1kg peeled or scrubbed new potatoes
3 tbsp olive oil
4 spring onions , sliced
handful pitted black olives , chopped

Steps:

  • Cook the potatoes in boiling salted water for about 15 mins until completely cooked through. Peeling the potatoes isn't essential, but I think it gives a smoother finish to the dish.
  • Drain, tip into a bowl, and crush with the olive oil until broken but not mashed. Stir through the spring onions and the olives, then season to taste and serve.

14 ounces new potatoes
3 1/2 pints water, to cover
2 heads garlic, cut in half
2 large bay leaves
20 sprigs fresh thyme
1 teaspoon chicken bouillon
1 1/2 ounces salt
3 1/2 ounces unsalted butter
1/2 teaspoon salt
1/4 teaspoon white pepper

Steps:

  • Scrub and wash the new potatoes and place into a saucepan. Cover with the water and then add the rest of the ingredients, except the butter and final seasoning.
  • Bring to the boil and reduce to a simmer.
  • Cook for approximately 20 minutes.
  • Once cooked, drain and using a fork or a potato masher, crush the potatoes lightly,.
  • add the butter and season with salt and pepper.

1 lb new potato
4 tablespoons extra virgin olive oil
1 lemon
1 tablespoon honey
1 red onion
3 tablespoons of fresh mint
7 ounces feta
black pepper

Steps:

  • Cook the new potatoes in a large pan of boiling water until tender, about 10 minutes, depending on size.
  • Drain thoroughly and set to one side.
  • Pour the oil into a small bowl add the finely grated zest and juice of the lemon and the honey. Whisk.
  • Using the end of a rolling pin or a large wooden spoon, roughly crush the potatoes, not so they are completely broken up but just enough so their skins split and the flesh is exposed so it soaks up some of the dressing.
  • Finely chop the red onion and sprinkle over the potatoes.
  • Chop the mint and crumble the feta and add to the potatoes, drizzle over the dressing and toss to mix, season well with black pepper and salt if desired, not forgetting the feta can be a bit salty.
  • Serve with salad leaves.

4 gressingham duck breasts
salt
pepper
4 passion fruit
2 star anise
70 ml whiskey
100 ml maple syrup
10 g black treacle
500 g new potatoes
butter
1 bunch fresh chives, finely chopped
salt

Steps:

  • Start with the passion fruit sauce by cutting the fruit in half, remove the pulp and seeds and flesh from inside and place in a small saucepan.
  • Next, add the whisky and star anis and bring to the boil. The whisky may flambĂ©, allow the alcohol to burn off and remove the pan from the heat until the flame burns out.
  • Add the maple syrup and black treacle and bring back to the boil. Remove from the heat to allow the ingredients to infuse. Reheat the sauce when ready to serve.
  • Wash and place the new potatoes into a suitable sized pan, cover with cold water and bring to the boil. Cook for about 10-15 minutes of until tender. Strain and leave to cool slightly.
  • While the potatoes are cooling, place the duck breast on a chopping board, skin side up and using a sharp knife, score the skin in a diagonal direction. Then turn the duck breast around and score in the opposite direction.
  • Season the duck breast with a salt and black pepper. Heat an oven proof frying pan on a high heat. Once the pan is very hot place the duck breast, skin side down, into the dry pan. Reduce the heat so that it gently fries and cook for 5 minutes until golden brown.
  • Preheat the oven to 190?C/gas mark 5. Transfer the frying pan into the oven and cook the breast for 3 minutes on one side, then turn the duck breast over and cook for another 3 minutes.
  • Remove from the oven and transfer the breast onto a board or plate and allow to rest in a warm place for a good 5 minutes.
  • While the duck is resting, heat a large frying pan on a medium heat and add a large knob of butter. As soon as the butter begins to foam, add the potatoes, slightly crushing each one in your hand before adding into the pan.
  • Toss the potatoes in the warm butter and season with salt to taste. Remove the pan from the heat and add in the chives just before serving alongside the carved duck breast and hot passion fruit sauce.

CUMIN-CRUSTED LAMB WITH SHALLOTS & CRUSHED NEW POTATOES

1 tbsp ground cumin
1 tbsp ground coriander
4 trimmed lamb rumps , about 200g each
2 banana shallots , halved lengthways
450g new potatoes
2 spring onions , chopped
1 lemon , zested and juiced
1 tbsp capers
small handful mint leaves , chopped
splash of olive oil (optional)

Steps:

  • Heat oven to 220C/200C fan/gas 7. Mix the spices with a generous pinch of salt, then coat the lamb in the mix. Heat a large ovenproof frying pan. Sizzle the lamb, fat-side down, for 5 mins. Flip the lamb, then put the shallots, cut-side down, in the pan. Transfer the pan to the oven and roast for 10 mins for pink lamb, or 15 mins for medium. Remove the pan from the oven, then leave to stand for 5 mins.
  • Meanwhile, put the potatoes on to boil and simmer until just cooked. Drain, then gently crush with a potato masher. Add the spring onions and lemon zest, season, then keep warm until ready to serve.
  • Remove the lamb and shallots from the pan. Stir the capers, mint, lemon juice and a splash of olive oil (if needed) into the lamb juices to make a dressing. Slice the lamb and separate the shallots into layers. Spoon the potatoes onto warm plates, add slices of lamb and some shallots, then spoon over the dressing.
