APPETIZER CUCUMBER GAZPACHO WITH SHRIMP
This is my go-to appetizer for parties or guests in the summer. I prefer to serve the soup in small shot glasses. If you want it to be vegetarian, just omit the shrimp. It's a mixture between gazpacho and ajoblanco.

Steps:
- Combine grapes, almonds, sherry vinegar, lime juice, cilantro, garlic, and salt in batches in the bowl of a food processor; pulse until roughly blended. Add cucumbers and briefly process, leaving some small pieces. Mix in olive oil using a spatula.
- Chill in the refrigerator for 1 hour.
- Taste soup and season with more salt if necessary. Fill small glasses with soup and drizzle with a bit of olive oil. Place 1 cooked shrimp into each glass.

These are the best appetizers that I know of created by a friend of mine. They always are the first thing to go, and my kids love them! Try it, I know you won't be disappointed.

Steps:
- Mix cream cheese with Dill,Celery Salt, and Garlic powder to taste. You should be able to taste the spices but not be too overpowering. Spread a little bit of the mixture on each slice of bread. Put a couple of cilantro leaves on top of the spread on each slice. Then top with one slice of cucumber. You can make this without the bread and just top each cucumber slice with a dab of cheese and then the cilantro on top. I usually make both so people who don't eat bread can have this too.
- 50-60 servings (being one) Depends on how long your baguette is and how many slices you get from your cucumbers.

- Mix all the ingredients together, taste for seasoning; set aside. This can be covered and refrigerated for 1 day.
- Cut the unpeeled cucumber into 1-1/2" thick slices; with the cucumber slice still laying on it's side, make a diagonal cut, now you have two diagonal cut pieces of cucumber.
- Use a melon baller to make a small round hole in the center of the cucumber where the seeds are to make a cup; do not cut completely through to the other side.
- Lightly salt each cucumber cup; place on a paper towel to drain. They can be refrigerated at this point and finished later.
- When ready to serve remove the cucumber cups from the refrigerator and place a small amount of the crab mixture in the center of each round hole in the cucumber and serve; garnish with fresh herbs.

APPETIZER - FRIED GREEN BEANS WITH SPICY CUCUMBER RANCH DIP

- Preheat oven to 400 degrees. Combine dip ingredients in a food processor or small blender (our Magic Bullet works wonders!). Blend until smooth. Place dip in a dish, and then cover and chill in the fridge. Place the green beans in a large pot with 4 cups of water. Bring to a boil. Once boiling, cook for 9 minutes. Carefully drain the beans, and then place them in cold water for a few minutes to stop the cooking process. Drain and dry them well. Put the egg substitute in a small bowl, and set aside. In a separate bowl, combine the Fiber One "breadcrumbs" with the spices (add extra seasonings, if you like). Cover a large baking pan with aluminum foil and/or nonstick spray. Set aside. Place about 1/3rd of the crumb mixture into a large sealable plastic bag. One by one, dip green beans into the egg substitute, and place them in the bag with the breadcrumbs -- continue this with 1/3rd of the beans. Seal the bag and shake it up. Remove the "breaded" green beans, and place them on the pan. Repeat this process two more times, so all of the beans are coated. Pop the pan in the oven and cook for 16 minutes, flipping green beans halfway through cooking. Beans are done once they're crispy. Allow green beans to cool slightly, and then serve with the dip. Yum!

- Slice cucumbers into rounds, about ½-inch thick. You can leave the skin on, peel them, or partially peel them for a striped look. Slice grape tomatoes in half (or quarters, if large) and set aside.
- In a bowl, combine cream cheese, Greek yogurt, dill and Ranch dressing powder. Mix thoroughly. You can use an electric mixer, but you can also do this by hand.
- Transfer the cheese mixture to a piping bag (if you don't have one, you can use a large Ziplock bag with a corner snipped off).
- Pipe the cheese mixture onto the cucumber rounds, then top with a cherry tomato half!
