GRILLED CUBAN SANDWICH (SANDWICH CUBANO)

Editor's note: Chef, nutritionist, and cooking teacher Lourdes Castro shared this recipe from her cookbook, Latin Grilling. It's part of a festive Cuban party menu she created for Epicurious and a great way to use up leftover grilled pork . As soon as someone finds out about my Cuban background, a Cuban sandwich question is never far away. It's no wonder, since Cuban sandwiches have recently popped up on menus all over the country. While many have gotten close to re-creating the real thing, I feel most miss the mark. So here is a step-by-step guide to creating an authentic sandwich Cubano. This is also a great way to use up the leftovers from your Cuban pig roast!

1 loaf Cuban bread, sliced lengthwise
1/2 stick (1/4 cup) unsalted butter, softened
3 tablespoons yellow mustard, or to taste
1 1/2 pounds boiled ham, sliced
1 1/2 pounds roasted pork , sliced
1 pound Swiss cheese, sliced
1 cup dill pickle chips, or to taste

Steps:

  • Assemble the sandwich
  • Spread 2 tablespoons of the butter on one half of the bread loaf and a thin layer of mustard on the other. Place 1 to 2 layers of ham, pork, cheese, and, finally, pickles on the buttered bread and top with the mustard-spread bread.
  • Wrap the sandwich in foil
  • Smear the remaining butter all over the outside of the sandwich and wrap it completely in aluminum foil.
  • Press and grill the sandwich
  • Heat your grill to high (550°F) and close the lid. Wait at least 15 minutes before lowering the heat to medium-high (450°F) and continuing.
  • Before grilling the sandwich, press down on it with your hands to flatten it. Place the wrapped, flattened sandwich on the grill and top with a brick, grill press, or any other heavy, heat-resistant object. Close the lid and grill for 5 to 6 minutes per side.
  • Remove the wrapped sandwich from the grill and take off the foil. Return the sandwich to the grill and grill for about 2 to 3 minutes per side, or until both pieces of bread are crispy and golden brown.
  • Slice and serve
  • Remove the sandwich from the grill and cut at an angle into small sandwich wedges (triangles). Place on a large platter and serve while still hot.

1 medium onion, cut into 4 slices
1 Cubanelle pepper, halved, seeded and cored
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 long Italian loaf, sliced in half lengthwise
3 tablespoons butter, melted
1/2 cup Mojo Mustard, recipe follows
12 thin slices deli ham (about 12 ounces)
2 cups homemade or store-bought carnitas, recipe follows (see Cook's Note)
6 dill gherkins, sliced in thirds lengthwise
8 slices Swiss cheese
1 cup yellow mustard
1 tablespoon honey
2 teaspoons chili paste
1 teaspoon fresh oregano
1/2 teaspoon ground cumin
Zest of 1 orange plus 1 tablespoon orange juice
Zest and juice of 1 lime
1 clove garlic, minced
Kosher salt and freshly ground black pepper
4 pounds boneless pork shoulder, cut into 2-inch cubes, with fat cap scored
1 tablespoon chipotle powder
Kosher salt
3 cloves garlic, smashed
2 cinnamon sticks
1 yellow onion, quartered
1/2 cup orange soda
1/4 cup vegetable oil
Zest and juice from 1 large orange

Steps:

  • Preheat a sandwich press to medium heat.
  • Drizzle the onion and pepper with the olive oil and season with salt and pepper. Put the onion and pepper on the sandwich press, close and cook until tender and lightly browned, 8 to 10 minutes. Slice into strips.
  • Brush the outside of the bottom half of the bread with some of the melted butter. Brush the inside of both halves with a generous amount of the Mojo Mustard. On the bottom half of the bread, layer the sliced deli ham and top with the carnitas. Top with the gherkins, grilled onion and peppers and finally the cheese. Top with the top half of the bread and brush with more butter. Slice in half widthwise.
  • Place both halves in the sandwich press, close, press down and cook until the bread is crispy and the cheese is melted, 5 to 7 minutes. Cut in half to make 4 sandwiches.
  • Mix together the mustard, honey, chili paste, oregano, cumin, orange zest and juice, lime zest and juice, garlic and some salt and pepper in a bowl.
  • Set the slow cooker to high. Put the pork cubes in the slow cooker and season all over with the chipotle powder and some salt. Turn any pieces with the fat cap upright. Nestle in the garlic, cinnamon sticks and yellow onion. Pour the orange soda, vegetable oil and orange juice and zest over the pork. Cover and cook on high until super tender, about 4 hours.
  • Preheat the oven to broil.
  • Transfer the pork chunks to a baking sheet fat-side up. Let the liquid in the slow cooker settle so the fat is on the surface. Scoop off about 1/4 cup of the fat and drizzle over the pork chunks. Broil until the meat is crispy and the fat is bubbly, 1 to 2 minutes.

When you think of the classic flavors of a Cubano sandwich, you think spicy mustard, tangy pickles and succulent pieces of pork. In this recipe we marinate pork tenderloin in yellow mustard and pickle juice so those bold flavors penetrate the meat. Pressing the sandwich onto the grill with a weight guarantees that the bread gets nice and toasty and the cheese is completely melted.

One 1-pound pork tenderloin
1/4 cup plus 1 tablespoon yellow mustard
2 tablespoons extra-virgin olive oil, plus more for oiling the grill grates
8 dill pickle slices (cut lengthwise), plus 2 tablespoons pickle brine
2 small cloves garlic, grated
Kosher salt and freshly ground black pepper
One 14-inch loaf Cuban bread or other long, soft bread, split lengthwise
2 tablespoons salted butter, melted
1/4 cup mayonnaise
8 ounces thinly sliced deli ham
4 ounces thinly sliced Swiss cheese

Steps:

  • Cut the pork tenderloin in half crosswise with a sharp knife, creating two 5-inch-long pieces. Make a vertical cut down the middle of each piece, about 3/4 of the way through. Open the pieces like a book. Lay them cut-side down on a piece of plastic wrap, cover with another piece and use a meat mallet to lightly pound the pork to about 1/2 inch thick.
  • Add the pork, 1/4 cup of the yellow mustard, olive oil, pickle brine and garlic to a quart- or gallon-size resealable bag. Close the bag, and rub the marinade into the pork. Let sit at room temperature for 30 minutes.
  • Meanwhile, prepare a grill or large grill pan for medium-high heat.
  • Once the pork has marinated for 30 minutes, transfer it to a plate, shaking off any excess marinade. Lightly oil the grill grates with vegetable oil. Sprinkle both sides of the pork liberally with salt and pepper, and grill until charred on both sides, 4 to 5 minutes per side for medium doneness. Transfer the pork a cutting board, and let it rest for 5 minutes. Reduce the grill heat to medium. Slice the pork across the grain into 1/8-inch-thick slices, and season lightly with salt and pepper.
  • Brush the outside of the Cuban loaf with the butter, and lay the loaf halves cut-side up on a very long piece of aluminum foil. Mix the remaining tablespoon yellow mustard with the mayonnaise, and slather the mixture onto both pieces of bread. Layer the ham, pickles, pork and Swiss cheese on one half of the bread. Top with the other half, and wrap the sandwich up in the foil.
  • Put the sandwich on the grill, place a large baking sheet on top and weigh it down with a large cast-iron pan or 2 large cans of food. Grill for 5 minutes, remove the baking sheet and weight, flip the sandwich, weigh it down again and grill until the Swiss cheese has melted, about 5 minutes more.
  • Unwrap the sandwich, cut into 4 pieces and serve immediately.

1 loaf french bread, 16 in (40 cm) long 5 in (12 cm) wide
¼ cup yellow mustard
10 slices swiss cheese
2 dill pickles, sliced lengthwise
10 slices honey ham
1 ½ cups pulled pork

Steps:

  • Heat a grill or campfire to medium heat
  • Slice the French loaf almost all the way in half lengthwise, leaving a long side still attached like a hot dog bun.
  • Open the bread and spread mustard liberally on both sides. Lay the Swiss cheese slices on both sides of the bread. Lay the pickles over the Swiss slices on the bottom half of the bread. Layer the ham slices and pulled pork over the pickles, then gently lift the top side of the bread to close the sandwich. Double wrap the sandwich in aluminum foil.
  • Set the sandwich on the grill over medium heat. Place a cast-iron or other heavy skillet on top to press down. Cook the sandwich for 5 minutes, then flip and cook for 5 minutes more, until the outside of the bread is crisp and the cheese is melted.
  • Let sandwich cool for a few minutes before carefully unwrapping. Slice and serve.

CUBANO SANDWICH WITH QUICK PICKLES

A traditional Cubano has slow-cooked pork and mojo made from scratch. This shortcut version relies upon dressed ham, a mojo made with Italian dressing and quick pickles.

1 cup brown sugar
1 cup apple cider vinegar
1 cup rice wine vinegar
1 teaspoon dried dill
1 teaspoon mustard seeds
Pinch red pepper flakes
2 cloves garlic, halved
1 small red onion, sliced
Kosher salt
1 English cucumber, cut into 1/4-inch slices
1/2 cup garlic Italian dressing
1/4 cup lime juice
1/4 cup orange juice
Kosher salt and pepper
Kosher salt and pepper
3 tablespoons yellow mustard
6 soft rolls, halved horizontally
6 slices Swiss cheese
1 1/2 pounds thinly sliced ham
6 tablespoons salted butter

Steps:

  • For the quick pickles: Combine the sugar, apple cider vinegar, rice wine vinegar, dried dill, mustard seeds, red pepper flakes, garlic, onion and 1 1/2 teaspoons salt in a small saucepan. Bring to a boil.
  • Toss the cucumber slices with 1 tablespoon of salt and place in a strainer. Let the slices sit for 10 minutes, then rinse well with cold water.
  • Put the pickles in a jar, pour in the pickling liquid and leave for at least 30 minutes. Keep refrigerated for up to 10 days.
  • For the cheater mojo dressing: Mix together the dressing, lime juice and orange juice in a bowl. Season with salt and pepper.
  • For the sandwiches: Heat a large cast-iron pan over medium heat.
  • Spread a thin layer of mustard on the inside of each roll. Put some quick pickle slices on each bottom roll, then top with a cheese slice. (You may need to cut the cheese slices into triangles to fit.) Toss the ham in the bowl with the mojo dressing, letting the excess drip off. Put 4 ounces of ham on each sandwich. Put the tops on the sandwiches.
  • Spread butter on the outside of the sandwiches and put them in the cast-iron pan (do not crowd the pan; you may need to do 2 batches). Place a second cast-iron pan on top of the sandwiches and press down. Cook the sandwiches on one side for 3 to 4 minutes. Remove the top pan and turn the sandwiches over, making sure they are golden brown on the bottom. Place the top pan back on the sandwiches and press down. Cook the sandwiches until golden brown on the second side, another 3 to 4 minutes. Transfer to a cutting board and cut in half diagonally. Serve warm.

1 round flat focaccia bread (I used the sea salt focaccia from Panera, it's about 6 inches in diameter)
6-8 slices deli ham, (I used Boar's Head, lower sodium ham)
6-8 slices deli chicken breast, (I used Boar's Head Everroast Chicken)
6-8 slices Swiss cheese
German mustard (I used Aldi brand of mild German mustard with herbs, it looks and tastes similar to French's regular mustard)
chipotle mayonnaise
zesty, bread and butter pickle slices
oil, for brushing on bread to grill

Steps:

  • 1. Cut focaccia bread into 2 rounds.
  • 2. Spread cut side of round bread bottom with chipotle mayonnaise.
  • 3. Layer sliced chicken breast over mayonnaise.
  • 4. Layer sliced ham over chicken breast.
  • 5. Layer Swiss cheese over ham.
  • 6. Layer bread and butter pickles over Swiss cheese.
  • 7. On cut side of round bread top, spread mustard and place on top of the bread and butter pickles.
  • 8. Brush top of focaccia bread with oil.
  • 9. Place oiled side down onto hot grill pan.
  • 10. Top sandwich with heavy pan or skillet and press down. I used a cast iron skillet. Grill until golden brown and crispy.
  • 11. Before turning, brush the bread with oil and turn, grill weighing down again with heavy pan or skillet, until golden and crispy and cheese is melted. If you have a panini press or George Foreman grill they can also be used.
  • 12. Cut in quarters and serve with your favorite side.

1 loaf (12-inch) Cuban bread
2 tablespoons mayonnaise, or to taste
2 slices kosher dill pickle, very thinly sliced lengthwise
3 to 4 slices Swiss cheese
4 slices roast pork
4 slices Virginia baked ham
Melted butter

Steps:

  • In Cuba it was just called el sandwich it was here in USA that we gave it a country!
  • The plancha has to be set to 350 F
  • Slice the bread in half lengthwise, spread the mayo on the bottom bread then place the roast pork then the baked sweet ham then the pickle then the cheese. this way the cheese will melt down and blend with the hams.
  • Next put the sandwich on la plancha and spread a little melted butter on top of the bread and press down the top part of the plancha. in about 3 minutes raise the top part of the plancha spin your sandwich to the other side and repeat the butter process again
  • Your bread should be toasted and the cheese melted. this should be done in about 10-to 15 minutes depending on the plancha
  • Any good ham dish starts with the night before. marinating gives all foods that extra punch of flavour. We accomplish this with sour oranges limes alot of minced garlic, ground cumin dried oregano. This mixture gets spread all over the fresh ham and massage into the meat .Put it the fridge covered with plastic wrap. the next day when u are ready Preheat the oven to 350f place the pork in a roasting pan cover fresh ham in salt skin up, this will keep the ham from drying out, cook for about 4 to 5 hours or until your ham reaches an internal temp of 180f. Remember to take off the salt that by now has become hard. Skin should be toasted and crispy.
  • Allow the meat to rest and carve when you can't wait any longer!

1 large loaf of cuban bread, looks like italian or french bread but with a white crust cut loaf into three equal pieces and slice each in half
1 lb sliced ham from the deli. preferably serrano ham or your favorite ham
1 lb sliced pork roast from the deli
1 lb sliced good swiss cheese (must be swiss cheese)
1 jar(s) sliced dill pickles try to get the long pickle slices instead of the round.
1 jar(s) mustard
1/4 stick soft butter

Steps:

  • 1. Heat a sandwich press to 350 degrees. If you do not have one a griddle will do fine. Heat the griddle. You will need a heavy object such as a cast iron fry pan or as I did for a long time. I had my husband find me a brick which I washed and rinsed real well. I dried it and then I wrapped it in heavy duty aluminum foil. Each time I would make Cuban sandwichs I used my foil coverd brick as a press. I finally got a George Foreman table top grill some years back and now I press my sandwhich in my George Forman grill. Now back to making the sandwiches.
  • 2. Take a loaf of Cuban bread and slice from one end to the other in half open the bread and spread some mustard on each side. Next take slices of ham and lay them all across the bread overlapping a little on each slice again take more slices of ham and cover the same slices you just laid out with a second layer of ham. Now take the sliced pork roast and do the same thing two layers all across. Some people like to do as many as three layers across. It depends on how hearty you like your sandwiches. Next take your swiss cheese slices and layer across the meat covering the whole sandwich. Last layer the pickles all over the cheese and close the sandwich.
  • 3. Now cut your sandwich evenly into three parts. With a pastry brush spread some soft butter over the entire surface of all three sandwiches turn over and do the same on the underside of the sandwich place on the hot sandwich press and grill for at least 3 minutes. You can open the grill and check to see if the sandwich is turning crispy golden brown when golden and the cheese is melted the sandwich is done.
  • 4. If using a hot griddle put the sandwich on the griddle and weigh it down with a heavy object like a cast iron pan or foil covered brick. when crispy on one side turn sandwhich over and do the other side. should be like three minutes on each side. Your sandwich should be 1/3 slimmer than when you put it on the grill it should be crispy and golden on both sides and the cheese should be melted. Cut diagonaly and serve.
  • 5. Follow the same procedure for the midnight sandwich. Buy sweet egg bread rolls slice in half and put the same ingredients as in the Cuban sandwich ham, pork roast, cheese and pickles with mustard on each side. Grill in the sandwich Press or on the griddle or the George Foreman table top grill. In the picture above the long sandwich is the Cuban and the darker one is the midnight. Pictured with the sandwiches are plantain chips. I am not good at picture taking but the cuban sandwich is also wide however it does not show how wide it is in the picture. Enjoy

1/4 taza de aderezo italiano fuerte KRAFT Zesty Italian Dressing, cantidad dividida
2 cucharadas de jugo de limón amarillo (lemon)
2 dientes de ajo, bien picados
4 panecillos cubanos (Cuban rolls), con sus mitades separadas
1 cebolla, cortada en rebanadas finas
1 cucharada de perejil fresco picado
1 cucharada de mantequilla, derretida

Steps:

  • Usa un mazo para adelgazar la carne hasta que tenga 1/8 pulgada de grosor; colócala en un plato poco profundo. Mezcla bien 2 cdas. del aderezo, el jugo de limón y el ajo. Vierte esta mezcla sobre los bistecs. Víralos para recubrirlos de manera pareja por ambos lados. Pon a marinar la carne en el refrigerador durante 1 hora.
  • Saca la carne de la marinada; deshazte del líquido. 2/3 c mayonnaise
2 Tbsp sour cream
1/2 c thinly sliced green onions
1/2 c diced fire-roasted sweet red peppers
1/4 c diced peperonici
1/2 tsp lime zest
2 Tbsp finely chopped cilantro
1/2 c self-rising corn meal
1 tsp sugar
3/4 tsp smoked paprika
1/4 c milk
16 sweet pickle chips, patted dry
vegetable oil, for frying pickles
4 (about 5-6 inches) crusty white bread pieces, split
2 Tbsp butter
2 c arugula
4 slices swiss cheese
1/4 lb roasted pork, thinly sliced
4 slices deli sweet ham
4 slices smoked gouda cheese or any other white smoky cheese

Steps:

  • 1. In a medium bowl, combine mayonnaise, sour cream, green onions, red pepper, peperoncini, lime zest, and cilantro. Cover; set aside.
  • 2. In a medium, deep skillet, pour vegetable oil to cover bottom and about ½ inch up the sides. Heat oil over medium high heat. In a medium bowl, combine the corn meal, sugar, smoked paprika, and buttermilk. Dip pickles in batter, allowing excess batter to drip off. When oil is hot, drop the pickles in oil; fry until light golden brown. Transfer to a paper-lined plate. Do not cover.
  • 3. In a large skillet, melt butter over medium high heat. Place outside of bread slices face down on skillet. Toast, pressing down gently with a spatula to flatten slightly, about 2-3 minutes or until lightly toasted.
  • 4. To assemble sandwich, spread aioli on cut-side of bottom buns. Top each with arugula, 1 Swiss cheese slice, roast pork (dividing equally among sandwiches), 1 ham slice, and 1 Smoked Gouda cheese slice. Top each with 4 fried pickles. Close with top buns. Serve immediately.

1 teaspoon dried minced onion
1 teaspoon Dijon mustard
2 Hawaiian sweet rolls, halved
2 slices thinly sliced deli ham
2 slices Swiss cheese
2 cooked bacon strips, halved
4 dill pickle slices

Steps:

  • Preheat air fryer to 350°. Beat 1 egg and pour into a greased 8x4-in. disposable foil tray; place in air-fryer. Cook until set, 3-4 minutes. Carefully remove egg from tray. Cut in half; fold each portion in half., Combine butter, onion and mustard. Drizzle cut side of each roll half with 1 teaspoon butter mixture. 1/3 cup grapeseed oil
8 flour tortillas
8 slices Swiss cheese
1/4 cup whole-grain mustard
1 pound pulled pork, warmed
8 slices deli ham, warmed
16 thin pickle slices

Steps:

  • Heat a large pan or griddle with the oil to medium heat. Put the tortillas in the pan (in batches if need be) and place a slice of Swiss on each. Spread about 1/2 tablespoon of the mustard over the top of each cheese slice. Stack half of the tortillas with 4 ounces of pulled pork followed by 2 slices of ham. Add 4 pickle slices on top of the ham, then top with a second tortilla (with just the cheese) to make a sandwich. Press the sandwiches lightly and allow the cheese to melt, making sure that the tortillas are nice and crispy.
  • Slice the sandwiches in half and serve.

I have heard that the Cubano sandwich was born in Cuba and educated in Key West. The Cubano is simple to prepare, but involves a bit of love and tradition. You have Cuban bread, and Cuban slow-smoked pork (lechón asado), and then ham, Swiss cheese, dill pickles, and mustard... that's it... but oh so yummy. So, you ready......

1 cuban roll, 8 inches long
4 oz uncured, sliced smoked ham
3 oz swiss cheese
3 oz smoked pork, shredded
yellow mustard
dill pickles, sliced

Steps:

  • 1. Gather your ingredients.
  • 2. Chef's Note: You don't have to use Cuban bread or spend the time smoking the pork. Just get some good thick sliced white bread, and pick up some smoked pork from your butcher. But my way is more fun :-)
  • 3. Slice the Cubano roll in half.
  • 4. Add the ham to a sauté pan and sear on both sides.
  • 5. Chef's Tip: This part is important because searing the ham helps to bring out its flavors... This is one of the secrets to a good Cubano.
  • 6. Run two generous lines of mustard on the bottom half of the Cubano roll.
  • 7. Add the seared ham to the bottom half.
  • 8. Add the Swiss cheese (my favorite cheese for this is Lacy Swiss Cheese).
  • 9. Add the shredded pork.
  • 10. Add the dill pickles.
  • 11. Chef's Tip: I tried a lot of dill pickles, to get what I thought was the best, and in my opinion it's Bubbies Kosher Dills. Whatever you choose, make sure that they have a lot of tang to them.
  • 12. Add two more lines of mustard to the top of the bun.
  • 13. Place on top of the sandwich, and then butter both sides.
  • 14. Place onto the Panini press, or just put into a regular pan.
  • 15. Chef's Note: If using a regular pan, cook on medium high heat.
  • 16. Use a small pan cover, or other object to press the sandwich down.
  • 17. Cook until the bread browns, and the cheese melts.
  • 18. Serve while still nice and toasty warm. Enjoy.
  • 19. Keep the faith, and keep cooking.

4 pepinillos en vinagre al eneldo en rebanadas largas CLAUSSEN Kosher Dill Sandwich Slices
4 rebanadas grandes de queso suizo KRAFT Big Slice Swiss Cheese Slices

  • Unta las caras cortadas del pan con mostaza. Rellena con el resto de los ingredientes, excepto la mantequilla.

Recipe from a Little Havana loncheria owned by a college roommate. The traditional way is to use Cuban Bread but that is not easily available so you can use French or Italian bread.

1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1/4 teaspoon ground cinnamon
1/8 teaspoon freshly grated nutmeg
1/8 teaspoon ground cloves
3 garlic cloves, finely chopped
3 tablespoons extra-hot Dijon mustard
2 tablespoons mayonnaise
11 ounces pork tenderloin
1 tablespoon olive oil
1 loaf French bread or 1 loaf Italian bread, lightly toasted
4 ounces swiss cheese, thinly sliced
4 dill pickle slices, sandwich style, cut in half
4 ounces black forest ham, thinly sliced

Steps:

  • Heat oven to 450°F Mix the salt, pepper, cinnamon, nutmeg, cloves, garlic, and mustard together in a small bowl. Stir 1 1/2 tablespoons of the spiced mustard into the mayonnaise and set aside.
  • Coat the tenderloin with the remaining mustard mixture, place in a small roasting pan, cover, and marinate, refrigerated, for 25 minutes. Remove the pan from the refrigerator and let rest for 10 minutes.
  • Roast the tenderloin, turning after 10 minutes, until the internal temperature reaches 155F @20 to 25 minutes. Let rest for 15 minutes and cut into thin slices.
  • Cut loaf of bread into 16 sandwich rounds of 1/2 inch thickness. Lightly toast sandwich rounds under the broiler.
  • Lightly brush a baking pan and a sheet of aluminum foil with the olive oil.
  • Spread about 1/2 teaspoon of the reserved mustard-mayonnaise mixture on each piece of toast. Layer the pork slices, Swiss cheese, pickles, and ham on half of the toast and top with the remaining toast. Place the sandwiches on the prepared pan and cover with the prepared foil, oiled side down.
  • Place another baking pan on top of the foil and weight it down with a heavy oven-proof skillet. Bake the sandwiches until the cheese has melted, about 10 minutes. Transfer to a serving platter and serve immediately.
