BEST BAKED FRENCH FRIES
The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil; spray with cooking spray.
- Place sliced potatoes in a colander; sprinkle sugar over potatoes. Set aside until liquid is released from potatoes, 20 to 30 minutes. Drain liquid and dry potatoes well.
- Mix potato slices, olive oil, garlic powder, salt, and black pepper in a resealable bag until evenly coated. Spread coated potato slices in a single layer, leaving space around each potato, on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.

CRISPY BAKED GARLIC MATCHSTICK FRIES
Steps:
- Preheat oven to 450 degrees (232 C).
- Chop potatoes into matchsticks by halving, halving once more, then cutting into wedges and then strips.
- Line two baking sheets with foil or parchment paper (ensure the type you're using is safe up to 450 F / 232 C) and generously spray with nonstick spray.
- Add fries plus a generous drizzle of oil and sea salt, pepper, and garlic powder. Toss to coat.
- Arrange fries a single layer making sure they aren't touching too much. This will help them crisp up and cook evenly.
- Bake for 25-35 minutes, tossing/flipping at least once to ensure even baking.
- In the last 10 minutes of cooking, heat a small saucepan over medium heat and add 1-2 Tbsp olive oil (amount as original recipe is written // adjust if altering batch size) and the minced garlic. Sauté, stirring frequently, until just slightly brown to wake up the flavor.
- Remove from heat and set aside.
- When the fries are finished, remove from oven, sprinkle again with sea salt, and spoon the warm garlic on top. Toss to coat and serve immediately as is or with Whiskey BBQ Ketchup.
- You can also add more flavor by tossing the fries once more with the rosemary.

- 1. Adjust oven rack to lowest position and heat oven to 475 degrees. Combine minced garlic and oil in a large bowl and microwave until garlic is fragrant, about 1 minute. Transfer 5 tablespoons of oil (leaving the minced garlic in the bowl) to rimmed baking sheet, turning to coat the bottom of the sheet.
- 2. Add potatoes to bowl with remaining oil and minced garlic. Wrap tightly with plastic wrap and microwave on high power until potatoes are translucent around edges, 3-6 minutes,shaking bowl halfway through cooking.
- 3. Combine cornstarch,salt,pepper and garlic powder in small bowl. Sprinkle over hot potatoes and toss well to coat. Arrange potatoes in single layer on prepared sheet and bake, turning once half way through baking,until deep golden brown and crisp, about 30-40 minutes.
