1/2 cup firmly packed light brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon salt

1/2 cup pecan halves
2 1/2 pounds Golden Delicious apples (6 or 7 medium apples), peeled, cored, and thinly sliced
1 tablespoon fresh lemon juice
1/2 cup granulated sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
3 tablespoons applejack
3 tablespoons unsalted butter, cut into 1/4-inch cubes
1 1/2 cups fresh or frozen raspberries (not in syrup)

Steps:

  • 1. To make the pecan topping, place the flour, brown sugar, cinnamon, and salt in a food processor and pulse until combined. Add the butter pieces and pulse a few times, just until the mixture resembles coarse meal. Add the pecans and pulse just until they are coarsely chopped.
  • 2. Preheat the oven to 350 degrees F. Butter the bottom and sides of a 9-by-13-inch glass baking dish.
  • 3. To make the fruit filling, in a large bowl, toss the apple slices with the lemon juice. Add the granulated sugar, flour, and cinnamon and stir to combine. Add the apple brandy and butter cubes and toss until combined. Gently toss in the raspberries. Evenly spread the apple mixture in the prepared pan. Sprinkle the pecan topping evenly over the filling.
  • 4. Bake the crisp for 40 minutes, or until the fruit is bubbling and the top is browned. Serve warm.

1 cup/120 grams plus 1 tablespoon whole-wheat flour
1 1/4 cups/160 grams all-purpose flour
3/4 cup/150 grams granulated sugar
2 1/2 teaspoons baking powder
1 teaspoon kosher salt
2/3 cup/160 milliliters whole milk, at room temperature
1/2 cup/120 milliliters unsweetened applesauce
1/4 cup/60 milliliters honey
2 eggs, beaten, at room temperature
1 tablespoon lemon juice
2 teaspoons vanilla extract
1/3 cup/65 grams turbinado sugar

Steps:

  • Heat the oven to 400 degrees. Using 1 tablespoon softened butter, generously butter the cups and the top of a standard 12-cup muffin tin. Set aside.
  • Cut the tips off the zucchini and grate the zucchini into shreds on a box grater. Pile the zucchini onto a clean dish towel and squeeze tightly over the sink to remove any excess water. Set aside.
  • In a large mixing bowl, sift 1 cup whole-wheat flour with the all-purpose flour, granulated sugar, baking powder and salt, then whisk to combine. Set aside.

Using your fingers, work in the remaining 1 tablespoon softened butter until everything is evenly moist. Sprinkle the mixture over the tops of the muffins, then carefully brush away any crumbs that spill onto the top of the muffin tin. Bake the muffins, rotating halfway through, until the tops form firm domes, the sugar topping caramelizes and the muffins are cooked through, 24 to 26 minutes. (The tops should spring back when lightly pressed.) Remove from the oven and allow to cool in the tin for 15 minutes before using a small offset spatula to transfer them to a wire rack to cool for at least another 10 minutes. As stated on the box, if you are going to put this on chocolate ice cream,try using orange or mint extract rather than vanilla. Also, when using chocolate ice cream, you may want to omit the cinnamon. I tried it on the chocolate ice cream, and left the cinnamon in, and I thought it tasted great. Guess it's a personal thing.

  • Drizzle most of buttermilk /cream over flour mixture, pulse to combine. If mixture seems dry, add a little more. Dough should be just moist. Gather the dough and spread out onto lightly floured parchment or waxed paper.
  • Patting into a Disc a little less than 1/2-inch thick chill for 1/2 hour.
  • For Fruit: Slice peaches into wedges, toss with lemon juice. In a small bowl, combine cornstarch, spices, pinch of salt and lemon zest. Toss with the peaches and pour unto lightly greased 8-inch baking dish.
  • To assemble: On a lightly floured surface, using a fluted cutter or any shaped cutter, cut out biscuits.
  • Gently re-roll scraps and arrange over fruit, slightly overlapping.

  • Combine all ingredients,except blueberries. Stir until just moistened.DO NOT OVER MIX OR MUFFINS WILL BE TOUGH.Batter should be lumpy. Fold in blueberries. PUT MUFFIN LINERS IN MUFFIN CUPS Fill up 2/3 full.

4 salmon fillets
2 tablespoons Dijon mustard
2 tablespoons butter
2 tablespoons honey
1/4 cup breadcrumbs
1/4 cup pecans, chopped semi fine
2 tablespoons parsley
salt
pepper
lemon slice

Steps:

  • Place salmon fillets, in a single layer, in a greased baking pan. Sprinkle each fillet with salt and pepper.
  • In cup combine dijon, butter and honey. Brush mixture on top of each salmon fillet.
  • In a bowl, combine breadcrumbs, pecans and parsley. Mix well. Spoon mixture evenly on top of each fillet.
  • Bake in preheated 450 degree oven, for 10minutes.
  • Garnish with lemon slices.

A healthified recipe from eatbetteramerica. Sounds wonderful. They recommend serving it with frozen yogurt for a dreamy dessert, but I always like my crunch "as is". Feel free to make this vegan by using vegan margarine and you can also sub out Splenda for the granulated sugar!!!

5 cups sliced peeled pears (5 to 6 pears)
2 cups fresh cranberries (may use frozen)
1 cup granulated sugar
3 tablespoons all-purpose flour
4 crunchy granola bars, crushed
1/2 cup all-purpose flour
1/4 cup packed brown sugar
3 tablespoons margarine, melted

Steps:

  • Heat oven to 350°F Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • In large bowl, mix pears, cranberries, granulated sugar and 3 tablespoons flour. Spoon evenly into baking dish.
  • In medium bowl, mix crushed granola bars, 1/2 cup flour, the brown sugar and butter until crumbly. Sprinkle over pear mixture.
  • Bake 55 to 65 minutes or until top is golden brown and fruit is tender (mixture will be bubbly). Cool slightly.
  • Serve warm or cool with whipped cream or ice cream.

140g blanched hazelnut
50g pumpkin seed
50g sunflower seed
50g cashew
25g pine nut
4 medjool dates , sliced
75ml maple syrup
25g soft brown sugar
1 tbsp olive oil

Steps:

  • Heat oven to 180C/160C fan/gas 4. Roughly blitz hazelnuts, pumpkin seeds, sunflower seeds, cashew nuts, pine nuts and dates in a food processor (or bash with a rolling pin in a sandwich bag), and transfer to a bowl.
  • Bring maple syrup, sugar and olive oil to boil in a small saucepan. Pour over the granola and stir well. Spread onto a large baking sheet and bake for 35-40 mins, turning regularly, until golden brown. Leave to cool in a large bowl before serving sprinkled over your oats. Keeps for 1 week.
