CROCK-POT BEEF ROAST

I've put together a few different recipes to come up with something our family likes. Hope you enjoy it too! *I usually cut my potatoes into eighths unless they are small potatoes. *Using the crockpot on a low setting makes the meat so much more tender. *I have a 6 quart crockpot, so I can fit a lot into it.

6 potatoes, peeled and cut into large chunks
5 carrots, peeled and cut into 2-inch slices
1 onion, quartered
2 -3 lbs boneless chuck roast
1/2 cup water or 1/2 cup beef broth
1 tablespoon chives, chopped
2 tablespoons parsley, chopped
1/8 teaspoon pepper
1 (1 ounce) package onion soup mix
2 tablespoons Worcestershire sauce
1 (10 3/4 ounce) can cream of mushroom soup

Steps:

  • Put potatoes, carrots and onion on bottom of crockpot.
  • Place the roast on top, fat side up.
  • Pour in water or beef broth.
  • Sprinkle chives, parsley, pepper and Onion Soup mix over the meat.
  • Pour Worcestershire sauce and mushroom soup over meat.
  • Cover and cook on low 8-10 hours.
  • **Note: If your roast is frozen, start it on low the night before with just the water or broth. Add the rest of the ingredients the next morning and cook until dinnertime! If done this way, you can easily remove the fat layer in the morning before adding the other ingredients.

Throw it in the crock pot on New Year's Eve before you go out, and dinner the next day will be ready; all you have to do is fix the mashed potatoes. Slow, low cooking makes a roast that is very tender. Delicious!! I used to manage a doctor's office, and our Blue Cross rep told me that her family made this every year for New Year's.

1 (1 1/4 ounce) package dry onion soup mix
2 cups water

  • Sprinkle the onion soup mix and brown sugar over the pork and sauerkraut.
  • Pour the water over everything.

2 tablespoons vegetable oil
3 potatoes, sliced
2 carrots, chopped
2 celery ribs, chopped
2 onions, sliced
2 tablespoons ketchup
2 tablespoons Worcestershire sauce
1 (10 ounce) cream of mushroom soup
3/4 cup water
1/2 teaspoon salt

Steps:

  • Cut vegetables and place in crock in the following order: carrots, celery, onion and potatoes. Sprinkle with salt.
  • Brown roast in vegetable oil and place on top of vegetables in crock pot. (More salt may be sprinkled on roast.).
  • In a small bowl mix cream of mushroom soup, ketchup, worcestershire sauce and water. Pour over roast.
  • Cover with crock pot lid and cook 1 hour on high and 4 hours on low. Serve over rice.
  • Enjoy!

red potatoes, halved

Steps:

  • Use the size roast and the amount of vegetables you need to feed your family.
  • I usually buy a big roast and add lots of the veggies.
  • Put roast in a crock-pot,sprinkle with onion soup mix.
  • Add coke to almost cover the roast.
  • Add carrots to liquid around roast and all other vegetables to top of meat.
  • Cook all day on low (8-10 hours),or on high 5-6 hours.
  • Liquid makes a great gravy.

I used to always cut our venison roasts up into cubes and make venison stew until my sister shared this recipe with me! We now have roast once a week. I don't think that you can overcook this. I make French Dips with the leftovers...if there are any! *October 2009--I've recently made a couple of changes to this recipe that I think have made it even better...I started using black coffee instead of water to make a darker, richer gravy. I also now use low sodium Montreal Steak seasoning.

Steps:

  • Place roast in crock pot.
  • In a large measuring cup, gradually mix hot water or coffee with cream of mushroom soup until smooth. Pour over venison roast.
  • Sprinkle with Lipton Onion Soup mix and steak seasoning.
  • Cook on high setting for 8 hours then lower the temperature to the low setting until ready to serve. I like to remove the roast and keep warm in a low oven while I thicken the gravy for mashed potatoes! YUM!

I have another tried and true French Dip recipe and also use another great one here on 'zaar, but when I went to make it the other day, I was lacking all of the ingredients to make either...so the following was born. Turns out everyone liked it better than either of my previous ones, so I figured I better post it for posterity!

4 lbs bottom round beef roast
1 (1 1/4 ounce) envelope onion soup mix
1 (19 ounce) can progresso French onion soup (not condensed soup)
1 (12 ounce) can beer
3 beef bouillon cubes
1/4-1/2 teaspoon fresh coarse ground black pepper
salt
10 kaiser rolls (or your favorite hard rolls)
provolone cheese (optional)

Steps:

  • Place roast in 4.5 - 6 quart slow cooker.
  • Sprinkle with onion soup mix and then pour onion soup and beer over it.
  • Drop bouillon cubes in different spots into the liquid and sprinkle pepper and salt to taste over all.
  • Cook on high for 4-5 hours. (I guess you could also cook on low for 8 hours or so, but I haven't tried it!).
  • Remove meat and slice or shred; return to slow cooker and cover.
  • Turn to low and let meat soak up the juices until ready to serve.
  • Our favorite way to serve: open rolls and place a slice of provolone on one side of each; place under broiler until cheese is almost melted. Spoon beef on top with slotted spoon and serve sandwich with a side cup of au jus.

5 lbs sirloin tip roast
1 (1 ounce) package Italian salad dressing mix
2 -3 small onions, chopped
1 (10 1/2 ounce) can cream of mushroom soup
2 tablespoons flour, diluted in
2 tablespoons water

Steps:

  • Put chopped onions on the bottom of the crock pot so the meat has something to rest on.
  • Put meat in the crock pot and rub the salad dressing powder all over it, turning to get all sides.
  • Open soup can and spread all over the roast with a butter knife.
  • Do NOT add any liquid to the crock pot!
  • Cook on high for two hours, then on low for another four, at least.
  • You don't want the roast to be falling apart, but you want it tender.
  • Remove the roast and put on a platter.
  • Cover with foil and let it rest in a warm place for about 20 minutes.
  • Meanwhile, add the diluted flour to the juices in the crock; turn the crock on high for 20 more minutes.
  • Stir frequently.
  • You can also make the gravy by adding the crock pot juices and flour mixture to a skillet over a med/high flame.

You can also add 1/2 cup sliced mushrooms to the onion and carrots if you like a mushroom gravy or some peas too. 3 lbs boneless bottom round roast
1 tablespoon Dijon mustard
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
1 cup dry red wine
2 cups beef broth
1 large onion, coarsely chopped
2 large carrots, coarsely chopped
kosher salt & freshly ground black pepper

Steps:

  • Place chopped onion and carrots in bottom of crock pot.
  • Season all sides of the roast liberally with the kosher salt and ground pepper.
  • Place roast on top of onions and carrots, fat side down.
  • Combine mustard, sugar, Worcestershire sauce, beef broth and red wine in a separate bowl and pour over roast
  • Set crock pot to low and cook for 3 hours.
  • After 3 hours, turn the roast onto one side and cook for 20 minutes.
  • After 20 minutes, turn the roast on the next side and cook 20 minutes, repeat until the roast has the fat side on the bottom again.
  • Cook for about 2 more hours usually 6 hours total.
  • The roast is done when it shreds easily with a fork.

5 tablespoons oil, divided (or use as much as needed)
0.5 (1 ounce) package dry onion soup mix
fresh ground black pepper

8 garlic cloves (optional or use as many as desired, I use lots!)
1/3 cup French dressing
1 tablespoon cornstarch
1 (16 ounce) can whole berry cranberry sauce

  • Using a strainer separate the dried onions from the dry powder; place the dry onions in a small bowl.
  • Heat about 3 tablespoons oil in a skillet over medium heat.
  • Rub the roast all over with 2 tablespoons oil, then season the pork loin with the onion soup powder, black pepper and garlic powder.
  • Brown the roast on all sides in hot oil then allow to cool slightly or enough for easy handling if stuffing with the garlic cloves (if your cloves are very large I suggest to slice in half).
  • Make small slits all over in the roast, then stuff with garlic cloves (this is only optional).
  • Place the roast in the slow cooker.
  • In a bowl whisk the French dressing with the cornstarch until smooth then add in the cranberry sauce and dried onions; mix until combined.
  • Pour the mixture over and around the pork.
  • Cover and cook on HIGH heat for 4 hours or on LOW for about 7-8 hours or until the pork reaches internal temperature of 160 degrees F.
