Steps:
- Slice cucumber halves lengthwise with a mandoline or knife into 1/8 inch thick long slices
- Mix chicken, Neufchatel cheese, mayonnaise, green onions, tomato, red pepper flakes, and garlic salt together until well blended.
- Lay cucumber slices flat on a work surface. Spoon two teaspoons chicken mixture on bottom (flat) edge of each slice; roll up. Secure with toothpicks and place rolls upright like cups on a serving plate. Push a Snack Factory® Pretzel Crisp® about halfway down into the chicken mixture.

- Cut each cucumber half lengthwise into four strips; set aside. , In a small bowl, combine the cream cheese, mustard and dill. Spread about 2 tablespoons over each ham slice. Place a cucumber strip on the wide end; roll up tightly jelly-roll style. , Cut off any cucumber that extends beyond ham slice. Wrap tightly in plastic wrap and refrigerate for at least 2 hours. Cut into 3/4-in. slices.

In a small bowl, mix together the cubed sausage, green onions, jalapeno, mayonnaise, lemon juice, and dill. Place about a teaspoon of the mixture onto one end of a cucumber strip. Carefully roll up the cucumber strip and secure with a toothpick. Chill until ready to serve.
