"Collecting cookbooks from area churches is my hobby, and this recipe was one of my discoveries," says Rena Laska of Bancroft, Wisconsin. "I made some changes to suit my family's tastes." The cheesy chicken dish comes together easily with a tube of refrigerated rolls.

1 tube (8 ounces) refrigerated crescent rolls
1 cup shredded cooked chicken
1/2 cup shredded cheddar cheese, divided
2/3 cup condensed cream of chicken soup, undiluted
1/2 cup milk

Steps:

  • Separate crescent dough into eight triangles. Combine the chicken and 2 tablespoons cheese; place about 2 tablespoonfuls on the wide end of each triangle. Roll up and place on an ungreased baking sheet. Bake at 375° for 18-20 minutes or until golden brown., Meanwhile, in a saucepan or microwave-safe bowl, combine soup, milk and remaining cheese. Cook until heated through and cheese is melted. Serve over crescents.

2 cups chopped pecans
1 tablespoon vanilla extract
2 cups all-purpose flour
½ cup confectioners' sugar

Steps:

  • Preheat oven to 325 degrees F (170 degrees C).
  • Cream butter or margarine, gradually adding confectioners' sugar and salt. Cream until light and fluffy.
  • Stir in pecans and vanilla. Add flour gradually. Mix well. Shape dough into crescents using a teaspoon full for each crescent. Place on ungreased cookie sheet and bake 15-30 minutes. Do not brown. Let cool slightly, then roll cookies in additional confectioners' sugar.

1 (4 pound) whole chicken, cooked and deboned
2 (10.75 ounce) cans condensed cream of chicken soup
2 ½ cups milk
1 cup shredded Cheddar cheese
2 (8 ounce) cans refrigerated crescent roll dough

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large saucepan heat cream of chicken soup, milk and 4 ounces of the cheese over low heat. Meanwhile, separate crescent rolls into triangles. Place some chicken onto the large end of each roll and top with a little cheese. Roll up and place in a 9x13 inch baking dish. Pour 1/2 of soup mixture directly into the baking dish, not on top of the rolls.
  • Bake at 350 degrees F (175 degrees C) for about 10 to 15 minutes, or until rolls rise slightly and are lightly browned.
  • Pour the remaining 1/2 of the soup mixture into the dish, laying any leftover chicken meat on top, and sprinkle with any remaining cheese. Return to oven until rolls are browned and cheese has melted.

1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
1 1/2 cups confectioners' sugar
1 teaspoon pure vanilla extract
1/2 teaspoon ground cardamom
1/4 teaspoon salt

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Spread the walnuts on a rimmed baking sheet. Bake on the lower rack until toasted, 10 to 12 minutes; let cool completely. Pulse the nuts in a food processor until finely ground. Add the flour and pulse to combine; set aside.
  • Beat the butter in a large bowl with a mixer on medium-high speed until light and fluffy, 2 to 4 minutes. Add 1/2 cup confectioners' sugar, the vanilla, cardamom and salt; beat until combined. Reduce the mixer speed to low and beat in the walnut-flour mixture until just incorporated. Cover the dough and refrigerate until slightly firm, about 30 minutes.
  • Place the remaining 1 cup confectioners' sugar in a shallow bowl; set aside. Shape tablespoonfuls of dough into thin crescents and arrange 1 inch apart on 2 unlined baking sheets.
  • Bake, switching the pans halfway through, until the cookies are golden on the bottom, 20 to 25 minutes. This recipe came from one of my earliest pastry assistants, Sandra, when we baked together at the Strathallan Hotel in Rochester, New York. We used to put them on cookie/petits four platters because they froze well. You can also dip them in chocolate, omitting the confectioners' sugar at the end.

1 cup slivered almonds, toasted
3/4 cup all purpose flour
1/4 teaspoon salt
3/4 cup powdered sugar
1/2 cup (1 stick) unsalted butter, room temperature
1 1/2 teaspoons vanilla extract
1/4 teaspoon almond extract

Steps:

  • Finely grind nuts, flour and salt in processor. Using electric mixer, beat 1/2 cup powdered sugar, butter and vanilla and almond extracts in large bowl until light. Add nut mixture and beat just until blended. Cover; chill until firm, about 1 hour.
  • Preheat oven to 350°F. Lightly butter 2 heavy large baking sheets. For each cookie, roll 1 rounded tablespoonful dough into cylinder; pinch ends to taper. Place in crescent shape on baking sheet. Bake until bottoms of cookies are just golden, about 15 minutes. Transfer baking sheets to racks. Cool cookies. Sift 1/4 cup powdered sugar over. (Can be made 3 days ahead. Store airtight at room temperature.)

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/2 cup OSCAR MAYER Real Bacon Recipe Pieces
1/3 cup KRAFT Grated Parmesan Cheese
4 green onions, thinly sliced
1 Tbsp. milk
2 cans (8 oz. each) refrigerated crescent dinner rolls
1 Tbsp. poppy seed

Steps:

  • Heat oven to 375°F.
  • Mix first 5 ingredients until well blended.
  • Separate dough into 8 rectangles; firmly press perforations together to seal. Spread each rectangle with 2 rounded tablespoonfuls cream cheese mixture.
  • Cut each rectangle in half diagonally; repeat with opposite corners. Cut in half crosswise to form 6 triangles. Roll up triangles, starting at short ends. Place, point-side down, on baking sheets. Sprinkle with poppy seed.
  • Bake 12 to 15 min. or until golden brown. Serve immediately.
