Here's an easy one-dish meal that will please mostly everyone. Crunchy and inexpensive ground beef casserole based on Chinese beef and broccoli.

1 1/2 lbs very lean ground beef
1 small onion (chopped)
8 oz small broccoli florets or chopped broccoli
1 cup instant rice
2 cloves garlic (minced)
1 1/2 cups water
10.75 oz cream of celery soup
10.75 oz golden mushroom soup
2 tbsp soy sauce
1 1/2 cups chow mein noodles
chopped green onions for garnish

Steps:

  • Preheat oven to 375 degrees F. Lightly spray a 3.5 quart baking dish (or 13x9 dish) with non-stick spray.
  • Brown onion, garlic and ground beef over medium-high heat in a large, heavy skillet.
  • Mix remaining ingredients except chow mein noodles and green onion in a medium bowl. Stir in ground beef mixture and turn into prepared baking pan.
  • Bake for 20-30 minutes or until casserole is bubbly. Top with chow mein noodles and bake for an additional 10 minutes.
  • Garnish liberally with green onion, if desired.
  • Serves 6

2 cups uncooked spiral pasta
1 pound ground beef
3/4 cup chopped green pepper
1 garlic clove, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3/4 cup shredded cheddar cheese
3/4 teaspoon seasoned salt
1 can (2.8 ounces) french-fried onions

Steps:

  • Cook pasta according to package directions. Meanwhile, in a Dutch oven, cook the beef, green pepper and garlic over medium heat until meat is no longer pink and green pepper is tender; drain. , Drain pasta; add to the beef mixture with the tomatoes, soup, cheese and salt. , Transfer to a greased 2-qt. baking dish. Cover and bake at 350° for 30-40 minutes. Uncover; sprinkle with onions and bake 5 minutes longer.

This is a long time family favorite that my husband, a very picky eater, learned to love and asked to make often. The original recipe asked for a lot more of the seasoned salt (3/4 tablespoons), but I have learned less is better. It is fast, easy and delicious.

2 c small shell pasta
1 lb ground beef
3/4 c shredded cheddar cheese
1 tsp seasoned salt
1 can(s) cream of chicken soup
1 large can diced tomatoes
3/4 c diced green pepper
1 can(s) french fried onions

Steps:

  • 1. Brown the ground beef. Prepare pasta as package directions specify, omitting salt.
  • 2. In large bowl, add cooked pasta, browned ground beef, cheese, soup, green pepper, tomatoes and seasoned salt. Mix together.
  • 3. Place mixture in a casserole dish and bake at 350 degrees for 30 minutes, covered.
  • 4. Uncover and sprinkle French fried onions over the top. Bake for an additional 5 minutes.

1 (10 1/2 ounce) can cream of mushroom soup
3/4 cup shredded cheddar cheese
3/4 teaspoon seasoning salt
1 (14 ounce) can diced tomatoes
3/4 cup chopped green pepper (optional)
1 (2 7/8 ounce) can French-fried onions

Steps:

  • Preheat oven to 350 degrees and grease a 2-quart casserole dish.
  • Cook the macaroni as directed on the package; rinse and draine.
  • Brown the beef in a large skillet over med-high heat until no longer pink; drain the fat.
  • Combine all the ingredients except the French-fried onions in the casserole dish.
  • Cover and bake for 30 minutes, then uncover, top with the French-fried onions, and bake for 5 minutes longer.
