1 cup crunchy corn cereal (recommended: Cap'n Crunch)
1 cup crispy rice cereal (recommended: Rice Krispies)
4 tablespoons all-purpose flour
2 teaspoons salt
1/2 teaspoon pepper
12 chicken tenders, halved
2 eggs, beaten
2 1/2 cups canola oil
Green Onion Honey Dip, recipe follows
1 cup sour cream
2 tablespoons honey
2 tablespoons chopped green onions
1 teaspoon salt

Steps:

  • Put the 2 cereals into a gallon-sized bag and seal. Place on a flat surface and, using a rolling pin, crush the cereal until it's still slightly chunky. Pour into a medium sized bowl and add the flour, salt and pepper and mix to combine.
  • Dip the chicken pieces into the beaten eggs, 1 at a time, and transfer to the breading mix. Coat well and refrigerate for 30 minutes.
  • Pour the oil into a large saucepan and place over medium-high heat for 2 to 3 minutes. Test the oil by dropping a bread cube in; if it browns within 1 minute the oil is ready. Drop the chicken nuggets into the hot oil, 4 pieces at a time, and cook 2 minutes, or until the breading is golden and the chicken is cooked through. Repeat with the remaining chicken nuggets. Keep warm in a low oven until ready to serve.
  • Place all ingredients in a small bowl and mix until well combined. Refrigerate until ready to use.

2 1/2 cups RICE KRISPIES® cereal
1 1/2 teaspoons paprika*
1 teaspoon seasoned salt*
1/8 teaspoon garlic powder*
1/8 teaspoon onion powder*
1 pound boneless, skinless chicken breasts
1 tablespoon butter or margarine, melted
1/4 cup reduced-fat ranch salad dressing

Steps:

  • In shallow dish combine egg whites and water. On large sheet of wax paper combine KELLOGG'S® RICE KRISPIES® cereal, paprika, seasoned salt, garlic powder and onion powder.
  • Cut chicken into 1 1/2-inch pieces. Dip chicken pieces into egg white mixture, coating all sides. Roll in cereal mixture. Place in single layer on ungreased baking sheet. Drizzle with melted butter. Bake at 450 degrees F about 12 minutes or until no longer pink in center.
  • Serve warm with salad dressing as dipping sauce.
  • This recipe makes 4 main dish servings or 8 appetizer servings.

This recipe is taken from Jamie's Food Revolution by Jamie Oliver 2009. This crumbing technique is so versatile-you can cook pork or even cod in exactly the same way. As there is butter in the crumb mixture, you can grill, fry, roast or bake the meat dry in the oven and it will go lovely and golden.

1 garlic clove
1 lemon
6 cream or 6 plain crackers, such as Jacob's
2 tablespoons butter
4 sprigs fresh Italian parsley
sea salt
fresh ground black pepper
1 tablespoon all-purpose flour
1 large egg, preferably free-range
2 skinless chicken breast fillets, preferably free-range
olive oil

Steps:

  • To prepare your chicken: Peel the garlic and zest the lemon. Put your crackers into a food processor with the butter, garlic, parsley sprigs, lemon zest and a pinch of salt and pepper. Whiz until the mixture is very fine, then pour these crumbs on to a plate. Sprinkle the flour on to a second plate. Crack the egg into a small bowl and beat with a fork. Lightly score the underside of the chicken breasts. Put a square of plastic wrap over each one and bash a few times with the bottom of a pan until the breasts flatten out a bit. Dip the chicken into the flour until both sides are completely coated, then dip into the egg and finally into the flavored crumbs. Push the crumbs on to the chicken breasts so they stick-you want the meat to be totally coated.
  • To cook your chicken: You can either bake or fry the chicken. If baking, preheat your oven to its highest temperature (475°), place your chicken on a sheet pan and cook for 15 minutes. If frying, put a frying pan on a medium heat, add a few good lugs of olive oil and cook the chicken breasts for 4 to 5 minutes on each side, until cooked through, golden and crisp.
  • To serve your chicken: Either serve the chicken breasts whole, or cut them into strips and pile them on a plate. Beautiful and simple served with a lemon wedge for squeezing over, and a tiny sprinkling of salt. Great with a lovely fresh salad or simply dressed veggies.

2 eggs
1/8 teaspoon salt
1/8 teaspoon fresh cracked black pepper
1 1/2 cups panko breadcrumbs
1 cup freshly grated parmesan cheese
5 tablespoons vegetable oil
2 -3 boneless skinless chicken breasts

Steps:

  • Heat oven to 425 F.
  • add baking sheet lined with foil , with oil on it, to preheat for several minutes.
  • cube up the chicken breasts , 1" by 1".
  • crack eggs in one bowl and mix well.
  • in another bowl, add panko , parmesan, salt and pepper, mix thoroughly.
  • with one "wet" hand take a piece of chicken and toss it around in the egg mix.
  • with same "wet" hand remove that piece and drop it in the breading.
  • roll it around with your "dry" hand patting the crumb mixture onto the chicken.
  • Bread all the chicken.
  • Remove hot pan from oven, be careful!
  • Place chicken pieces on pan evenly spaced apart.
  • Put in oven, set timer for 20 minutes.
  • At the 10 min mark , flip all the chicken pieces, cook 10 more minutes or until a thermometer registers 170F.
  • Variation: kick it up, add 1/8 tsp cayenne to the breading mix.
  • Good with real honey dill dip.

Steps:

  • Heat oven to 400° F. Spray with cooking spray or lightly grease 13 x 9-inch pan.
  • Finely crush cereal. Stir together cereal, salt and pepper; set aside. In medium bowl, stir together milk, honey and mustard until blended. Dip chicken into milk mixture; coat with cereal mixture. Place chicken in pan; drizzle with melted butter.
