3 tablespoons finely chopped onions
2 cloves garlic, minced
1/2 cup butter or 1/2 cup margarine
1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
2 1/2 cups half-and-half
2 cups tomato juice
1/2 teaspoon Worcestershire sauce
1/4 teaspoon ground savory
1 -2 dash hot pepper sauce
2 (6 ounce) cans lump crabmeat, rinsed,drained,and picked over
sour cream
chopped fresh parsley

Steps:

  • In a medium-size saucepan, melt butter over medium heat.
  • Saute onion and garlic until tender.
  • Stir in flour, salt, and pepper; continue stirring and cooking until bubbly.
  • Gradually add the cream, tomato juice, worcestershire sauce, savory, and hot pepper sauce.
  • Bring mixture to a boil, stirring constantly.
  • Add in the crab; stir until heated through.
  • Season to taste with salt and pepper if needed.
  • Ladle soup into individual serving bowls.
  • Add a dollop of sour cream and sprinkle with chopped fresh parsley.

8 ounces crabmeat
1/2 cup chopped red onion
1/2 cup chopped red bell pepper
16 ounces tomato soup
1/2 cup half-and-half or 1/2 cup cream
2 (12 ounce) cans evaporated milk

Steps:

  • Saute onion and bell pepper till soft.
  • Add crab meat, milks and soup.
  • I add salt, pepper, garlic salt, crab boil, seafood seasoning- whatever floats your boat.
  • Sometimes I add corn- frozen.
  • I add or lessen the milks as to how much I am making- sometimes I add some stewed tomatoes.
  • Can be made thicker and served over rice- also good with shrimp.
  • Do not boil- the milks will separate and it will be ruined! SIMMER ONLY!
  • Good on a cold day!

This recipe is credited to Ms. Charlese Smith and is the Grand Prize Winner in the Soup Division of the 53rd Annual National Hard Crab Derby held in Crisfield, MD. It is very rich - not a diet soup!! I make this with one cup grated onion sauteed in the butter until very soft to start, before adding the milk and cream, but I didn't want to add that below as this is the original recipe.

1 pint whole milk
1 quart half-and-half
2 pints heavy whipping cream
1 lb jumbo lump crab meat (only from Maryland will do!)
1 tablespoon fresh parsley, chopped
3 teaspoons Old Bay Seasoning
1/4 cup butter
1/2 teaspoon salt
1/8 teaspoon pepper
cornstarch
water
dry sherry, to taste

Steps:

  • Bring milk, half and half, and heavy whipping cream to a boil. Add crab meat, fresh parsley, Old Bay Seasoning, butter, salt and pepper. When it starts to boil, make a paste of cornstarch and water and add to thicken soup.
  • To serve, sprinkle each serving with a bit of Old Bay and chopped parsley. Serve with oyster crackers and a small cream pitcher of sherry on the side for diners to add to taste. That's how we do it in Maryland!

One of our Chesapeake Bay delicacies is the Maryland Blue Crab. It's abundant from May through October and used in a variety of dishes, like this rich soup.

Number Of Ingredients 9

1/2 cup butter
1/2 cup all-purpose flour
1 to 2 tablespoons seafood seasoning
1 teaspoon salt
1/2 teaspoon curry powder
4 cups milk
1 pound fresh crabmeat or 3 cans (6 ounces) crabmeat, drained, flaked and cartilage removed
2 tablespoons minced fresh parsley
Additional milk and parsley, optional

Steps:

  • Melt butter in a 3-qt. saucepan; stir in flour, seafood seasoning, salt and curry powder. Cook until thickened and bubbly. Gradually add milk; cook and stir until mixture is hot (do not boil). , Remove cartilage from crab if necessary. Add crab and parsley to soup; cook and stir just until crab is heated. If desired, thin soup with additional milk; garnish with parsley.
