1 cup chopped celery
1 tablespoon butter
2 cups cubed cooked chicken
1-1/2 cups cooked rice
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
3/4 cup mayonnaise
1 can (8 ounces) sliced water chestnuts; drained
1/2 cup sliced almonds
2 tablespoons chopped onion
Salt and pepper to taste
TOPPING:
1 tablespoon butter, melted
1/2 cup crushed cornflakes
Sliced almonds, optional

Steps:

  • In a skillet, saute celery in butter until tender. Remove from the heat; add the next nine ingredients. Spoon into an ungreased 2-1/2-qt. baking dish. , Combine melted butter and cornflakes; sprinkle on top of casserole. Sprinkle with almonds if desired. Bake, uncovered, at 350° for 30 minutes.

You can use grilled chicken strips instead of chicken breasts, salsa instead of enchilada sauce, other flavors of Doritos, soups, or cheese. You can add corn or chopped olives. Whatever you like!

1 (10 3/4 ounce) can cream of mushroom soup
1 (10 ounce) can enchilada sauce
1/2 teaspoon garlic salt
1/2 teaspoon cumin, ground
1 teaspoon red wine vinegar
2 cups chicken breasts, cooked and sliced
1 onion, chopped
1 (4 ounce) can green chilies, chopped
3 cups Doritos, Ranch flavored, divided
1 cup monterey jack cheese

Steps:

  • Preheat oven to 350°F.
  • Combine soups, enchilada sauce, garlic salt, cumin, and vinegar. Stir well and set aside.
  • Crush chips and put 2 cups of crushed chips in the bottom of a greased casserole dish.
  • Top with (in order) chicken strips, onion, green chiles, sauce (You may not need all of the sauce), remainder of chips, and cheese.

  • Boil or slow cook chicken ahead of time and chop or pull apart into bite-sized pieces.

3 lb boneless, skinless chicken breast, cooked and cubed
1/2 lb bacon, cooked crisp and crumbled
1 c each - frozen corn, thawed & thin sliced celery
salt & pepper to taste
10 3/4 oz can, cream of chicken soup
1 c sour cream
1 Tbsp dried parsley
1/2 c green onion, sliced - tops too
3 - 4 clove garlic, minced
1 c shredded, sharp cheddar cheese & 1/2 cup mild cheddar cheese
1/3 c melted, butter
1 1/2 c seasoned, panko crumbs

Steps:

  • 1. Preheat oven to 350 degree F. Spray an 11 x 7 baking dish with non stick cooking spray or grease. Cook bacon crisp and drain, crumble. Par cook celery in microwave, until tender crisp, or could saute in a little butter for a few minutes. If you like it on the crispy side, can add it raw. I prefer to par cook for a few minutes.
  • 2. In a medium sized bowl, stir together the chicken, bacon, celery, onion, salt, pepper, sour cream, soup, corn, parsley and garlic, mix well.
  • 3. Spread into prepared baking dish.
  • 4. Top with cheese and bake for 20 - 25 minutes or until cheese is melted and beginning to bubble.
  • 5. In a bowl, add melted butter and Panko crumbs - toss to coat well. Spread over cheese, evenly.
  • 6. Place back into the oven and continue baking for another 15 - 20 minutes or until bubbly and crumbs begin to golden.
  • 7. Serve hot. This was delicious!

1 1/4 cups milk (can use skim or low-fat)

2 cups curly egg noodles, cooked and drained (I measure before boiling them)

2 c curly noodles, cooked and drained
2 c ( 4 ounce) french fried onions
1 can(s) (10 ounce) cream of chicken soup, undiluted
1 1/4 c milk
salt and pepper to taste
1 c frozen vegetable of your choice (peas and carrots, corn, or broccoli cuts, thawed and drained)
1 1/2 c shredded cheddar cheese

Steps:

  • 1. Mix noodles with chicken, frozen vegetable , 1/2 cup cheese, salt and pepper. Add 1 cup of French Fried Onions and mix well.

10 chicken thighs plus 2 boneless, skinless chicken breasts - poached and shredded
1 Tbsp creole seasoning
1 tsp salt
2 Tbsp dry, minced onions
1 - 7 oz chopped, green chiles - drained
3 can(s) cream of chicken soup - not family sized
2 - 8 oz bags, shredded velveeta cheese
1 Tbsp red pepper flakes - optional
6 - 8 oz crushed taco flavored doritos or your favorite

Steps:

  • 1. Poach chicken in water with creole seasoning and salt. Drain and remove meat from bones and shred.
  • 2. Place chicken evenly into a 9 x 13 baking dish. Sprinkle with dry minced onion.
  • 3. Preheat oven to 400 degree F. In a large skillet, mix together the soups, cheese and chiles. Bring to a simmer and stir until Cheese is melted and sauce is smooth. Stir in pepper flakes if using.

1 (6-ounce) package wild rice , uncooked
1 (14 1/2-ounce) can french-style green bean , drained
1 (10 3/4-ounce) can cream of chicken soup
1/2 cup mayonnaise
4 boneless, skinless chicken breasts , cooked
1 (8-ounce) can water chestnut , drained and sliced
1 ounce , slivered almonds
2 cups shredded mild Cheddar cheese

Steps:

  • Cook rice 5 minutes less than directed on package mix with remaining ingredients, except cheese. Pour into a greased 13" x 9" baking dish. Top with cheese. 4 cups seasoned bread croutons
1 cup melted butter
1 can (10-3/4 oz) cream of celery soup
1 can (10-3/4 oz) cream of chicken soup
1 cup milk
4 cups cut-up chicken or turkey
4 tablespoons grated onion
1 bag (16 oz.) frozen mixed veggies

Steps:

  • Mix croutons with melted butter. Place half in bottom of greased 9x13 cake pan.
  • Combine remaining ingredients (except croutons) and place in cake pan. Spread remaining croutons on top.
  • Bake at 350°F uncovered until casserole is brown & bubbly about 45-60 minutes.
