2 tablespoons olive oil
1 green bell pepper, chopped
1 small onion, chopped
2 (14.5 ounce) cans diced tomatoes
3 cooked andouille sausage, cut into quarters
1 (10 ounce) package frozen cut okra, thawed
2 tablespoons Cajun seasoning, or to taste
2 teaspoons salt
2 pounds peeled and deveined medium shrimp (30-40 per pound)

Steps:

  • Heat the olive oil in a skillet over medium heat. Stir in the bell pepper and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the tomatoes and simmer for 10 minutes, then add the okra, sausage, Cajun seasoning, and salt. Cover and cook for 30 minutes. Stir in the shrimp and cook until they are bright pink on the outside and the meat is no longer transparent in the center, 8 to 12 minutes.

1 cup chopped green pepper
1/2 cup chopped onion
3 tablespoons canola oil
2 cups fresh or frozen corn or 1 can (15-1/4 ounces) whole-kernel corn
1-1/2 cups sliced fresh or frozen okra
3 medium tomatoes, peeled and chopped (1-1/2 cups)
1 tablespoon tomato paste
1/4 teaspoon dried thyme
Salt to taste
1/4 teaspoon coarsely ground pepper
1/2 teaspoon hot pepper sauce, optional

Steps:

  • In a large skillet, saute green pepper and onion in oil until tender. Add corn and okra; cook over medium heat for 10 minutes, stirring occasionally. , Stir in the tomatoes, tomato paste, thyme, salt, pepper and, if desired, pepper sauce. Cover and simmer for 3-5 minutes, stirring occasionally.

This is a really tasty gumbo that is also easy to make. For more authentic taste you can add 1/4 cup of Gumbo Filé Powder spice before you serve. I hope you get to enjoy this as much as we do! Note: If this is too mild for your taste you can add some hot sauce as you serve. I made this for my 1 year old and I had to cut down on the spice.

4 tablespoons vegetable oil
4 tablespoons flour
1 large chopped onion
1 cup chopped celery
6 garlic cloves, chopped
1 cup of chopped green pepper
6 ounces tomato paste
14 ounces fire-roasted tomatoes
2 lbs frozen sliced okra
1 lb peeled shrimp
1 lb shrimp, head on
1 lb smoked sausage (casing peeled and sliced into bite size)
2 cups water
2 cups shrimp stock or 2 cups bouillon
1 tablespoon creole seasoning (such as Slap ya Mama)
1 teaspoon sugar
3 tablespoons of chopped parsley
2 bay leaves

Steps:

  • Slowly stir the flour into heated oil in a heavy cast iron skillet. Continue to stir until the flour is dark brown. Add the next 4 ingredients; stir until onions are clear. Add tomato paste and a cup of water. Add okra and tomatoes. Cook slowly, adding all the water and shrimp stock -a little at a time. Stir in sugar & creole seasoning. Cook for about an hour on a low fire, stirring occasionally to prevent sticking to the bottom of pot; adding water if necessary.
  • Add the shrimp ,sausage, parsley and the bay leaves. Cook another 30 minutes to an hour, adding seasoning to taste. Serve over boiled or steamed rice.

2 tablespoons olive oil
4 stalks celery, chopped
2 onions, chopped
4 ears fresh corn, shucked and kernels scraped from cob
2 pounds fresh okra, cut into 1/2 inch slices
2 (28 ounce) cans whole tomatoes, broken up
½ pound andouille sausage, diced
½ teaspoon Creole seasoning, or to taste
sea salt and ground black pepper to taste

Steps:

  • Heat butter and olive oil over medium heat in a large pot. Cook and stir celery and onions until the onions are translucent, about 5 minutes. Stir in the corn kernels and cook for 3 minutes.
  • Stir in okra, tomatoes, andouille sausage, and Creole seasoning; cover and cook over medium heat until the okra has lost all of its slippery texture, at least 45 minutes. Season with sea salt, black pepper, and more Creole seasoning if necessary. Cook, uncovered, to reduce liquid, about 10 minutes.

1 14 1/2-ounce can low-salt chicken broth

1/2 pound skinless boneless chicken thighs, cut into 1-inch pieces
1 teaspoon dried thyme
3/4 to 1 teaspoon hot pepper sauce (such as Tabasco)

Steps:

  • Stir vegetable oil and flour in large saucepan over high heat until smooth and dark brown, about 3 minutes. Mix in okra, then chicken broth and tomatoes with their juices; simmer 3 minutes. Sprinkle chicken with thyme, salt and pepper. Add to saucepan. Simmer gumbo uncovered until chicken is cooked through, about 10 minutes. 2 Tbsp bacon drippings
1 - 16 oz bag of frozen okra slices, thawed or 2 cups fresh, sliced
1 medium onion, chopped
1 clove garlic
1 - 15 oz can, chopped tomatoes & juice
1 - 11 oz can, whole kernel corn with jalapenos ( drained ), or use plain - frozen can be used as well _ or even fresh
1 tsp creole seasoning
fresh cracked black pepper - to taste
pinch sugar if tomatoes are bitter
1/2 Tbsp butter - optional

Steps:

  • 1. In a medium iron skillet, over medium heat, add bacon fat, once hot add okra and onion - continue cooking until okra begins to brown , stickiness diminishes and onions are soft. Add garlic and cook another minute. Stirring occasionally.
  • 2. Add corn, tomatoes, juice and seasonings. Continue cooking until well heated through and begins to thicken - 15 minutes. Right before serving I stir in some butter. Serve hot.
  • 3. So good!

4 chicken leg quarters, cut into 4 thighs and 4 drumsticks
1 tablespoon canola oil
1 cup onion, coarsely-chopped
1 cup green pepper, coarsely-chopped
1/2 cup celery, sliced
1 garlic clove, minced
2/3 lb okra, sliced
2 cups tomatoes, coarsely-chopped
1/4 cup fresh parsley, chopped
1/2 teaspoon paprika
1 bay leaf
1/2 teaspoon salt
1/2 cup chicken broth, warm
1/4 cup white wine
1/4 teaspoon hot pepper sauce

Steps:

  • Remove and discard chicken skin. In nonstick Dutch oven, place oil and heat over medium temperature.
  • Add chicken and cook, turning, about 10 minutes or until brown on all sides. Remove chicken to warm bowl.
  • To Dutch oven, add onion, green pepper, celery and garlic; stir and cook about 5 minutes. Add okra and cook, stirring, about 5 minutes more.
  • Stir in tomatoes, parsley, paprika, bay leaf and salt. Return chicken to Dutch oven and spoon vegetable mixture over top.
  • In small bowl, mix together chicken broth, wine and hot pepper sauce; pour over all.

This is a traditional southern recipe. Best, if using fresh summer vegetables, but still a delicious side using frozen vegetables and ripe tomatoes, from the grocery or canned. When using fresh okra, use small to medium sized pods, for tenderness. From Cooking Light Cookbook 1994, with a slight tweak.

2 c sliced okra, fresh or frozen (best with fresh)
1 c chopped green pepper
1/2 medium chopped onion
2 1/2 c fresh corn off of the cob (about 3 ears) or frozen (best with fresh)
1/2 c water
2 can(s) (14 1/2 oz each) whole tomatoes chopped with juice* (use fresh tomatoes, if you have them.)
2 Tbsp tomato paste*
1/2 tsp sugar
1/4 tsp salt
1/4 tsp pepper
1/4 tsp hot sauce
(*these items were originally listed as "no-added-salt". you may use these, if you like.)

Steps:

  • 1. Coat a large nonstick skillet with cooking spray; place over medium-high heat, until hot. Add green pepper and onion; sauté 3 minutes, or until tender.
  • 2. Add corn and water, to vegetables in skillet, stirring well. Cover and cook, over medium heat 5 minutes; stir gently, and cook an additional 5 minutes.

Crunchy fried okra is tasty, and it doesn't require deep-frying. By using an air fryer you'll be able to get crisp results and leave all that extra oil behind. A quick homemade creole seasoning mix gives the okra some serious flavor, and a creamy-spicy sauce is great for dipping.

1/2 pound fresh okra
1/2 cup whole milk
1/2 cup all-purpose flour
1/2 teaspoon paprika
1/2 teaspoon dried thyme
1/2 teaspoon kosher salt
1/4 teaspoon garlic granules
1/4 teaspoon onion granules
1/4 teaspoon dried oregano
1/4 teaspoon freshly ground black pepper
Pinch ground white pepper
Pinch cayenne
Nonstick cooking spray
1/2 cup mayonnaise
1 tablespoon hot sauce, such as Frank's RedHot
1/2 the zest of a small lemon
1 teaspoon lemon juice

Steps:

  • Preheat an air fryer 390 degrees F and set for 15 minutes.
  • For the okra: Slice off the tops (stem ends) of the okra pods and then slice them in half lengthwise, so you get two long okra halves from each pod. Place in a medium bowl, pour in the milk and toss to coat.
  • Combine the flour, paprika, thyme, salt, garlic granules, onion granules, oregano, black pepper, white pepper and cayenne in a large bowl and whisk to combine.
  • Preheat an air fryer to 390 degrees F and set for 15 minutes. Drain excess milk from the okra and toss the okra in the flour and spice mix to evenly coat. The okra should look dry and be thoroughly coated. Place the individual coated okra pieces flat on a cutting board, shaking any excess flour back into the bowl. Spray each piece with cooking spray until the flour on the okra looks slightly wet.
  • Remove the air fryer tray from the air fryer and place the okra sprayed-side down in the tray. Be sure that the okra pieces are not overlapping (work in 2 batches if necessary). Spray the other side of the okra with cooking spray. Place the tray in the air fryer and cook the okra until it is golden brown and crunchy, about 8 minutes. You do not want any parts of the okra to look dry or ashy, so about halfway through the cooking time, gently shake and toss the okra and spray them again with cooking spray.
  • Meanwhile, for the sauce: Stir the mayonnaise, hot sauce, lemon zest and lemon juice together in a small bowl. Serve the okra hot with the sauce.

1 pound whole okra, fresh or frozen
1 can stewed tomatoes
1 dash salt and pepper

Steps:

  • Wash and cut okra into 3/4 inch slices. Saute onion and pepper in oil until tender. Add Rotel, stewed tomatoes, and okra. Simmer on low heat or cook in oven until okra is tender.
