NUT LOAF SUPREME
This is a gluten-free favorite at retreats year around. Try this warm with onion gravy, mashed rutabaga, and sauteed green beans.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Butter a 9x5-inch loaf pan.
- Put walnuts and pecans in a resealable bag and seal; crush nuts using a rolling pin.
- Heat olive oil in a skillet over medium heat; cook and stir onion and garlic in the hot oil until onion is translucent, about 3 minutes. Add mushrooms, marjoram, sage, and thyme; cook and stir until mushrooms are golden, about 5 minutes. Transfer mushroom mixture to a large bowl.
- Stir crushed walnut mixture, Swiss cheese, wild rice, cottage cheese, eggs, parsley, salt, and pepper into mushroom mixture until evenly mixed. Pour mixture into the prepared loaf pan.
- Bake in the preheated oven until loaf is golden brown, about 1 hour. Let loaf cool in pan for about 20 minutes before inverting pan and removing loaf.

VEGETARIAN NUT LOAF
A delicious loaf that's healthy too. Nice cold as well. You can use a mixture of any nuts such as almonds, cashews or hazelnuts etc. When I made the loaf I used a mixture of pistachio nuts and walnuts and that worked really well.

Steps:
- Heat oven to 190°C.
- Heat the oil and gently fry the onion, leek, celery, mushrooms and garlic for about 10 minutes until softened.
- Add the remainder of ingredients and mix well.
- Pour into a loaf tin that has been greased and lined with baking paper.
- Bake 50 - 60 minutes, or until cooked.

This is taken from "Diet and Salad" book by Dr. N.W. Walker, D Sc which has a few vegetarian recipes. This particular loaf is good for Thanksgiving dinner.

Steps:
- Mix grated carrots and other vegetables together in large bowl. Squeeze some of the juice from the grated carrots into the egg yolks, add salt and spices and beat thoroughly then mix with the vegetables. Add nuts and melted butter and mix thoroughly.
- Bake in greased Pyrex loaf pan in moderate oven until done, about 1 hour. Serve on plates in slices just thick enough to hold together.
