28 ounces can refried beans
1 cup fresh salsa (or your favorite jarred red salsa)
1 cup shredded Mexican cheese (divided)
1 teaspoon ground cumin
1/4 cup sour cream (optional)
tortilla chips for dipping

Steps:

  • In a medium saucepan, stir together beans, salsa, 3/4 c. cheese, and cumin. Bring to a simmer over medium heat, stirring frequently.
  • Pour dip into a serving bowl, and immediately spread remaining 1/4 c. cheese over the top so it will melt. Top with a dollop of sour cream and salsa if desired.
  • Serve with tortilla chips for dipping.

This is a recipe I got from my mom who, I believe, got it from an aunt. Either way, it is really easy to throw together and disappears FAST! I made it this weekend and people were licking the bowl! This is a doubled recipe. I always make it this way because people gobble it up. Feel free to halve it if you are only making it for a few people, but, I can't guarantee there will be any left over!

2 (15 ounce) cans no-bean chili
2 (16 ounce) cans refried beans
2 (8 ounce) blocks cream cheese, cubed
1 (16 ounce) bag shredded cheddar cheese or 1 (16 ounce) bag Mexican blend cheese

Steps:

  • Preheat oven to 350.
  • Mix chili and refried beans together in casserole dish. Does not need to be perfectly blended.
  • Arrange cubes of cream cheese on top of mixture.
  • Place in oven for 20-25 minutes.
  • Swirl cream cheese into mixture with a knife.
  • Top with desired amount of shredded cheese.
  • Place back in oven for another 5-10 minutes, or until cheese is melted.
  • Serve with tortilla chips.

8 oz phillidelphia cream cheese
1 can(s) hormel chili with beans
1 can(s) hormel chili w/o beans

Steps:

  • 1. Cut cream cheese in blocks. Pour chili's in pot and turn stove on medium low heat. Add Cream cheese, let melt mixing occasionally.
