2 teaspoons canola oil
1 large sweet onion, chopped
1 medium sweet red pepper, chopped
2 cans (28 ounces each) vegetarian baked beans
1 can (16 ounces) butter beans, rinsed and drained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (14-1/2 ounces) fire-roasted diced tomatoes, undrained
1/2 cup ketchup
1/3 cup packed brown sugar
1 tablespoon ground mustard
1 tablespoon cider vinegar
1 teaspoon salt
1 teaspoon Worcestershire sauce

Steps:

  • In a large skillet, heat oil over medium-high heat. Add onion and pepper; cook and stir until tender. Transfer to a 5-qt. slow cooker; stir in remaining ingredients. Cook, covered, on low 5-6 hours or until heated through.

These Slow Cooker Calico Beans are a fast, frugal and delicious dinner that the entire family will love! They can be cooked in the Instant Pot or the oven as well!

4 slices thick cut bacon (diced)
1 pound lean ground beef
1/2 cup chopped onion
1 can (28 ounces molasses pork and beans)
1 can (16 ounces kidney beans, rinsed and drained)
1 can (16 ounces lima beans, rinsed and drained)
1/2 cup packed brown sugar
1/2 cup ketchup
1 tablespoon cider vinegar
1 teaspoon prepared mustard
1 teaspoon salt

Steps:

  • In a large skillet or in the bottom of your Instant Pot using the "saute" button, cook the bacon for 2-3 minutes. Add in the beef and onion and cook until the meat is no longer pink, then drain.
  • Combine the beef mixture, bacon, beans, brown sugar, ketchup, vinegar, mustard and salt in a slow cooker or in the Instant Pot.
  • For the slow cooker, you can cook on high for 3-4 hours, or low for 6-8 hours.
  • For the Instant Pot, you can also cook on low all day OR use the chili/stew button and cook on high pressure for 15 minutes.
  • If you want to cook in the oven you can also spoon the mixture into a greased 2-qt. baking dish. Bake, uncovered, at 325° for 45-60 minutes.
  • Serve and enjoy!

1 pound ground beef, browned and drained
1 pound bacon, cooked and crumbled
1 large onion, chopped
1/2 cup ketchup
1/3 cup firmly packed brown sugar
1 tablespoon apple cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon yellow mustard
1 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1 (15-ounce) can tomato sauce
6 cups cooked mixed beans (if you like to use dried); or 2 (15-ounce) cans white beans, drained, plus 1 (15-ounce) can kidney beans, drained

Steps:

  • Combine all ingredients in a large slow cooker, and stir gently until combined. Cook on low for at least 4 hours and up to 8 hours.

This is my take on a popular favorite. This makes a big batch and is a little "zippier" than the original version. Can easily be a vegetarian dish...just leave out the bacon!

2 can(s) chili hot beans, undrained
2 can(s) black beans, drained
1 can(s) cannelini beans-or other white bean, drained
1 can(s) butter beans, drained
1/4 c catsup
1/4 c tomato sauce
1/4 c honey or brown sugar
1 Tbsp yellow mustard
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp chili powder
1/2 tsp salt
1/8 tsp ground black pepper
4 slice bacon(optional)

Steps:

  • 1. Empty undrained chili hot beans and drained black, canellini and butter beans into crockpot.
  • 2. Add remaining ingredients(except bacon) and stir to combine.
  • 3. Lay bacon(if using)across top of beans. Cook on low for 3-5hrs. Remove bacon and discard, or chop into small pieces and stir back into beans.

This recipe came from a friends sister. Great for cook-outs, pot lucks.... Very forgiving recipe can easily adjust amounts to suit your tastes. I usually assemble ahead of time and refrigerate overnight before putting in the crock-pot. I have also made ahead of time and put in the freezer for DH to take as part of a "hunting" camp meal.

diced onion
1/2 lb hamburger

Steps:

  • Brown hamburger. Rinse.
  • Cook and cut up bacon.
  • Put ingredients in crock-pot.
  • Mix together.
  • Cook on low 4 hours.
