minutes. For an extra-cheesy omelet, stir in a handful or 2 of the cheese.

Steps:
- Preheat omelet pan on medium heat.
- Mix eggs, milk, salt, and pepper until frothy. (Don't over whisk).
- Cut piece of butter off the short side of stick and melt in pan so omelette does not stick.
- Pour mixture into pan and wait till it is cooked and thick. If it falls apart in pan, let it cook more.
- Next,when the omelette is thick and does not fall apart when lifted take ripped up American cheese slices and put on one side of omelette.
- Flip the uncheesed side of omelette to the side of the omelette with cheese. Wait until cheese melts and take off and into plate.
CHILI CHEESE OMELET
I first tasted this omelet at the Kettle diner in Mesquite, TX when I was 15. I fell in love with it and have been making it for 29 years. It is one of my FAVORITE comfort foods. **Great topping for this is sour cream, fresh jalapeno, avocado salsa and regular salsa**

- 1. Saute the jalapeno, bell pepper and onion for the chili in a 4 (or more) quart pot.
- 2. Add the rest of the chili ingredients to the pot and simmer on med-low heat for 20 mins.
- 3. while the chili ism simmering, saute the onion fr the omelet in a omelet pan.Set to the side. Whip the 3 eggs until well blended (add salt to the egg).
- 4. Add oil to your pan (I use olive oil & butter mix), add eggs. When omelet is 1/2 cooked add half of the cheddar cheese. Fold the omelet, flip and finish cooking it. plate the omelet.
- 5. Top the omelet with chili, the rest of the cheese, green onion and tomato.
CHILI CHEESE OMELETTE BURRITOS
My 13 year old son made up this breakfast, combining two of his favorites - breakfast burritos and chili cheese omelettes!

- Make sure all your ingredients are ready - chili hot, cheese grated, optional ingredients chopped, eggs beaten.
- Heat nonstick skillet over medium high heat. Add butter to pan.
- When butter is melted, add beaten eggs and scramble.
- When eggs are done, remove pan from heat and quickly heat tortillas over open flame, a few seconds on each side.
- To assemble, place half of scrambled eggs on each tortilla. Sprinkle with cheese. Top with chili. And add any optional ingredients.
- Tuck in both sides of tortilla, and roll up, burrito style.
- Serve immediately.

MOMMY'S SWISS CHEESE OMELETTE FOR 2 OR MORE
I make this to share around the table so that each person doesnt have to wait fro me to cook their omlette individually. The base recipe is for 2 people. You can double for 3, triple for 6. I use JUMBO eggs

Steps:
- Beat eggs with water and add pepper to mix.
- Spray Large Omlette Pan with non-stick spray while cold.
- Melt butter in large omlette pan over medium heat-be careful not to burn the butter.
- Pour egg mix into pan and swirl around to cover-lower heat to low.
- keep swirling pan so that egg evenly cooks over the low heat- be careful not to overcook or brown the bottum too much.
- when eggs are almost cooked through ( top is still soft) sprinkle cheese over the top.
- put lid onto pan and turn off heat - let this sit for about 1-2 minutes until cheese melts and eggs puff up.
- Sprinkle salt lightly on top.
- Fold omlette over and cut in half.
- serve over a hot bagel ( open face).
