Whip up this peanut butter cake with peanut butter frosting for a delicious snack loaded with peanut buttery flavor.

3 tablespoons creamy peanut butter
3 tablespoons neutral oil
1 large egg, room temperature
1/2 cup buttermilk, room temperature
1/2 teaspoon vanilla extract
150 grams (1 1/4 cups) all purpose flour
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
159 grams (3/4 cup packed) light brown sugar
1/4 cup unsalted butter, softened
1/4 cup creamy peanut butter
1 tablespoon honey
1/4 teaspoon salt
1/2 teaspoon vanilla
3/4 cup powdered sugar
1/2 cup chopped honey roasted peanuts (optional)

Steps:

  • Heat the oven to 350 degrees F, spray a 8 inch by 8inch square cake pan with spray oil and line with parchment paper.
  • In a small saucepan, heat the peanut butter and oil over medium heat, stirring constantly, until smooth. Remove from the heat.
  • In a small bowl, whisk together the egg, buttermilk, and vanilla.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and brown sugar. Add the egg mixture and beat with an electric mixer on low until just combined. Drizzle in the peanut butter mixture while mixing on low until just incorporated.
  • Pour the batter in the pan and smooth the top. Bake for 18 to 20 minutes. Cool the cake in the pan on a wire rack.
  • Top with the frosting and refrigerate the cake for 20 minutes so the frosting will set.
  • To serve, sprinkle with the chopped peanuts.
  • Beat the butter, peanut butter, honey, salt, and vanilla with an electric mixer until combined.
  • Add the confectioners sugar by heaping tablespoon while continuing to beat. Once you've added all of the sugar, beat until smooth.

2 cups creamy peanut butter
1/2 cup butter, softened
3-3/4 cups confectioners' sugar
3 cups crisp rice cereal
4 cups semisweet chocolate chips
1/4 cup plus 1 teaspoon shortening, divided
1/3 cup white baking chips

Steps:

  • In a large bowl, beat peanut butter and butter until blended; gradually beat in confectioners' sugar until smooth. Stir in cereal. Shape into 1-in. balls. Refrigerate until chilled., In a microwave, melt chocolate chips and 1/4 cup shortening; stir until smooth. Dip balls into chocolate; allow excess to drip off. Place on a waxed paper-lined pan. Let stand until set. , In a microwave, melt white baking chips and remaining shortening. Stir until smooth. Drizzle over candies. Refrigerate until set.

1 stick (8 Tablespoons) Unsalted Butter
1/2 cup Water
1/2 cup Creamy Peanut Butter
1 cup All-Purpose Flour
1 cup Sugar
1 teaspoon Baking Soda
1 large Egg
1/4 cup Sour Cream ((sub plain or Greek yogurt))
1/2 teaspoon Pure Vanilla Extract
Powdered Sugar, for dusting

Steps:

  • Preheat oven to 350°F / 177°C.
  • Grease an 8x8 cake pan and line it with parchment paper.
  • In a small saucepan over medium-high heat (or in the microwave), heat butter, water, and peanut butter, stirring continuously, until butter is melted and the mixture is simmering.
  • In a mixing bowl, whisk together flour, sugar, and baking soda.
  • Pour boiling liquids over flour mixture and stir until evenly combined. Set aside and allow it to cool slightly.
  • In a small mixing bowl, beat egg. Add sour cream and vanilla and whisk well.
  • Add egg mixture to peanut butter batter and stir just until combined. Pour into cake pan.
  • Bake until cake is set in the middle and a tester inserted comes out clean, 22 to 24 minutes.
  • Let cake cool completely before removing from pan.
  • Dust with powdered sugar just before serving.
