1 can (5 ounces) light water-packed tuna, drained
1/4 cup reduced-fat mayonnaise
1 tablespoon grated Parmesan cheese
1 tablespoon sweet pickle relish
1 tablespoon minced fresh parsley
1 teaspoon spicy brown mustard
1/4 teaspoon dill weed
1/8 teaspoon onion powder
1/8 teaspoon curry powder
1/8 teaspoon garlic powder
4 slices whole wheat bread

Steps:

  • In a small bowl, combine the first 10 ingredients. Spread over two slices of bread. Top with remaining bread.

This is my mother's tuna salad. I added the walnuts after I married a man who loves nuts. Melt it with cheese on an English muffin or a piece of rye for a quick lunch.

2 (6 ounce) cans solid white tuna packed in water
1 green apple, cored and chopped
1 cup crushed walnuts
3 tablespoons Dijon mustard
2 tablespoons mayonnaise (canola is great)
2 -3 pinches curry powder

Steps:

  • Mix tuna, apples and walnuts with a fork in a medium bowl.
  • Add mustard and mayonnaise to taste (amounts are suggestions).
  • Shake in curry powder and mix.

1 (8 ounce) can sliced water chestnuts, drained (227g)

2 teaspoons soy sauce
1 teaspoon curry

Steps:

  • Mix dried onion flakes with lemon juice and set aside.
  • Mix the tuna and water chestnuts.
  • Add rest of ingredients to the onion flakes to make the dressing, combining well.

1/2 cup coleslaw dressing
1 tablespoon mild indian curry paste
1 tablespoon fresh lime juice
4 cups cooked fusilli, cold
2 (170 g) cans albacore solid white tuna packed in water, drained and broken into chunks
1/2 cup green onion, sliced
1/2 cup fresh cilantro or 1/2 cup parsley, chopped
1/2 cup slivered almonds, toasted
1/3 cup golden raisin

Steps:

  • Whisk dressing with curry paste and lime juice until combined.
  • Toss fusilli with tuna, green onions, cilantro, almonds and raisins. Add dressing and toss to combine. The salad can be reserved, tightly covered, in refrigerator for up to 1 day.
