Easy Vinegar Marinated Cucumbers are a light, refreshing, summertime side dish. Add regular or cherry tomatoes for a more colorful cucumber salad.

5 cucumbers
1 red onion
1 cup apple cider vinegar ((or white vinegar, red wine vinegar, rice vinegar))
1/2 cup sugar ((or more to taste))
1/2 cup water
1 teaspoon salt

Steps:

  • Peel and slice cucumbers into thin slices.
  • Cut onion in half and cut into very thin slices.
  • Combine onions and cucumbers in a large bowl.
  • In a separate, medium-sized bowl, combine remaining ingredients. Stir until sugar dissolves.
  • Pour vinegar mixture over cucumbers and onions. Stir until the cucumbers are evenly coated in the dressing.*
  • Refrigerate at least 20 minutes. Before serving, drain liquid and place in a serving bowl to serve.

I found this recipe a few years ago and it has become my standard cucumber salad recipe. I always have to double this recipe because it disappears in my house. Even the kids love it!

1/4 cup rice vinegar
2 tablespoons vegetable oil
1/2 teaspoon salt
fresh ground pepper
1 teaspoon dried dill weed (to taste)
4 cucumbers (about 1 pound)

Steps:

  • Mix sugar, vinegar, oil, salt and pepper and dill in a serving bowl.
  • Peel cucumbers, if desired, then thinly slice and add to bowl, stirring to mix and coat.
  • Let marinade.

1 teaspoon toasted sesame seeds
2 medium cucumbers, peeled or partially peeled,halved,seeded,and sliced crosswise
2 tablespoons rice wine vinegar
1 tablespoon distilled white vinegar
1 teaspoon sugar
1/2 teaspoon kosher salt

Steps:

  • In a medium bowl, toss the cucumber slices with all the other ingredients, except sesame seeds.
  • Cover, and refrigerate for at least an hour.
  • Sprinkle with the toasted sesame seeds just before serving.
  • Note: To toast sesame seeds, place in a dry skillet over medium heat, and toast until lightly browned and fragrant. Actually, I pick up a half pound at the health food store, rinse and drain them well, and then toast them in thedry skillet. Salt, to taste
3 tablespoons seasoned rice vinegar
1 tablespoon soy sauce

1 small garlic clove, minced, or granulated garlic or garlic flakes to taste
1 teaspoon minced fresh ginger
1/8 teaspoon ground cayenne, plus more to taste
Freshly ground pepper
2 tablespoons dark sesame oil

1 bunch scallions, white and light green parts, very thinly sliced
