2 tablespoons butter
1 clove garlic, minced
⅓ cup chopped onion
⅓ cup chopped green bell pepper
1 (5 ounce) can tuna, drained and flaked
1 cup sour cream
1 teaspoon curry powder

Steps:

  • Over medium-low heat melt butter in a large saucepan. Add garlic, onions and green pepper. Cook slowly, stirring occasionally, until onions are soft.
  • Stir in tuna, sour cream, curry powder, salt and pepper. Heat until warm and serve.

1 cup uncooked basmati rice
1 1/2 cups water
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup butter
2 cloves garlic, finely chopped
3 tablespoons Gold Medal™ all-purpose flour
2 cups reduced-sodium fat-free chicken stock
1 1/2 cups whipping cream
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons curry powder
4 cups chopped deli rotisserie chicken (from 2-lb chicken)
2 cups coarsely chopped cauliflower florets
1/2 cup frozen sweet peas, thawed
1 cup chopped carrots
1/2 cup chopped green onions
1/4 cup chopped fresh cilantro
1/3 cup chopped roasted cashews

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook rice in water as directed on package. In 2-quart saucepan, cook onion and celery in butter over medium-high heat 3 minutes, stirring occasionally. Add garlic; cook 1 minute. Stir in flour; cook 1 minute. Add chicken stock and whipping cream; stir until mixture is smooth and bubbly. Stir in salt, pepper and curry powder. In large bowl, mix cooked rice, chicken, cauliflower, peas and carrots. Add white sauce; stir to combine. Spoon into baking dish.
  • Bake uncovered 30 minutes or until bubbly. Let stand 5 minutes. Sprinkle with green onions, cilantro and cashews.

1 tablespoon butter
1 onion, diced
2 teaspoon s curry powder
1 can (10 3/4 ounce) cream of chicken soup
1 cup uncooked white rice
2 cans (6-ounce each) tuna, drained
1/2 teaspoon freshly ground black pepper
1 cup grated cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F. Heat the butter in a skillet over medium-high heat. Add the onion and curry powder; cook, stirring occasionally, until onion softens, about 5 minutes. Scrape the curried onions into a 9-by-13 baking dish; stir in the soup, 1 1/3 cups water, rice, tuna and pepper. Cover with foil.
  • Bake until rice is cooked and the casserole has begun to turn golden, about 40 minutes.
  • Remove from oven; raise the temperature to 450 degrees F. Remove foil from casserole. Spread cheese over the top of casserole; return to the oven. Cook until cheese begins to melt, about 5 minutes.

2 cups uncooked rice
1/4 cup butter (or use oil drained from canned tuna)
1/4 large onion, minced
2 garlic cloves, minced
1/2 red bell peppers (optional) or 1/2 green bell pepper, diced (optional)
1/2 teaspoon salt
1 -3 teaspoon curry powder
1/4 cup flour
2 cups milk (or coconut milk)
1 (6 ounce) can tuna or 2 (6 ounce) cans tuna

Steps:

  • Start the rice cooking.
  • Over low to moderate heat, saute onion, garlic, and your vegetable of choice in butter. (If you use tuna packed in oil, you can drain the oil and use that to saute the onions.)
  • Season with salt and curry powder and continue to saute until veggies are tender.
  • Stir flour into vegetables until it coats them and combines with the butter/oil.
  • Over moderate heat, add enough of the milk to cover the vegetables, and stir to create a smooth sauce. As the milk begins to heat, the butter/flour mixture that was coating the vegetables will begin to blend with and thicken the milk. Once it becomes thick, add half of the remaining milk, and continue stirring until it again heats to the thickening point. Then add the rest of the milk, stir again, and allow to come to the thickening point for the last time. (This process is a bit difficult to describe, but not hard to do. Adding the milk at little at a time and stirring to keep it smooth as you go keeps the sauce from forming lumps and prevents scorching. You can also do this step over low heat, in which case you don't have to stand right over the pot stirring constantly, but it's still good to add the milk in stages, and stir regularly.).
  • Once the sauce is heated, add the tuna, and bring back to simmering. If the tuna is packed in oil, drain the oil (which you may have used in step one). If it's packed in water, you can just dump the whole can into the sauce, water and all.
  • Serve tuna curry over rice. A green veggies side is nice (steamed asparagus or broccoli, cucumbers in vinaigrette, green salad, or peas).

1 small onion, chopped
1-1/2 teaspoons vegetable oil
2/3 cup water
3 tablespoons Homemade Cream-Style Soup Mix
3/4 cup frozen chopped broccoli, thawed
1 can (6 ounces) tuna, drained and flaked
1/2 cup milk
1/4 teaspoon salt
1/8 teaspoon lemon-pepper seasoning
1-1/2 cups cooked rice
2 tablespoons slivered almonds, toasted

Steps:

  • In a small skillet, saute onion in oil until tender. In a microwave-safe dish, whisk together water and soup mix. Microwave, uncovered, on high for 1-1/2 to 2 minutes, whisking occasionally. Add soup to sauteed onions. Stir in the broccoli, tuna, milk, salt and lemon-pepper; bring to a boil. Reduce heat; simmer for 5 minutes or until broccoli is tender. Stir in rice. Cook and stir 2-3 minutes longer or until heated through. Sprinkle with almonds.

2 cups small pasta shells, cooked
1-1/2 cups KRAFT Shredded Cheddar & Monterey Jack Cheeses
2 cans (5 oz. each) chunk light tuna in water, drained, flaked
1/2 cup frozen peas
1/2 cup sliced fresh mushrooms
1/4 cup slivered almonds

Steps:

  • Heat oven to 350°F.
  • Mix dressing, milk and curry powder until blended. Combine all remaining ingredients except nuts in large bowl. Add dressing mixture; mix lightly.

4 tablespoons butter or 4 tablespoons margarine
1/2 cup chopped onion
1 tablespoon all-purpose flour
3/4 cup water
1 -2 tablespoon curry powder, to taste
1/4 cup half-and-half
2 (6 1/2 ounce) cans tuna, well drained
3 cups cooked rice
1 tablespoon chopped parsley
salt, to taste
pepper, to taste
cumin, to taste
garlic powder, to taste
chutney
peanuts
coconut

Steps:

  • Melt butter in saucepan; add onion.
  • Saute until golden.
  • Stir in flour.
  • Cook until bubbly.
  • Gradually add water, cooking and stirring until smooth.
  • Blend in curry powder, seasonings and half-and-half.
  • Cook, stirring, for 1 minute.
  • Gently add tuna and simmer 5 minutes longer.
  • Spoon over hot cooked rice and sprinkle with parsley.
  • Serve with small bowls of the above condiments.

My Mom used to make this when I was a kid. Quick, easy and satisfying. Especially on a cold winter evening when you want something hot and heart warming.

1 c instant rice (such as minute rice)
1 c water
2 6 oz cans tuna, drained (i use water packed but use what you like)
1 can(s) cream of chicken soup or cream of celery soup
1/2 c celery, finely diced
1/4 c onion, finely diced
1/4 tsp dried parsley
the empty soup can filled half way with milk
pepper to taste
6-8 oz shredded cheese ( i use colby or mild cheddar) use your favorite
non stick cooking spray

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Spray casserole dish with cooking spray.
  • 3. Bring water to boil, add rice, cover and remove from heat; let sit until liquid is absorbed.
  • 4. Mix together soup and milk from the soup can; stir until smooth. Add tuna, celery, onion, parsley and pepper.
  • 5. Pour soup mixture over rice, mix to combine all ingredients. If mixture is too dry add a little more milk, you want it creamy but not soupy. Place mixture in casserole dish and bake 45-50 min. or until hot and bubbly, stir, add cheese to top of casserole and place back in oven until cheese is melted.
