This is from the Sooner Sampler; a cookbook published by the Norman Junior League back in the 80s. This casserole is WAY more flavorful that the ingredients suggest! A lot of bang for very little buck.

1 lb lean ground beef
1 small onion, chopped
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups sliced zucchini, par-boiled
1 1/2 cups cheddar cheese, grated
1 (10 3/4 ounce) can cream of mushroom soup
1/4 cup milk
1/2 teaspoon paprika

Steps:

  • Brown ground beef and onion with garlic powder, salt and pepper then drain if needed.
  • Par-boil zucchini in water for 5 minutes then drain well.
  • Mix soup and milk with paprika.
  • Layer 1/2 ground beef, 1/2 zucchini, then 1/2 cheese in a casserole dish. Repeat layers.
  • Spread soup/milk mixture on top of the layers.
  • Bake uncovered for 30-40 minutes at 350 degrees until bubbly.
  • This can be assembled the night before and baked the next day, just increase time to allow for the chilled casserole.

2 Tbsp. KRAFT Lite Zesty Italian Dressing
1/2 cup chopped onion s
4 slices OSCAR MAYER Bacon, chopped
4 zucchini, chopped
1 cup frozen corn
1 pkg. (7 oz.) KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese, divided
1/2 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
1 drained canned chipotle pepper in adobo sauce, finely chopped
2 Tbsp. chopped fresh cilantro

Steps:

  • Heat oven to 350°F.
  • Heat dressing in large skillet on medium-high heat. Add onions and bacon; cook and stir 5 min. or until onions are crisp-tender. Stir in zucchini; cook 8 to 10 min. or until zucchini is lightly browned, stirring occasionally. Remove from heat; drain. Add corn, 1 cup cheese, sour cream and peppers; mix well.
  • Spoon into 2-qt. baking dish; top with remaining cheese.
  • Bake 15 min. or until cheese is melted and vegetable mixture is heated through; stir. Sprinkle with cilantro.

A casserole my mom always made. Still love it to this day. The original recipe is 1 T. cheese but I use more, about 1/4 c.

Number Of Ingredients 10

2 lbs zucchini
1 tablespoon butter
1/4 cup sour cream
1 tablespoon cheese, grated
1/2 teaspoon salt
1 dash paprika
1 egg, beaten
1 tablespoon chives
1/2 cup cracker crumbs or 1/2 cup bread cubes
2 tablespoons butter

Steps:

  • Preheat oven to 350 deg.
  • Cook zucchini in boiling water til tender. Drain and place in casserole.
  • In a sauce pan, melt butter. Stir in sour cream, cheese, salt and paprika. Cook slowly until the cheese melts.
  • Remove from heat and add egg and chives.
  • Stir into 1 1/2 quart casserole with zucchini.
  • Toss cracker or bread with 2 T. butter and put on top of the veggie mixture. Bake at 350 deg. for 20 minutes.
  • Most of the time she used zucchini but other veggies also.

I have searched for a good zucchini rice casserole for many years that tastes like a dish I used to buy at a little corner restaurant in Birmingham, Michigan back in the mid 80's. I have still not found that exact recipe, but I have tried many and have come up with this (best of all recipes - that I've tried)

2 cups rice (cooked)
2 cups zucchini (shredded)
1 (14 1/2 ounce) can cream of mushroom soup
1/2 cup romano cheese or 1/2 cup parmesan cheese
1 cup Kraft Mexican Style Finely Shredded Four Cheese
2 eggs (beaten with fork)
1/2 cup baby portabella mushrooms (diced)
1/2 cup bell pepper, diced red & yellow
1/4 onion (diced)
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper

Steps:

  • 1. Cook rice.
  • 2. Shred zucchini while rice is cooking.
  • 3. Saute onions, peppers, & zucchini for 5-7 minutes.
  • 4. Combine rice, eggs, cheeses, & cream of mushroom.
  • 5. Stir in zucchini mixture.
  • 6. Pour into large casserole dish 9' x 11' or larger & cover with foil.
  • 7. Bake at 350°F for 25 minutes & take foil off & bake for another 20 minutes.
