- Line a baking sheet with aluminum foil and spray with cooking spray; set aside. In a shallow bowl, whisk together the lemon juice, oil, oregano, salt and pepper. Place the potato flakes in another bowl. , Dip fillets in lemon juice mixture, then coat with potato flakes. Place on prepared pan. Bake at 500° for 10 minutes or until fish flakes easily with a fork and is golden brown.

- Cut fish into serving-size pieces.
- Beat egg in small shallow bowl.
- Combine remaining ingredients in second shallow bowl.
- Dip fish into egg and then into crumb mixture, coating completely.
- Place on foil-lined baking sheet tucking tail under if needed.
- Bake at 450 degrees F oven for 6-8 minutes or until fish flakes easily with fork.

- 1) Combine egg whites and water in a shallow dish. Combine cornmeal and next 5 ingredients in a medium bowl; stir well. 2) Sprinkle each side of fillets with flour. Dip fillets into egg white mixture, and dredge in cornmeal mixture. 3) Coat a large skillet with cooking spray; add oil. Place skillet over medium-high heat until hot. Add fillets, and cook 4 to 5 minutes on each side or until golden and fish flakes easily when tested with a fork. If desired, garnish with lemon wedges and parsley.
