TUNA BUMSTEAD (SANDWICH)

This is the 'famous' toasted tuna sandwich that was served in my Catholic school cafeteria. Who knows why they called them tuna bumsteads, but they did.. Use Miracle Whip for the real-deal, but I know a lot of folks don't like it so use mayo if you're, ahem, 'one of them'.. lol..

2 (6 ounce) cans tuna, drained
4 tablespoons Miracle Whip
4 hard-boiled eggs, peeled and chopped
8 slices American cheese
salt and pepper, to taste
8 hamburger buns

Steps:

  • Preheat oven to 350°F.
  • Combine the tuna, dressing, eggs, salt and pepper.
  • Spread the mixture evenly between hamburger rolls.
  • Top each with a slice of cheese.
  • Wrap each sandwich in foil and bake for 15 minutes or until heated through, cheese is melted, and bun is toasted.

I remember these from my junior high school cafeteria, every Friday without fail! I still hate tuna but now I can at least make up for that with a substitution!

Number Of Ingredients 9

1 (16 ounce) can tuna fish (or chicken or deviled ham)
1/2 lb cubed cheese, american or cheddar
3 hard-boiled eggs, chopped
2 tablespoons chopped green peppers
2 tablespoons chopped onions
2 tablespoons chopped olives
2 tablespoons sweet pickle relish
1/2 cup mayonnaise
8 hot dog buns

Steps:

  • Mix all together but the buns.
  • Split buns half way thru and fill evenly with mixture.
  • Wrap each in foil.
  • Bake at 325 for 20 minutes.

An old recipe, from an old friend, Jayne ... these are very filling and cheesy-gooey. Great with a side-salad for a Saturday night, sit-in-front-of-the-TV-type meal!

Number Of Ingredients 9

1/4 lb velveeta cheese, cut into tiny cubes
3 hard boiled eggs, chopped
5 1/2 oz can of tuna
2 Tbsp chopped bell pepper
2 Tbsp chopped green olives
2 Tbsp chopped bread and butter pickle
2 Tbsp finely diced onion
1/2 c mayonnaise
6 hot dog buns, white or wheat

Steps:

  • 1. Preheat oven to 250° while mixing the filling.
  • 2. Combine all ingreds [except hot dog buns!] in a bowl. Mix lightly.
  • 3. Split buns, and fill them with the tuna mixture.
  • 4. If you buy your hot dog buns in a box, return the filled buns to the box in which they came. OR, wrap each filled bun in aluminum foil. Wrap kind of loosely, so the filling doesn't stick to the foil. You can wrap them all in one huge piece of foil, if that's the way you prefer to do it.
  • 5. Place boxed or foil-wrapped buns in the oven at 250°. Cook for about 30 minutes, until filling is hot, and the cheese is bubbly and melted. Serve right away, while hot.

2 (6 ounce) cans tuna in water, drained
1/2 cup Miracle Whip (salad dressing)
3 hard-boiled eggs, chopped
1/4 cup sweet pickle relish
2 tablespoons onions, minced
1/2 cup cheese, diced in small pieces
6 slices bread

Steps:

  • Mix together all ingredients except bread.
  • Place 6 slices of bread on a cookie sheet.
  • Evenly distribute the tuna mixture onto the bread slices.
  • Bake at 350 degrees for 20 minutes.
