3 cups finely chopped cooked chicken
1/2 cup shredded carrots
1/4 cup finely chopped water chestnuts
2 teaspoons cornstarch
1 tablespoon water
1 tablespoon soy sauce
1/2 to 1 teaspoon ground ginger
1 package (16 ounce) wonton wrappers
2 tablespoons butter, melted
1 tablespoon canola oil
Plum or sweet-and-sour sauce

Steps:

  • In a large bowl, combine the chicken, carrots and water chestnuts. In a small bowl, combine the cornstarch, water, soy sauce and ginger until smooth. Add to chicken mixture; toss to coat. , Position a wonton wrapper with one point toward you. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Place 1 teaspoon of filling in the center of wrapper. Fold bottom corner over filling; fold sides toward center over filling. Roll toward the remaining point. Moisten top corner with water; press to seal. Repeat with remaining wrappers and filling., Place on greased baking sheets. Combine butter and oil; brush over wontons. Bake at 375° for 10-12 minutes or until golden brown. Serve with plum or sweet-sour sauce.

1/2 pound extra-lean ground turkey
1 small onion, chopped
1 can (8 ounces) sliced water chestnuts, drained and chopped
1/3 cup reduced-sodium soy sauce
1/4 cup egg substitute
1-1/2 teaspoons ground ginger
1 package (12 ounces) wonton wrappers
Cooking spray
Sweet-and-sour sauce, optional

Steps:

  • In a large skillet, cook the pork, turkey and onion over medium heat until meat is no longer pink; drain. Transfer to a large bowl. Stir in the water chestnuts, soy sauce, egg substitute and ginger., Position a wonton wrapper with one point toward you. (Keep remaining wrappers covered with a damp paper towel until ready to use.) 1 pound ground pork
1 cup diced celery
1 cup shredded carrot
1 cup diced onion
3 cloves garlic, minced
1 teaspoon salt
1 tablespoon ground black pepper
¼ cup soy sauce
1 (14 ounce) package wonton wrappers
2 eggs, beaten
1 quart canola oil for frying

Steps:

  • Mix together the ground pork, celery, carrot, onion, and garlic in a bowl. Season with salt, pepper, and soy sauce; mix with your hands until well blended.
  • Separate the wonton wrappers and lay them out on a clean surface. Spoon 1 teaspoon of the pork mixture into the center of each wrapper. Moisten the edges of the wonton wrappers with beaten egg, fold over the filling to form a triangle, and press together to seal. Place the finished wontons on a baking sheet.

1/4 cup cider vinegar
3 tablespoons canola oil

3 cups cubed cooked chicken breast
1 medium sweet red pepper, cut into 1/4-inch strips
1 medium sweet yellow pepper, cut into 1/4-inch strips

Steps:

  • Lightly spritz both sides of wonton strips with cooking spray; place on a baking sheet. Broil 4-6 in. from the heat for 2-3 minutes or until golden brown.   • In a narrow, deep pan or an electric fryer, heat oil until it registers 360 degrees on a deep-fry thermometer. Cut wonton wrappers in half. Working in batches, carefully place 2 to 3 wontons in the heated oil; don't crowd the wontons, as they need space to expand. Fry until wontons become large, bubbly, and golden, about 30 seconds. Transfer wontons to a paper towel to drain. Repeat process with remaining wontons. Wontons may be stored in an airtight container at room temperature for up to 3 days. Recrisp in a warm oven, if necessary.

  • The day before you plan to make this recipe, leave the milk chocolate in a warm place to make it slightly pliable. Cut each bar into 8 chunks and, with your hands, try to form each chunk into a disk the size of a quarter with no sharp edges. Lay the wonton skins out on a surface and 1 at a time; paint the edges with water. In the center of the wonton skin, place a disk of milk chocolate and a banana slice on top of the chocolate. Fold the wonton skin corner to corner to make a triangle and press together well to seal completely. Cover with plastic wrap and store chilled until ready to fry and serve, up to 10 hours ahead.
  • Heat the oil in a deep pot to 350 degrees. Drop the wontons into the oil, being careful not to crowd them (you may have to work in batches) and fry, turning often, until golden brown. Steps:

  • Preheat oven to 400ºF.
  • In the bowl of a food processor fitted with a chopping blade, place scallions, ginger, lemon grass and garlic; pulse until finely chopped. Add pork, shrimp, soy sauce and oil; pulse to combine.

1 clove garlic, finely chopped
1/2 teaspoon everything rub or barbecue seasoning
1/2 teaspoon kosher salt
1/8 teaspoon freshly cracked black pepper
1/4 cup avocado oil
1 cup plus 1 tablespoon sunflower or vegetable oil
6 square wonton skins, sliced into thin strips
Kosher salt
Kernels from 1 large ear sweet corn (about 1 cup)
2 bunches Tuscan (dinosaur) kale, rinsed and chopped (about 7 ounces or 9 cups)
10 ounces chopped barbecued chicken
3 1/2 ounces (about 3/4 cup) cherry or grape tomatoes, quartered

Steps:

  • For the vinaigrette: Whisk the vinegar, mustard, maple syrup, lemon zest, shallot, garlic, everything rub, salt and pepper together in a medium bowl. Slowly drizzle in the avocado oil while whisking. Set aside.
  • For the salad: Place 1 cup of the oil in a medium saucepan. Place over medium-high heat until it reaches 375 degrees F on a deep-fry thermometer. Line a medium bowl with paper towels.
  • Make the wonton chips by placing half the wonton strips in the hot oil and stir immediately. Let cook for about 30 second, stir again and cook until golden brown, 15 to 30 more seconds. Remove the strips and place in the paper-lined bowl to drain. Season with a pinch of salt. Repeat with the remaining wonton strips.
  • Place a large skillet over medium-high heat and add the remaining 1 tablespoon oil. Add the corn kernels and sprinkle with a pinch of salt. Cook until the corn starts to brown, about 2 minutes. Stir and cook for another minute. Set aside.
  • Place the kale in a large bowl, add in all the vinaigrette and massage the kale with your hands to coat and tenderize it. Taste and adjust the seasoning. Transfer the kale to a serving bowl and top with the chicken, corn, tomatoes and wonton chips.

1 (16 ounce) pork tenderloin, cut into 1 inch cubes
1 tablespoon minced fresh ginger root
3 cloves garlic, crushed
1 green onion, chopped
1 tablespoon fresh lime juice
½ teaspoon crushed red pepper flakes
1 tablespoon sesame oil
1 dash soy sauce
salt and ground black pepper to taste
1 (12 ounce) package square wonton wrappers
1 egg white, beaten
2 quarts peanut oil for frying

Steps:

  • Combine the pork, ginger, garlic, green onion, lime juice, crushed red pepper, sesame oil, and soy sauce in a food processor. Season mixture with salt and pepper. Pulse until pork is minced to the consistency of ground beef.
  • Separate the wonton wrappers and lay them out on a clean surface. Spoon 1 tablespoon of the pork mixture into the center of each wrapper. Moisten the edges of the wonton wrappers with water, fold over the filling to form a triangle, and press together to seal. Brush each wonton with egg white.
  • Pour the peanut oil into a large pot and preheat to 365 degrees F (180 degrees C).
  • Gently drop wontons into the hot oil and cook until golden brown, about 5 minutes. Remove to paper towels to drain.

1/2 cup part-skim ricotta cheese
3 tablespoons reduced-fat pesto sauce
3 tablespoons roasted red peppers (packed in water), chopped
2 tablespoons part-skim mozzarella cheese, shredded
16 wonton wrappers
1 cup store bought marinara sauce, warmed

Steps:

  • Preheat oven to 425°F. Coat a large baking sheet with a good amount of cooking spray. In a medium bowl, combine ricotta, pesto, peppers and mozzarella. Place wonton wrappers on prepared baking sheet so wontons become saturated with oil. Place 1 tablespoon ricotta mixture onto center of each wrapper. Dip a finger into water and use it to moisten edges of wrapper; fold over one corner of wrapper to make a triangle and press sides together to create a seal. (If desired, create decorative lines along edges of wontons by pressing tines of a fork along bottom edge of each wonton.) Bake until wontons are golden brown on edges and dough is just cooked through, about 5 to 7 minutes. Serve with marinara sauce for dipping.

4 water chestnuts, chopped
1 ounce green onion, chopped (with tops)
1/2 tablespoon low sodium soy sauce
1/4 teaspoon salt
1/2 teaspoon cornstarch
1/4 teaspoon fresh gingerroot, grated
1/2 lb wonton skins

Steps:

  • Combine pork, water chestnuts, green onions, soy sauce, salt, cornstarch and ginger in a medium bowl; mix well.
  • Place a half teaspoon of the pork mixture in center of each wonton skin.
  • Fold wonton skin over filling to form a triangle.
  • Turn top of triangle down to meet fold.
  • Turn over; moisten one corner with water.
  • Overlap opposite corner over moistened corner; press firmly.
  • Heat oil in wok or large saucepan over medium-high heat to 375F/190C.
  • Deep fry wontons, a few at a time, 2 to 3 minutes, or until golden brown and crispy.
  • Drain on paper towels.

WASABI CREAM
1/4 mayonnaise
1 T fresh lime juice
1 T prepared wasabi
NORI WONTONS
24 (3inch) square wonton wrappers, cut in half
1 (7 inch) sheet nori, cut into 48 (1 inch) squares
2 egg whites, beaten
3 to 4 cups canola oil for deep frying
BARELY SEARED TUNA
12 oz sushi quality tuna steak, cut into 1/4 inchdice
1/2 cup thinly sliced scallions
1 T soy sauce
1 T dry vermouth
2 T fresh ginger root, minced
1 medium garlic clove, minced
1/4 tsp salt
1 T canola oil
1 T sesame seeds, toasted

Steps:

  • to make the wasabi cream: In a small bowl, combine mayonnaise, lime juice and wasabi. Taste and add more wasabi or lime juice if necessary. (Can be prepared one day ahead, cover, chill) To make crispy nori wontons: Using a pastry brush, bruch centerof each wonton rectangle with egg white and top with a nori square. Heat oil in a deep, heavy bottomed pot to 374 degrees. Working in small batches, gently place nori wontons into oil and fry for about 30 seconds, until wontons are golden and noris form shallow pockets. Remove nori wontons from oil with slotted spoon. Drain on paper towels. Repeat until all wontons are fried. If preparing ahead, store in airtight container for up to 1 day. To prepare tuna: in a medium bowl, combine diced tuna with scallions, soy sauce, vermouth, ginger root, garlic and salt. In nonstick skillet set over high heat, heat 1 T oil until it just begins to smoke. pour tuna mixture into oil and quickly toss with spatula for about 30 seconds, until tuna is lightly cooked and shows a deep caramel color in some spots but is still pink in others. To assemble individual crisps, check nori wontons first. If they are limp, place on a baking sheet, bake at 400F for a few minutes and let cool. Place 1 tsp tuna mixture into each nori wonton and top each with wasabi cream. Sprinkle with sesame seeds. Serve immediately. S
