2 tablespoons honey
¼ cup soy sauce
¼ cup hoisin sauce
2 tablespoons sriracha
2 tablespoons rice vinegar
1 tablespoon sesame oil
2 cloves garlic, minced
1 tablespoon ginger, minced
1 teaspoon salt
1 teaspoon pepper
½ rack baby back ribs
oil, for frying
¼ cup soy sauce
¼ cup hoisin sauce
1 tablespoon sesame oil
2 tablespoons rice vinegar
½ cup honey
toasted sesame seed, to taste
green onion, thinly sliced, to taste

Steps:

  • In a large bowl, prepare marinade - mix soy sauce, hoisin sauce, honey, Sriracha, rice vinegar, sesame oil, garlic, ginger, salt, pepper, and the ribs.
  • Marinate for at least 1 hour in the refrigerator.
  • Preheat oven to 275˚F (190˚C).
  • Bake ribs on a baking sheet for 30 minutes.
  • Make the sticky sauce in a saucepan by combining soy sauce, hoisin sauce, sesame oil, rice vinegar, and honey. Bring to a low boil, reduce heat, and simmer until sauce has thickened, about 30 minutes.
  • Heat oil for frying to 350˚F (180˚C).
  • Place ribs into the oil a few at a time and fry for 4 minutes, flipping them occasionally. Drain on a paper towel.
  • Toss fried ribs in the sticky sauce and garnish with toasted sesame seeds and green onions.
  • Enjoy!

FLORENCE'S FRIED SPARE RIBS

Number Of Ingredients 12

1 slab spare ribs
2 cups vinegar
2 cups lemon juice
2 teaspoons salt
1 tablespoon coarse ground pepper
Florence's Fried Chicken Seasoning, recipe follows
2 cups shortening
2 cups all-purpose flour
2 teaspoons salt
2 teaspoons butcher's grade pepper
1 tablespoon baking powder
1 tablespoon cornstarch

Steps:

  • Trim spare ribs by removing all silver skin. Cut off rib tips. Cut slab into individual ribs.
  • Soak ribs in vinegar in a bowl, covered and refrigerated, turning ribs once, for 15 minutes. Pour off vinegar and add lemon juice. Soak 30 minutes, covered and refrigerated. Rinse ribs with cold water and pat off excess water. Ribs should still be moist. Sprinkle ribs with salt and pepper, then cover in Florence's Fried Chicken Seasoning.
  • Heat shortening in a skillet over medium-high heat until melted.
  • Place ribs in skillet fleshy-side down. Cook until crispy, approximately 10 minutes. Turn and cook an additional 5 minutes.
  • Stir together the flour, salt, pepper, baking powder and cornstarch in a medium bowl.

DEEP FRIED RIBS

2 racks St. Louis style ribs
Your favorite rib rub
Peanut oil, for frying
Your favorite barbecue sauce
2 cups milk
2 eggs
4 ounces beer
All-purpose flour
Pepper, salt, and Cajun spices, to taste

Steps:

  • Set smoker at 350 degrees F.
  • Wash each rack under water. Pat dry. Place racks on a wood-burning smoker. A hickory wood fire is best. Smoke ribs for 30 minutes. Remove ribs from smoker and rub each side with the rib rub. Return the ribs to smoker and smoke at 350 degrees F for about 1 hour 30 minutes. Remove ribs and cool completely. When cool, cut ribs into individual sections. Dip each rib into pre-wash solution then the breading mixture, lightly dredging. Shake off the excess then dip into wash again and then the breading mixture.
  • Place ribs into a 350-degree F deep fryer and cook for 5 minutes or until golden brown. You will have to do multiple batches. Serve with your favorite barbecue sauce for dipping.

14 large garlic cloves-8 peeled and smashed, 6 minced
1/2 cup sliced fresh ginger plus 1/4 cup minced (6 ounces total)
6 scallions, thinly sliced, white and green parts separated
4 star anise pods
3 cups soy sauce
2 quarts water
2 cups ginger ale
1/2 cup dry white wine
Strips of zest and juice from 1 navel orange
1 cup granulated sugar
1/2 cup cilantro stems plus 1/4 cup coarsely chopped cilantro
3 racks of baby back ribs (5 1/2 pounds)
1/4 cup vegetable oil, plus more for frying
2 cups lightly packed brown sugar
1 cup ketchup
1 teaspoon crushed red pepper
1/2 cup all-purpose flour
1/2 cup cornstarch

Steps:

  • Preheat the oven to 400°. In a large roasting pan, combine the smashed garlic with the sliced ginger, scallion whites, star anise, 1 1/2 cups of the soy sauce, the water, ginger ale, white wine, orange zest and juice, granulated sugar and cilantro stems. Set the pan over 2 burners and bring to a boil over moderately high heat. Add the baby back ribs to the roasting pan, cover tightly with foil and bake for about 2 hours, or until the ribs are very tender. Let cool to room temperature, then spread the ribs out in a single layer on a baking sheet and refrigerate until chilled and firm, about 30 minutes. Discard the braising liquid. Meanwhile, in a large saucepan, heat 1/4 cup of the vegetable oil. Add the minced garlic and ginger and the scallion greens and cook over moderately high heat, stirring, until fragrant, about 1 minute. Add the remaining 1 1/2 cups of soy sauce, the brown sugar, ketchup and crushed red pepper and bring to a boil. Cook over moderately high heat for 3 minutes, stirring occasionally. Remove from the heat and add the chopped cilantro. Transfer the rib sauce to a large bowl. In a large, sturdy pot, heat 1 1/2 inches of vegetable oil to 375°. In a large bowl, whisk the flour with the cornstarch. Cut the racks into individual ribs. Toss the ribs in the flour mixture and shake off the excess. Working in batches, fry the ribs until the coating is lightly golden and crisp, about 2 minutes. Transfer the ribs to paper towels to drain briefly, then add them to the sauce in the bowl and toss to coat. Pile on a platter and serve hot.

This is a great recipe from a member of our cook-off team. Beef ribs are breaded and deep-fried. This would be best in an outdoor deep-fryer. Two racks of ribs should give you about 6 pounds.

3 quarts peanut oil for frying
2 tablespoons salt
3 tablespoons coarse ground black pepper
2 tablespoons cayenne pepper
2 tablespoons garlic salt
2 tablespoons onion salt
2 cups all-purpose flour
6 eggs, beaten
6 pounds beef ribs, cut into single rib pieces

Steps:

  • Heat the oil in a deep-fryer to 375 degrees F (190 degrees C).
  • In a medium bowl, mix together the salt, black pepper, cayenne pepper, garlic salt, and onion salt. Place the flour in a separate bowl or plate. Whisk eggs in a large bowl. Rub the spice mixture onto all of the ribs. Dip each rib in egg, then in flour, then egg, then flour again.
  • Place the ribs in a fryer basket so they are not crowded, try 4 or 5 at a time depending on the size of your fryer. Cook for about 8 minutes. Remove to paper towels to drain. Continue with remaining ribs.
