2 lavash rectangles
2 1/2 tablespoons grainy mustard
1 pound sliced pastrami
1 cup coleslaw (about 6 ounces)
1/2 pound Swiss cheese

Steps:

  • To assemble: With a short end of a lavash facing you, spread about 2 slightly rounded teaspoons of the mustard over the entire lavash. Cover with a quarter of the pastrami, followed by the Swiss cheese and a quarter of the coleslaw, and roll the wrap away from you. Complete the wraps with the remaining ingredients. Or, if you prefer, prepare all at once, assembly -- line style. Cut in half on the bias.

8 ounces fresh mozzarella, cubed
8 ounces salami, cubed (have the deli counter slice it into 1/4-inch pieces)
8 ounces cherry tomatoes, quartered
1 (6-ounce) jar marinated artichoke hearts, drained and chopped
1 roasted red pepper, drained and chopped
1/4 cup jarred pepperoncini, drained and chopped
Red Wine Vinaigrette, recipe follows
Kosher salt and freshly cracked black pepper
16 leaves Boston Bibb lettuce
1/4 cup red wine vinegar
1 teaspoon honey
1 teaspoon mustard
1/4 cup olive oil
Kosher salt and freshly cracked black pepper

Steps:

  • In a large mixing bowl, mix together the mozzarella, salami, cherry tomatoes, artichokes, roasted red pepper and pepperoncini. Toss the salad mixture with the Red Wine Vinaigrette. Season with salt and pepper. Let this marinate for 30 minutes before serving.
  • Serve the lettuce cups alongside the antipasto salad. Be sure to use a slotted spoon when serving to drain off any excess marinade, so the lettuce doesn't get soggy.
  • In a small mixing bowl, whisk together vinegar, honey and mustard. Once combined, slowly add olive oil in steady stream while whisking. Season with salt and pepper.;

CUBAN SANDWICH WRAP

Juice of 8 lemons
Juice of 8 limes
12 cloves garlic
1 bunch fresh cilantro sprigs
2 cups kosher salt
2 tablespoons ground cumin
1 (8-pound) pork shoulder butt
2 ounces freshly ground black pepper
12 whole wheat tortillas
Yellow mustard, to taste
1/2 pound sliced ham
1 pound sliced Swiss cheese
Pickles, to taste
1 head lettuce, finely chopped
2 tomatoes, sliced

Steps:

  • Preheat oven to 375 degrees F.
  • In a blender mix the lemon juice, lime juice, garlic, cilantro, salt, and cumin, until well combined and a paste forms. Place the pork in a large roasting pan and rub the paste all over pork. Place the roasting pan in the oven and roast the pork for 4 hours. Remove the pork and let sit for 10 minutes. Once a bit cooled, using 2 forks, pull the pork into shreds.
  • Heat the tortillas on stove for 30 seconds each side. Spread mustard on each warmed tortilla, add some pulled pork, a slice of ham, a slice of Swiss cheese, some pickles, lettuce, and a slice of tomato. Wrap up the tortilla and serve.

SLOPPY CUBANOS (CUBAN COUSIN TO JOE)

1 tablespoon extra-virgin olive oil, once around the pan
1/4 to 1/3 pound chorizo, casings removed and finely chopped, about 1 cup
1 pound ground pork
2 garlic cloves, grated or finely chopped
1 teaspoon ground allspice
2 teaspoons paprika
2 teaspoons ground coriander
Salt and freshly ground black pepper
2 tablespoons light or dark brown sugar
1 tablespoon Worcestershire sauce
1 lime, zested and juiced
1 cup chicken stock
1 (8-ounce) can tomato sauce
4 Portuguese rolls or sub rolls
4 deli-cut slices Swiss cheese
4 large dill or half sour pickles, chopped
1 bag plantain chips or other exotic chips

Steps:

  • Preheat the broiler.
  • Heat the oil in a large skillet over medium-high heat. Add the chorizo and cook until browned, about 2 minutes, then add the pork. Cook the pork for 3 to 4 minutes, crumbling it with a wooden spoon, add the onions and garlic, and season the mixture with the allspice, paprika, coriander, salt and pepper. Cook the mixture for 5 minutes then add the sugar, Worcestershire, and lime zest and juice. Mix well to distribute the flavors, then stir in stock and tomato sauce. Bring to a bubble and simmer for a couple of minutes.
  • Split the rolls and toast lightly under the broiler. Load the saucy meat mixture onto the rolls and top each with a slice of Swiss cheese. Return to the broiler for a minute to melt the cheese. Sprinkle with the chopped pickles and serve the sammies with a few chips alongside.

3/4 pound thin boneless pork loin chops, cut into strips
1 tablespoon canola oil
1/8 teaspoon pepper
1 tablespoon Dijon mustard
4 multigrain tortillas (10 inches)
8 ounces sliced deli ham
8 slices Swiss cheese
4 thin sandwich pickle slices
1/4 cup thinly sliced red onion

Steps:

  • Preheat oven to 350°. In a bowl, toss pork with oil and pepper. Place a large skillet over medium-high heat. Add pork; cook and stir 2-3 minutes or until browned.
