2 large carrots, peeled and sliced about 1/2-inch thick
2 large red or green bell peppers, cut into 1/2-inch chunks
3 cloves garlic, finely minced
4 boneless skinless chicken breasts
2 teaspoons ground ginger
1 teaspoon salt
1/2 teaspoon pepper
8-ounces orange juice concentrate
2 cups Mandarin orange segments or fresh orange segments
2 green onions, chopped
Rice, cooked

Steps:

  • Put carrots, peppers, garlic, then the chicken, ginger, salt, pepper & frozen orange juice in crockpot. Cover and cook on LOW 4 to 6 hours. Serve chicken on hot cooked rice on platter. Top with orange segments and green onions. Serve chicken liquid in gravy boat, if desired.

2 lbs boneless chicken breasts, no skin
8 ounces diet orange soda (the tangerine soda is great too)
1 small onion, cut in fourths
2 garlic cloves, minced
1 tablespoon cocoa powder
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 (1 g) Splenda quick pack
1 tablespoon xanthan gum (thickening, or other thickener)

Steps:

  • Place chicken breasts in a 3 quart or larger crock pot and top with onion and garlic.
  • Mix cocoa powedr, chile powder, cumin, cinnamon, salt and splenda together in a separate bowl and sprinkle over chicken/onion/garlic. Pour in orange soda. Cover and cook at LOW setting until chicken is very tender when pierced, 6 to 7 hours (although I have cooked it as long as 9 hours).
  • Blend in xanthan gum or other thickener with a bit of water and stir into crockpot.
  • Increase slow cooker heat setting to HIGH. Cover and cook, stirring 2 or 3 times, until sauce is thickened (about 15 more minutes). Season to taste with salt.

6 frozen chicken breasts, boneless and skinless
1/2 c orange juice
1/2 c chicken broth
1/4 c honey
1 Tbsp dry mustard
1 Tbsp teriyaki sauce
1 c broccoli florets
1 c cauliflower florets
1 c sliced carrots

Steps:

  • 1. Place frozen breasts in crockpot.
  • 2. Mix juice, broth, honey, dry mustard and teryiaki sauce.
  • 3. Pour over chicken in crock.
  • 4. Cook on low for 4 hours.
  • 5. Add vegetables about one hour before serving.
  • 6. Place on TOP of chicken and do not stir.
  • 7. Cook the additional hour and serve over rice.

2 teaspoons ground ginger
1 teaspoon salt
1/2 teaspoon pepper
8 ounces orange juice concentrate
16 ounces mandarin orange segments, undrained (2 cans)
2 green onions, chopped (whites and greens)
2 cups hot cooked rice

Steps:

  • Put carrots, bell peppers, garlic, then the chicken, ginger, salt, pepper and frozen orange juice in crock pot. Cover and cook on LOW 4 to 6 hours. Serve chicken on hot cooked rice on platter. Top with orange segments and green onions. Serve chicken liquid in gravy boat, if desired. Makes approximately 4 servings.
  • Notes: I like to use about 3 teaspoons fresh ginger, finely minced, but if you don't have fresh, use the ground. If you don't like ginger, leave it out. Thicken up the sauce with a cornstarch mixture (2 Tbsp water + 1 Tbsp cornstarch); mix until cornstarch is completely dissolved. Mix into sauce and let sit for a minute). I like to make some stir fry Chinese veggies to go with this. I use baby bok choy, baby corn, water chestnuts, bamboo shoots and broccoli.

3/4 cup Smuckers Sweet Orange Marmalade
3/4 cup of Sweet Baby Ray’s Original BBQ Sauce
2 tbsp. Soy Sauce

Steps:

  • Cook chicken in crockpot on HIGH for 3 hours {covered} After 3 hours, drain juices from crockpot At this point… you can either leave the chicken breasts whole, or remove, cut into cubes, and transfer back to crockpot. Mix together bbq sauce, orange marmalade, and soy sauce. Pour mixture over chicken, and cook on high for 30 more minutes {covered}

The base recipe for this I used from six sisters' website... by itself it was a little too sweet and way to orangy. After some modifications, I came up with this version and it tastes fantastic!

4-5 plump, big, skinless and boneless chicken breasts
1 can(s) frozen orange juice concentrate
1 Tbsp balsamic vinegar
4 Tbsp brown sugar
3 Tbsp ketchup
1 1/2 c honey, divided
1 tsp ground cloves
1 tsp ground ginger
2 tsp salt, divided
1 tsp pepper
1 tsp paprika
olive oil, for browning chicken
flour, for coating chicken
chopped scallions or green onions

Steps:

  • 1. Thaw OJ and chicken. Mix OJ with brown sugar, ketchup, vinegar, 1 tsp salt, cloves and ginger. Mix well. Set aside.
  • 2. Wash chicken and pat dry. Cut into small cubes or strips. Toss into a mixing bowl along with pepper, paprika and rest of salt. Mix to coat.
  • 3. Toss in enough flour to coat chicken. Mix.
  • 4. Heat up enough olive oil in pan to brown chicken (don't crowd the chicken in the pan. Maybe you will have to do three batches. Use about 1-2 tablespoons olive oil per batch, making sure you wipe the pan clean after each time so flour bits don't burn).
  • 5. Brown chicken (no need to cook it all the way through). After chicken is browned, set aside on plate lined with a paper towel.
  • 6. After chicken is all browned, place it in a crockpot. Pour OJ mixture over the top. Give it a few mixes with a large spoon or spatula, cover, and set to medium / medium high for 3 hours.
  • 7. After three hours, add half cup honey. Mix, cover and let cook for about another 2 hours, or until chicken is cooked all the way through.
  • 8. When it is cooked all the way through, turn off crockpot, mix in the rest of the honey, adjust lid on a slant so about 1/4 of the pot is uncovered (sauce will thicken upon standing).
  • 9. While it is thickening / resting, prepare whatever you want to serve it over... it is really good served with some wild or brown rice. Add chopped scallions or green onions on top. Enjoy!

This is a recipe my hubby found and asked me to try...It was a little on the sweet side otherwise it was good!

3-4 boneless, skinless chicken breasts, cut- up
1/3 c flour
1/2 Tbsp salt
3 Tbsp ketchup
4 Tbsp brown sugar
olive oil (for cooking chicken)
1 tsp balsamic vinegar
6 oz frozen orange juice concentrate thawed or put in microwave for 45 seconds

Steps:

  • 1. In a bowl, mix the orange juice, brown sugar, vinegar, salt and ketchup.
  • 2. Pour the flour in a small bowl. Cover the chicken in flour and shake off excess. Pour small amount of olive oil in skillet and brown the chicken. The chicken doesn't need to be fully cooked.
  • 3. After chicken is done cooking pour in crock-pot. Then cover the chicken with the sauce mixture and give it a stir. Cook on low for 5-6 hours or high for 2-3 hours.
