Steps:

  • Combine washed and torn spinach leaves, mushrooms and bacon in a large bowl.
  • In a blender, combine the dressing ingredients.

1/2 cup green olives, pitted and roughly chopped
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 bunch spinach, stems removed, washed and dried
1/4 red cabbage, cored and finely shredded
3 Italian Roma tomatoes, cored, seeded julienned
1 small red onion, julienned
1 small jicama, peeled and julienned
2 pickling cucumbers, peeled and julienned
Creamy Yogurt Dressing, recipe follows
Juice of 1 lemon
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 to 2 garlic cloves, roughly chopped
1 cup plain yogurt (as pure as possible, without stabilizers, pectin, etc.)

Steps:

  • Mix together the red pepper strips, oregano, olives, olive oil, salt and pepper in a small bowl and reserve.
  • For the salad, tear the spinach leaves into bite-sized pieces. Place in a large bowl with the cabbage, tomatoes, red onion, jicama and cucumbers and toss well. Top with dressing and serve.
  • For the dressing, combine the lemon juice, olive oil, salt, pepper and garlic in a blender and puree until smooth. Add the yogurt and blend briefly to combine.
  • To serve, pour the yogurt dressing over the salad and toss to coat evenly. Divide and place on 6 serving plates. Top each with a large spoonful of the red pepper garnish.

3 tablespoons water
4 bunches spinach, washed and torn (about 4 cups)
10 large strawberries, washed and quartered
1/4 cup thinly sliced red onion

1/4 cup raspberry vinegar
1/4 cup olive oil (mild)

4 teaspoons poppy seeds

Steps:

  • Heat oven to 375ºF.
  • Spread almonds on parchment paper on a baking sheet.
  • Sprinkle with sugar and spritz with water.
  • Toast almonds in oven until golden (about 10 minutes or so).
  • Remove and cool.

12 medium asparagus spears, trimmed and lower half peeled

3 ounces prosciutto, sliced into thin ribbons*
*To thinly slice the prosciutto, pile up the slices, roll them into a cigar, then thinly slice crosswise and peel apart the resulting ribbons.

Steps:

  • Make dressing
  • In blender, purée mango, yogurt, and vinegar until silky smooth, about 1 to 2 minutes. Stir in salt and pepper and set aside.
  • Make salad
  • Have ready a large bowl of ice and cold water. In medium saucepan over high heat, bring salted water to a boil. Add asparagus and boil, uncovered, until crisp-tender, about 3 minutes. Drain, then immediately plunge spears into ice water to stop cooking. Drain again and pat dry.
  • In medium bowl, toss together spinach and arugula.
  • In small bowl, toss mango and chives with olive oil.
  • To plate, pour 1/4 cup mango dressing into center of each of 4 plates. Lay three asparagus spears side-by-side over each pool of dressing, then top each with 1/4 of salad greens. Sprinkle with mango-chive mixture, then top with prosciutto.

1/4 cup white sugar

1 (6 ounce) container feta cheese
1 small red onion, thinly sliced

Steps:

  • In a large bowl, mix the spinach, onion, and sliced strawberries.
  • Place crumbled feta and candied pecans on top of the salad.
  • Place the sugar, salt, vinegar, oil, and 2 whole strawberries in a blender or food processor and blend until smooth. Stir in the poppy seeds.

50 g pine nuts

  • FOR THE DRESSING.
  • Cook the bacon in a non stick pan over a high heat for about 5 minutes or until crispy.
  • Place the bacon, mayonnaise and water in a food processor and process until the bacon is finely chopped.
  • FOR THE SALAD.
  • Place the eggs in a saucepan of cold water, bring to the boil and cook for 7 minutes.

Not sure where I found the original recipe idea for this but I have tweaked until it's something I just can't get enough of!! The picture posted is of an open-faced grilled turkey sandwich with this salad and dressing on it.. and OMG is it GOOD!! The salad by itself is a fantastic accompaniment to a healthy meal but if you want to try the sammie, I've added directions for that as well.

Seared Steaks with Tomato Salad and Creamy Spinach image

Treat your family to a steakhouse supper that's kinder to your wallet, complete with familiar sides: tomato salad and creamed spinach.

2 tablespoons balsamic vinegar
3 tablespoons olive oil
Coarse salt and ground pepper
2 beefsteak tomatoes, thinly sliced crosswise
1 sweet onion, such as Vidalia, one half thinly sliced, other half chopped
3 tablespoons all-purpose flour
2 cups whole milk
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1/8 teaspoon ground nutmeg
4 flat-iron steaks (4 to 6 ounces each)

Steps:

  • In a small bowl, whisk together vinegar and 2 tablespoons oil; season with salt and pepper. Place tomato and onion slices on a platter, and drizzle with vinaigrette. Set aside.
  • In a medium saucepan, heat remaining tablespoon oil over medium. Add chopped onion. Cook, stirring occasionally, until onion begins to soften, 4 to 5 minutes.
  • Add flour to pan; cook, stirring, 30 seconds. Gradually whisk in milk. Stir in spinach and nutmeg; season with salt and pepper. Cook, stirring occasionally, until spinach is tender and sauce has thickened, 3 to 5 minutes. Cover, and set aside.
  • Heat a large skillet over medium-high. Season steaks with salt and pepper. Cook until browned and medium-rare, 3 to 4 minutes per side. Serve steaks with tomato salad and creamy spinach.
