CURRIED GROUND BEEF
This is a spicy dish that is even better the next day, use only Granny Smith apples or other firm apples or they will get mushy while cooking, Serve this over cooked rice or couscous. Adjust all seasonings to taste.

Steps:
- In a Dutch oven or large skillet heat oil.
- Add in the onions; saute for about 7-8 minutes or until soft, adding in the garlic and ginger the last 2 minutes of cooking.
- Add in the ground beef and cook until browned.
- Add in all remaining ingredients except the apples and water; stir with a wooden spoon; cover and simmer for about 20 minutes.
- Add in the chopped apples and cook uncovered for another 25-30 minutes (or until apples are soft.
- If the mixture is too thick add in some water.
- Season with salt and pepper to taste.
CURRIED GROUND BEEF AND BEANS
My mom made this all the time. My dad and I loved it. It is so simple to make it was one of the first things I made on my own. The basic recipe has only four ingredients.You can customize to your own taste. I would try it first the way it is and modify as you see fit. I sometimes add onion and garlic when browning meat. I also have some nice hot curry that I mix with my regular curry to spice it up a bit.

Steps:
- Brown the ground beef in a 2 1/2 to 3 quart pot. Drain Fat.
- Stir in curry powder and heat for one minute.
- Add tomato soup and kidney beans.
- Simmer all for about 10 minutes stirring occasionally.
- Serve alone in a bowl like chili or over rice.
CURRIED ORZO & GROUND BEEF AND CAULIFLOWER
A superbly delish warm salad with curried orzo, ground beef, turmeric mixed with the sweet sprouting cauliflower, mushrooms and few other ingredients. When DELICIOUS meets the super HEALTHY... the result.... absolutely OMG!

Steps:
- Wash and prepare the orzo according to package instructions.
- Meanwhile wash all the vegetables and chop according to your liking.
- Place a deep pan (wok style) on a medium heat, add 1 tsp coconut oil. When slightly hot add the chickpeas, 1/2 tsp cumin powder a pinch of salt and 1/2 tsp curry poder. Toss well to coat the chickpeas with the spices and coof tossing regularly for about 2 min. Take them out of the pan on a plate and set aside.
- Using the same pan (no need to wash) add the ground beef, salt pepper. Cook for about 5 minutes stirring occasionally until the beef has cooked (browned slightly). Break it so there are no big lumpy bits.
- Mix all the spices in (cumin, curry and turmeric powder as well as the mustard seeds) and cook further stirring occasionally for another minute or so.
- Add the chopped kale and sliced mushrooms and the broccolini. Carry on cooking for another 4 minutes. Toss it every now and again.
- Throw in the sweet sprouting cauliflower and allow it to cook for another 2 minutes toosing it a couple of times.
- Bring in the cooked orzo and mix together gently with the help of two wooden spatulas. Sprinkle the coriander and enjoy.
- Dish out on plates and serve immediately.
