INSTANT POT CHEESY JALAPEñO CORN CASSEROLE
This corn casserole is like a corn pudding meets corn soufflé. It's cheesy and slightly spicy, and makes for the perfect Thanksgiving side dish, especially since it's made in an Instant Pot.

Steps:
- In a large bowl, stir together all of the ingredients (except for the water) until well-combined. Pour into a greased 7-inch round soufflé dish or tall cake pan. Spray a piece of foil with cooking spray and cover the dish tightly with the foil, greased side down.
- Set a wire rack or trivet inside of the inner bowl of an 8-quart or larger Instant Pot. Pour in the water and then place the casserole dish inside on top of the rack. Lock the lid and make sure the valve is set to seal. Pressure cook on high for 40 minutes. Allow to naturally release for 10 minutes before manually releasing any residual steam inside.
- Carefully unlock the lid and lift up the casserole dish. Remove the foil and serve the casserole immediately.
- Tip: If you want a golden brown top, you can place the casserole under the broiler until golden brown.

SIMPLE JALAPENO CORN CASSEROLE
This is a simple, but yet delicious, creamy, baked corn casserole. It was given to my sister and I from a dear friend. We do not know where she got the recipe. We fix this dish quite often around our house.

JALAPENO CORN CASSEROLE
My mom has been making this YUMSTER dish for as long as I can remember, and it's always a hit with EVERYONE! A snap to prepare and delicious to boot! You just can't go wrong with this one! It's good any time of year, and can be made to suit anyone...even kids, as you can adjust the "heat" to taste. Three (15 oz) cans of well-drained whole kernel corn (uncooked) may be substituted for the frozen corn, but my family prefers the taste and texture of the frozen variety. Get ready for recipe requests!

JALAPENO-CORN CASSEROLE
I've had this at potlucks and barbecues. I tend to make it a little hotter, using 2 to 3 jalapenos, but I am a fire-eater! I'm not sure where the recipe originated, but I got it from my friend Lori. I've made a few changes to it due to personal preferences. This recipe is easily halved. Great use for leftover rice....just eliminate step 1 in the directions.
