1 lb ground turkey (you can sub ground chicken)
1 small onion, chopped
1 (4 1/2 ounce) can chopped chilies, drained
1 (14 1/2 ounce) can black beans, undrained
1 (14 1/2 ounce) can chickpeas, undrained
1 (14 1/2 ounce) can kidney beans, undrained
1 (28 ounce) can diced tomatoes, with juice
1 (16 ounce) can tomato sauce
1 -2 tablespoon chili powder, to taste

Steps:

  • Cook turkey and onion in a medium fry pan over medium high heat, scramble fry until no longer pink.
  • Drain off fat and transfer cooked meat and onion to crock pot.
  • Add all remaining ingredients and mix well.
  • Cook on high 6 to 8 hours.

2 tablespoons olive oil
1 medium yellow onion, peeled and chopped
1 medium red onion, peeled and chopped
2 garlic cloves, peeled and minced
2 lbs ground turkey (not ground turkey breast, too dry!)
1 (14 1/2 ounce) can diced tomatoes, undrained
2 (15 1/4 ounce) cans kidney beans, undrained
1 (29 ounce) can tomato sauce
1/2 teaspoon liquid smoke
1/4 teaspoon dried thyme
1/3 cup mild chili powder
1 tablespoon ground cumin
1 large dried New Mexico chile, crumbled
1 teaspoon hot red chili pepper flakes

Steps:

  • Heat 1 tbs. oil in skillet. Saute onions and garlic until soft, and slightly browned. Put into crock pot.
  • Heat remaining oil and brown ground turkey (I use ground dark meat, not as dry as breast meat when cooked). Put meat into crock pot.
  • Add remaining ingredients to crock pot and stir together.
  • Cover and cook on high for 4-6 hours.
  • Serve in large bowls, with cornbread on side.
  • Optional toppings at table: Diced red or sweet yellow onion. Shredded cheddar or pepper jack cheese. Sour cream.

1/2 lb bass farm mild bulk pork sausage
1/2 lb ground turkey (or substitute lean ground beef)
salt & pepper
1 dash seasoning salt
1 -3 tablespoon chili powder, to taste
basil
oregano
garlic powder
3 (15 ounce) cans diced tomatoes with juice
1 (12 ounce) can tomato juice or 1 (12 ounce) can V8 vegetable juice (about 1 1/2 cups)
1/2 large green pepper, diced
1 medium onion, diced
1 teaspoon sugar or 1 -2 dash ketchup
1 (16 ounce) can Bush's light red kidney beans, rinsed & drained
1 (16 ounce) can Bush's dark red kidney beans, rinsed & drained

Steps:

  • In a 5-quart crockpot combine canned tomatoes and beans, cover and turn on high while you prepare the rest of the ingredients.
  • Brown the turkey and sausage together in the same skillet, seasoning with seasoned salt,regular salt, and pepper, drain and add to crockpot.
  • (Note: If I have a 1-lb package of each, I usually cook all of it and freeze half for the next time I make chili.) Saute green pepper and onion in a little olive oil until tender and add to crockpot.
  • Season to taste with chili powder, basil, oregano and garlic powder.
  • NOTE: If you use pre-seasoned canned tomatoes, you may not need to add additional seasonings, or not as much.
  • I usually add a small spoonful of sugar or a squirt of ketchup to take the acid edge off the tomatoes and sweeten it up just a bit.
  • You'd be surprised at the difference this makes!
  • Once everything is in the pot, add as much or as little of the tomato or V8 juice as you like to get the desired consistency.
  • Cover and cook on high 4-5 hours, longer if you use low.
  • Serve with Corn Bread.
  • Variations: You can substitute chili hot beans or black beans for one of the cans of kidney beans, or use ground beef in place of the turkey.
  • You can add a can of tomato paste to thicken it (just add a bit more sugar or ketchup).

The ground turkey helps make it a little more healthy too. This recipe is very forgiving, so you may adjust the heating time to high (for a shorter period) or a combination of high and low.

15 oz can pumpkin puree (not pumpkin pie filling)

Steps:

  • 1. Heat a large heavy saute pan over high heat and lightly spray with oil. Add meat and cook, breaking it up until white, about 5 minutes. Add to crock pot. 2. 4 -5 round white potatoes (chopped)
5 celery ribs (chopped)
1 jalapeno (chopped)

  • Heat a large skillet over medium-high heat, add the turkey, season with salt and cook, breaking up with a spoon until turkey browns and is no longer pink; place into the slow cooker. Add the oil to the skillet and sauté the onion, garlic and bell pepper over medium heat for about 4 to 5 minutes. Spoon over turkey into the slow cooker and stir in corn and tomatoes, tomato sauce, cumin, chili powder, paprika and salt, mix until well blended. Pour chicken broth into the crock pot and add the bay leaf. (To save time, brown the turkey, then put everything in the crockpot.)

An economical, hearty and delicious chili with lots of flavor and a well balanced heat level. Ground turkey makes this chili healthier but you would never know by tasting it. Even people who do not like ground turkey have enjoyed this dish. A common complaint of crockery cooking is that the flavor is diminished with the long cooking time which makes chili a fantastic choice for the crock pot. The slow cooking gives these ample herbs and spices time to blend together and allows the heat level to mellow. Canned chipotle chilies (smoked jalapenos in adobo- a spicy flavorful sauce) add a wonderful spark of smokiness that is difficult to duplicate and sets this chili apart from others. Controlling the heat level is easy by choosing mild, medium or hot Rotel. Beer is an important flavor ingredient here and regular beer gives a much better flavor than light beer. I use Shiner Bock which is a darker lager. You control whether you want to leave your chili thick and chunky as it is here or make it thinner by adding more broth. You can also add a little more beer with the broth if you like. That is IF you did not drink it already! For a great morning time saver I prepare this the night before and store it in the refrigerator. In the morning I just take it out, plug it in and turn it on. 1 lb ground turkey
4 slices bacon (turkey bacon works well too)
1 medium onion, chopped (1 cup)
2 tablespoons chili powder (I use ancho chili powder but regular works too)
1 1/2 tablespoons paprika
1 tablespoon ground cumin
1 tablespoon italian seasoning or 1 tablespoon oregano
2 chipotle chiles in adobo
2 cups water
chicken bouillon, to flavor the water (equal amount of broth can be used)
1 cup lager beer, use a lager style you would drink
2 garlic cloves, minced (1/2 Tbsp) or 1 teaspoon garlic powder
1 (10 ounce) can Rotel tomatoes & chilies, undrained (use mild, medium or hot)
1 (15 ounce) can crushed tomatoes
1 (15 ounce) can black beans
cheddar cheese, grated (optional)
sour cream (optional)
tortilla chips (optional)
corn chips (optional)

Steps:

  • Preheat a large skillet over medium high heat and spray liberally with non-stick cooking spray. Chop the bacon into 1/2 inch pieces and add to pan. Add ground turkey and onion and saute stirring often until bacon is cooked and no pink remains in the ground turkey. Drain well and return to the pan. Turn the heat OFF.
  • Add the chili powder, paprika, cumin, oregano or italian seasoning and stir into the meat until thoroughly combined. This allows the spices to penetrate and coat all the meat.
  • Using a crock pot at least 4 quart size or larger, spray the inside of the crock well with non-stick cooking spray and transfer all ingredients from the skillet into the crock pot.
  • Remove chipotles from the can, use gloves if you like as the oils from the pepper will remain on your fingers. No touching your eyes or nose! :) Place the peppers on a cutting board and mince them finely. Add them, along with a little of the adobo, if you like, to the empty skillet over no heat.
  • Measure broth or amount of bouillon indicated on the package for the amount of water listed. Crumble bouillon into the water and stir. Add the bouillon or broth, beer and garlic or garlic powder to the skillet with the chipotle peppers and stir well. This will disperse the chipotle pepper and make sure it gets evenly distributed in the chili. Make sure to scrape up any browned bits from the bottom and sides of the pan. Add all this to the crock pot. I like to use a rubber scraper/spatula to scrape out every last bit of goodness. You are just blending these ingredients together and cleaning out the skillet here and so you need no heat.
  • Add both cans of undrained tomatoes and beans (drained or undrained whatever your preference) to the crock pot. Stir to combine all the ingredients.
  • Set crock pot to low and allow to cook for at least 6-8 hours on high or 10- 12 hours on low.
  • Ladle finished chili into bowls and garnish as you choose. Sour cream and grated cheese make wonderful additions and the dairy cools the heat of the chili. A dash of your favorite hot sauce is a great way to kick up the heat some more. This chili is also great with cooked rice or macaroni added into it either initially or as a way to create a new dish with any leftovers. Hope you enjoy!

32oz of canned dark red kidney beans (include water)
1 or 2 cans 12oz tomato paste
16oz can tomato sauce

1 green bell pepper, deseeded and diced small
2-3 jalepeno peppers, deseeded and diced small
1 pasilla pepper (looks like an elongated dark green bell pepper) see additional instructions below.
1 yellow onion, diced small
Spices:
1/2 to 1 Tbsp Chili Powder
1 Tbsp each: Oregano, Ground Sage, Sugar
1 tsp each: Cayenne, Paprika

  • Chili Prep: 1) Preheat oven to 400 degrees for pasilla roasting 2) Open all cans and dump into crock pot set to High 3) Brown turkey on med. heat skillet - season to taste - until juices are cooked off or drain if desired. 4) Roast the Pasilla Pepper while browning turkey see directions below) 5) Stir in spices and diced veggies 6) Cook on High 5-6 hours, stir occasionally. 7) Lower heat to Low - cook until beans are tender then lower heat to "warm" Pasilla Roasting: 1) Preheat oven to 400 2) Place pepper on cookie sheet at highest level as close to the heating element as possible 3) Turn every 5 minutes until moderately charred and blistered (approx. 15-25 min) 4) Remove from oven and place in paper or plastic bag and allow pepper to sweat (loosens skin) 5-10 min. 5) Remove the translucent skin under cool running water, deseed and dice, add to chili.

1 pound ground turkey
1 medium onion (diced)
1 15 ounce can reduced sodium black beans
1 15 ounce can no salt added corn
2 14.5 ounce no salt added can diced tomatoes
1 16 ounce can reduced sodium garbanzo beans
4-6 slices (diced) canned jalapenos (or more if you like it spicy)
2 teaspoons cumin
1 tablespoon chili powder
salt and pepper to taste

Steps:

  • Brown the turkey and onion in a pan. Add the turkey and onion as well as the rest of the ingredients to the Crock-Pot. Set on low heat for 6 hours, stirring every hour or so. Bake a side of corn muffins and serve with a bit of Tabasco sauce, reduced fat sour cream and/or cheddar cheese!

If you like a chili full of robust flavor... You have got to try this recipe! Everyone who has tried it says it is the best chili they have ever had and it's made with turkey! You can adjust the spice from Mild to HOT-HOT! If you don't want to use dried beans, please feel free to used canned.

4 lbs ground turkey
1 lb bacon (cooked and chunked)
4 1/2 cups dried beans (black beans, pinto beans, or great northern beans all work very well)
2 (16 ounce) cans tomatoes (either diced or crushed are fine)
12 ounces tomato paste
2 onions, finely diced (preferably vidalia)
2 green bell peppers, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
2 (10 ounce) cans condensed beef broth (or chicken broth)
6 ounces beer (1/2 can)
2 fresh tomatoes
3 garlic cloves
1 tablespoon ground cumin
1 tablespoon oregano
1 1/2 tablespoons paprika
2 -4 tablespoons chili powder (to taste)
2 -4 tablespoons cayenne pepper (to taste)
2 jalapeno peppers (You can omit them completely or substitute hotter peppers if you want more fire)
1 (8 ounce) package shredded cheddar cheese

Steps:

  • Mix and soak beans overnight per package directions.
  • Process the fresh tomatoes, garlic, cumin, oregano, paprika, chili powder, cayenne pepper and jalapeno (hot) peppers in the food processor; place in the refrigerator overnight.
  • Note: The 2 tablespoons each of hot spices makes a very mild chili- while the 4 tablespoons w/added hot peppers turns up the heat-- for those who like it HOT!
  • Take out four or five cups of the soaked beans and place in crock pot (cut it to 3 cups if you did the fast soak- they will still expand while cooking).
  • Freeze the rest for later use.
  • If you are using canned beans you'll lose some of the flavor-- but it's still good.
  • Fry the bacon until crispy and place in crock pot.
  • Brown the ground turkey in some of the bacon drippings and place in crock pot.
  • Add the crushed tomatoes, tomato paste, onions, bell peppers, broth, beer and tomato spice puree.
  • Stir to mix and let cook for 10-12 hours on low.
  • (You can also cook for 5-6 hours on high, but the beans will not soak up as much of the flavor).
  • Serve topped w/the shredded cheddar cheese.
  • This recipe is for a large crock pot. You can cut down on the ground turkey, beans and bell peppers a little if you have a smaller crock pot.

1 lb ground turkey
2 med onions, diced
2 green peppers, diced
2 cups sliced mush
3 cloves garlic, crushed
1 can (15 oz.) beans of choice, drained and rinsed
1 cup can or frozen corn, drained and rinsed
1/2 cup med. sized bulger wheat
1 can (28 oz.) diced tomatoes
1 cup chicken broth
2 Tbsp Worcestershire sauce
2 Tbsp chili powder
1 tsp dried basil
1 tsp cumin
1 tsp dried oregano
1 tsp sugar
2-3 jalapeno or Serrano peppers chopped
Salt and pepper to taste

Steps:

  • In a large skillet over med. high heat, warm oil, add meat and brown.
  • In a slow cooker, combine meat with all other ingredients, and stir well.
  • Cook on low heat for 7 hours. Serve with warm, toasted baguette slices.
