I love chicken and I'm always trying to find new ways to cook it. This is a very easy and delicious variation of crockpot chicken. I like to serve this with stir-fried rice or rice pilaf. It's great comfort food.

6 chicken breast halves or 3 leg & thigh quarters
1 can(s) (20 oz) pineapple chunks or tidbits in juice
3 Tbsp dijon mustard
3 Tbsp soy sauce
1 1/2 Tbsp minced garlic
black pepper, to taste
paprika, to taste

Steps:

  • 1. Place the chicken pieces in the bottom of the crockpot.
  • 2. Sprinkle black pepper and paprika on the chicken.
  • 3. In a small bowl, combine the drained pineapple, mustard and soy sauce.
  • 4. Pour this mixture over the chicken.
  • 5. Spread the garlic on top of the chicken.
  • 6. Cover and cook on LOW for 7-9 hours or HIGH for 3-4 hours.

4 chicken breasts, frozen
1/2 cup soy sauce
1/2 cup teriyaki sauce
1 can pineapple chunks, drain half the juice out
Crushed red pepper flakes

Steps:

  • Spray the crock pot with nonstick cooking spray and add chicken breasts. Pour soy sauce, teriyaki sauce, and pineapple chunks (with half of the juice) over the chicken. Sprinkle as many red pepper flakes on top as desired. Cook on high for 4-6 hours. Shred chicken with two forks in the crock pot and serve over rice.
