EASY ITALIAN ROAST BEEF FOR SANDWICHES (CROCK POT)
I came up with this after looking at everyone else's recipes and realizing I was missing at least one ingredient for every one I wanted to make. The result was the following and my family loved it.

Steps:
- Place roast in crock pot.
- Pour dressing on top and then sprinkle with onion soup mix.
- Place lid on crock pot and cook on low for about 10 hours.
- Remove meat from au jus and shred or slice.
- Place meat back in juices and sprinkle top with Italian seasoning; stir.
- Serve on toasted kaiser rolls.
CHICAGO STYLE ITALIAN BEEF SANDWICHES (CROCK POT VERSION)
Chicago style Italian beef sandwiches. A real favorite among Chicagoan locals. This is one of the best sandwiches that you can eat in Chicago...especially with the giardinara or sweet peppers.

- In a crock pot combine all of your ingredients (except for the rolls and giardinara) and let it cook on low for 8 hours until the meat is tender and falling apart.
- Remove the meat from the au jus and shred it with a fork until it is finely shred.
- Return the meat to the crock pot full of au jus to get warm for 20 minutes.
- After the meat is warmed, fill the buns with meat, ladle or dip the sandwiches with au jus.
- For Chicago authenticity, add hot or mild giardiniera to the sandwiches or the sweet green bell peppers.

CROCK POT PO' BOYS (OR ITALIAN BEEF) SANDWICHES
This dish smelled wonderful while cooking in the Crock Pot all day. It is a meal all by itself, and just a salad on the side is perfect.

- 1. At the beginning of the day, place roast in large Crock Pot with chunked onions, garlic, pepper and Italian seasoning and about 2 cups of water, and the juice from the pepperocini peppers. I've sliced the meat in thin slices prior to cooking, but I like the texture of the meat when pulled apart, and less work.
- 2. Cook on med-low most of the day until the roast starts falling apart and will easily pull apart with a fork. 8-9 hours until meat pulls apart with a fork.
- 3. Remove meat from Crock Pot, saving all the drippings.
- 4. In seperate bowl, mix the gravy packets with the water as directed; put meat back in crock pot with the drippings, the gravy mix, stir well and let simmer about 1/2 hour.
- 5. Tear apart meat with forks (shredding) and put it into the pot as you are tearing apart the meat. Discard all fatty parts.
- 6. Once meat is in the juices (should thicken up with the gravy packets) let cook about another hour.
- 7. Serve on harder long rolls...I prefer a French type, crusty on the outside and soft on the inside. The bread soaks up the gravy. It's especially good with some shredded mozzarella or provolone on the sandwich... serve the pepperocinis on the side or in the sandwich.
- 8. *A little more flavorful version is to put in the peppers (stems removed) during the cooking process.
CROCK POT TANGY ITALIAN BEEF SANDWICHES

- Spray the inside of a 4 quart crock pot with cooking spray.
- If beef is tied, remove strings and netting.
- Place the beef in the crock pot arrange onion and bell pepper slices on top.
- Sprinkle with brown sugar and pour on the dressing.
- Cover and cook on low heat for 10 to 12 hours.
- Remove beef from crock pot and using 2 forks shred the meat.
- Return shredded meat to crock pot and sprinkle with Italian seasoning, stir to mix well.
- Use a slotted spoon to remove meat from broth and serve on toasted buns with your choice of sides.
CROCK POT CHICAGO ITALIAN BEEF SANDWICHES
Steps:
- In a medium saucepan over medium heat. Combine the salt, pepper, oregano, basil, onion salt, water, parsley, garlic powder, water, bay leaf and salad dressing mix. Stir well and bring just to a boil. Place roast in a slow cooker and pour mixture over the roast. cover and cook on low setting for 10-12 hrs on low or high for 4-5 hours. The best thing to do is to have it cook in the slow cooker until it is cooked through, remove the bay leaf, then shred it and return it to the juice for about an hour. Optional - Last 45 minutes add bouillon cubes and green pepper. If you use broth instead of water don't add the bouillon cubes. Serve

- 1. Cut roast in half, place in crock pot. Sprinkle with italian seasoning, cayenne and black pepper. Add water. Cover and cook on high 4 hours. Or until meat is tender. Remove roast, (Keep crock pot covered on high.) shred meat with two folks and return to crock pot. In a small bowl, combine pepperconcinis,peppers,garlic,soup mix,and Worcestershire sauce. Pour over meat. Cook on high 1 hour longer, or until peppers are tender.
- 2. Spoon beef mixture over the bottom halves of bread, replace replace bread halves on tops. Cut each loaf into 6 sandwiches. This makes 12 delicious sandwiches! YUMMY!. Supply lots of napkins.. Great for a gathering, or maybe an at home picinic!

So, I get sick of pulled pork (sorry) and I was "voluntold" to be the first to make the Christmas lunches for the teaching staff. I had seen various Chicago Italian Beef recipes and thought I would give it a try. This was a HUGE success! I personally like this meat with sauted onions, provolone, pepperoncini, homemade horseradish...

- 1. In a medium saucepan, over medium heat; combine pepper, oregano, basil, onion salt, beef broth, parsley, garlic powder, bay leaf salad dressing mix, and beef bouillon cubes. Stir well and bring just to a boil.
- 2. Place roast in a slow cooker and pour mixture over the roast. Pour jar of pepperoncini and liquid over roast. Cover and cook on low setting for 10-12 hours on low or high for 4-5 hours. Once cooked through remove bay leaf, shred and return to the juice for about an hour.
- 3. Last hour, add sliced peppers. Assemble sandwiches.
CROCK POT ITALIAN BEEF SANDWICHES
Steps:
- Place chuck roast into the bottom of a 5.5 - 6 quart crock pot then sprinkle with salad dressing mix. Add pepperoncini peppers plus a splash of juice, Giardiniera, and beef broth then lift up chuck roast pieces to get broth underneath. Place a lid on top then cook on low for 9 hours, or until meat shreds easily with a fork. Shred then place meat back into crock pot and cook on low for 1 more hour. Split buns in half then scoop the shredded meat mixture on top and add provolone cheese slices. Top with additional pepperoncini peppers and Giardiniera, if desired, then serve.
