SPICY CURRIED LENTIL STEW WITH CASHEW NUTS



Spicy Curried Lentil Stew With Cashew Nuts image

From Ellen Brown, this stew is one of the most aromatic dishes you'll ever eat! Serve with cooked basmati rice.

1/4 cup olive oil
2 onions, peeled and chopped
3 garlic cloves, peeled and minced
1 jalapeno, seeds and ribs removed and finely chopped
1 tablespoon curry powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric
2 medium tomatoes, rinsed and cored and seeded and chopped
1 1/2 cups brown lentils
2 (14 1/2 ounce) cans vegetable stock
2 cinnamon sticks
2 cardamom pods
1 cup cashew nuts
3 medium zucchini, rinsed and trimmed and diced in half-inch pieces
1/4 cup chopped fresh cilantro
salt
fresh ground pepper

Steps:

  • Heat oil in medium skillet over medium-high heat. Add onions, garlic and jalapeno and cook, stirring frequently, for three minutes or until onion is translucent. Stir in curry powder, cumin, coriander and turmeric. Cook, stirring constantly, for one minute. Scrape mixture into the slow cooker.
  • Add tomatoes, lentils, stock, cinnamon sticks and cardamom pods to the slow cooker. Cook on low for three to five hours or on high for 1 1/2 to two hours or until lentils are almost soft.
  • While lentils are cooking, preheat the oven to 350 degrees. Toast cashew nuts in a single layer on a baking sheet for 5 to 7 minutes or until lightly browned. Set aside.
  • If cooking on low, raise the heat to high. Remove and discard cinnamon sticks and cardamom pods, and add zucchini and cilantro to the slow cooker. Cook for 30 to 45 minutes or until zucchini is tender. Season with salt and pepper, and serve immediately over rice.

1/2 cup plain yogurt
1/4 cup butter, melted
3 tablespoons curry powder
2 tablespoons ground cumin
2 teaspoons salt
1-1/2 teaspoons ground cardamom
1/2 teaspoon sugar
1/2 teaspoon cayenne pepper
1/2 pound pecan halves
1/2 pound walnut halves

Steps:

  • In a large bowl, combine the first eight ingredients. Add pecans and walnuts; toss to coat. Spread in a single layer in an ungreased 15x10x1-in. baking pan. , Bake at 275° for 50 minutes or until nuts are golden brown, stirring occasionally. Cool. Store in an airtight container.

1 large egg white
2 cups pecan halves
2 cups salted cashews
2 cups salted roasted almonds
3/4 cup packed dark brown sugar
2 tablespoons mild curry powder
2 teaspoons garlic salt
1 teaspoon dried rosemary, crushed
1/2 to 1 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 250°. In a large bowl, whisk egg white until frothy. Add nuts; stir gently to coat. In a small bowl, combine brown sugar and seasonings. Sprinkle over nut mixture and toss to coat. Spread into a greased 15x10x1-in. baking pan. Bake 1-1/2 to 2 hours or until dry and crisp, stirring every 15 minutes. Cool completely. Store in an airtight container.

This recipe comes from one of my favorite cookbooks, "The Spice CookBook," from 1964. We like to eat them as a side dish alongside foods of similar flavors. Also yummy as an appetizer or snack. Times are approximate. The cookbook does not say, and I do not remember how long it took us. NOTE: These will be slightly greasy. SO tasty, though! And they make the whole house smell good!

2 tablespoons butter or 2 tablespoons margarine
1 cup unsalted cashews
1 teaspoon curry powder
1 pinch salt (to taste)

Steps:

  • Melt butter or margarine in a frying pan.
  • Add nuts and curry powder to the pan.
  • Fry until lightly browned.
  • Drain on paper towels to remove majority of grease.
  • Sprinkle the cashews with salt, to taste.
  • Eat and enjoy the yumminess that is curry!

1 tablespoon chopped fresh ginger
2 teaspoons curry powder
1 cup brazil nut
1 cup cashews
1 cup almonds (or 3 cups of any one of these)
1 teaspoon salt
1/8 teaspoon cayenne pepper (optional)

Steps:

  • In a shallow pan, heat the oil over low heat.
  • Add the ginger and cook gently for 2-3 minutes.
  • Stir in the curry powder, then the nuts.
  • Cover and cook over very low heat for 5-6 minutes, stirring occasionally.
  • Sprinkle with salt and remove from the heat.
  • For a more fiery flavor, sprinkle also with cayenne.

cashews or cooked chickpeas. 1/2 tsp. cumin
1/4 tsp. turmeric
1/8 tsp. cayenne
a couple pinches of salt.

Steps:

  • toss nuts with oil in pan to coat. put spices in and stir to coat well, add salt to taste. Cook over low heat until nuts are toasty but not burned. Spread over paper towel on a plate to cool.
