CURRIED BROWN RICE AND PEAS



Curried Brown Rice and Peas image

My mom use to make this when we were vegetarians, it came from the New Vegetarian Cuisine cookbook. (IBN:0-87596-168-1) However, I did modify the recipe as I'm not allowed to have certain ingredients due to being pregnant. I will include those but will put optional beside them. Either way tastes great! And is very easy to make, and leaves the house smelling like curry yum!

2 teaspoons peanut oil (I used olive oil either is fine)
1/2 cup leek (white parts only, chopped)
1 1/2 teaspoons curry powder
1 1/2 cups brown rice
4 cups reduced-sodium vegetable stock (may also use chicken stock)
1 (10 ounce) bag frozen peas
1/2 cup fresh cilantro (optional, chopped)
1 -2 tablespoon low sodium soy sauce
1/4 teaspoon hot pepper sauce (optional)

Steps:

  • Preheat oven to 350.
  • In an oven proof 3-quart sauce pan over medium heat, warm the oil. Add the leeks and curry powder; cook, stirring frequently, for 2 minutes or until the leeks are tender.
  • Stir in the rice and mix until coated with oil.
  • Pour in the stock, peas, cilantro, soy sauce and hot pepper sauce; bring to a boil.
  • Cover the pan and place in the oven. Bake for 40 to 50 minutes, or until the rice is tender and the liquid has been absorbed. Let stand for 10 minutes. Fluff with fork before serving.

This rice not only looks beautiful, but it's bursting with savory flavors, and your house will smell delicious when you cook this! This is a recipe I adapted from Taste Of Home's Holiday Recipes. I made it my own by altering a few ingredients and adding others, but yield amount and cooking time/method are the same. I like to make the rice mix a day or two ahead to let all the flavors meld. This makes 2 batches of rice.

2 cups uncooked long grain rice
1 cup dried mixed fruit (I use a mixture of dates, apricots, and cranberries)
1 cup slivered almonds
1/2 cup raisins or 1/2 cup sultana
2 tablespoons dried onion flakes
4 teaspoons chicken bouillon granules
4 teaspoons curry powder
1 teaspoon salt
2 1/2 cups water
2 tablespoons butter

Steps:

  • In a large bowl, combine the first 8 ingredients. You can do this a day or two in advance to allow flavors to meld, but it's not necessary.
  • Combine water and butter in a saucepan; bring to a boil.
  • Add 2 cups rice mix, reduce heat, and simmer for 20 minutes, or until liquid is absorbed.
  • NOTE: I make this a complete meal by adding cooked chicken thighs. You can store this rice mix in an airtight container for up to 3 months.

2 cups uncooked basmati rice
1 tablespoon peanut oil
1/4 cup chopped green onion
2 garlic cloves, minced
1 tablespoon curry powder
1 tablespoon minced fresh ginger
1 teaspoon salt (or to taste)
3 1/2 cups water
2 apples, diced
1 1/2 cups well drained crushed pineapple
1/2 cup diced dried apricot
1/4 cup unsweetened flaked coconut
1/4 cup chopped of fresh mint
1/4 cup chopped fresh cilantro
salt and pepper
1/2 cup mango chutney
2 tablespoons fresh squeezed lemon juice
1 teaspoon canola oil
1 teaspoon honey

Steps:

  • Wash rice until water runs clear; drain well.
  • In a saucepan, heat oil over medium heat.
  • Add the green onions, garlic, curry powder, ginger, and rice; sauté for about 4 minutes or until the rice appears dry.
  • Add 1 teaspoon salt and the water.
  • Cover and lower the heat to low; cook at a gentle boil until the rice is tender and the water is absorbed (about 15 minutes).
  • Fluff the rice with a fork; cool.
  • In a big bowl, add the rice, apples, pineapple, apricots, coconut, mint, and cilantro; stir to combine.
  • Dressing: Add all the dressing ingredients to the container of an electric blender; process until smooth.
  • Pour the dressing over the rice mixture; toss to coat.
  • Add salt and pepper to taste; serve.

2 teaspoons vegetable oil
1/2 cup chopped onion
1 garlic clove, minced
1 cup basmati rice*
1 Granny Smith or Golden Delicious apple, peeled, cored, chopped
1/4 cup chopped dried apricots
1 cinnamon stick
1 tablespoon chopped peeled fresh ginger
1 1/4 teaspoons curry powder
1 teaspoon salt
2 cups water
2 tablespoons sliced almonds, toasted

Steps:

  • Heat oil in heavy medium saucepan over medium heat. Add onion and sauté until golden, about 5 minutes. Add garlic and stir 30 seconds. Stir in rice, apple, apricots, cinnamon stick, ginger, curry powder and salt. Add 2 cups water and bring to boil. Reduce heat to low; cover and cook until rice is tender and water is absorbed, about 18 minutes. Remove from heat. Season to taste with pepper and additional salt, if desired. Transfer pilaf to bowl. Sprinkle with almonds and serve.

2 tablespoons butter
1 cup converted rice
1/2 cup finely chopped onion
1 teaspoon finely chopped garlic
1 medium-size apple, peeled, cored and cut into 1/4-inch cubes
2 teaspoons curry powder
Salt to taste
1 1/2 cups water
1 bay leaf
3/4 cup frozen peas that have been thawed under hot water

Steps:

  • Melt 1 tablespoon of the butter in a saucepan. Add the rice, onion, garlic, apple, curry powder and salt.
  • Cook briefly, stirring, but do not brown.
  • Add the water and bay leaf.
  • Bring to a boil, stirring. Cover tightly, and simmer for 17 minutes.
  • Remove from the heat. Add the peas and the remaining 1 tablespoon of butter. Fluff the rice with a fork.
  • Discard the bay leaf and serve.
