1 package (8 ounces) cream cheese, softened
1/2 cup finely chopped seeded peeled cucumber
1/4 cup finely chopped onion
2 tablespoons mayonnaise
1/8 teaspoon salt
1/8 teaspoon pepper
Rye chips or crackers

Steps:

  • In a small bowl, beat the cream cheese, cucumber, onion, mayonnaise, salt and pepper until blended. Refrigerate until serving. Serve with rye chips or crackers.

My sons 1st grade teacher gave me this.Her way of gettin the little ones to eat well.They loved it on any kind of cracker.I like it on salad or on cold pasta.

1 large cucumber,peeled & seeded
1 large onion
8 oz sour cream
1 c mayonaise(not salad dressing)
salt to taste

Steps:

  • 1. Chop cucumbers and onion so they will puree' well in a blender or food processor.
  • 2. When 1st step is done,remove and put into a screen sieve.Get as much moister out as possible by stirring, then let sit for a few more to see if any more liquid drips out.
  • 3. Mix mayo and sour cream with cucumber mixture. At this point taste and add salt if desired.Keep in fridge up to 1 week.(If it lasts that long.)
