Simply Roasted Apples & Potatoes image

Simply Roasted Apples & Potatoes are the perfect combination of sweet and savory. Everything caramelizes and becomes beautifully tender. Plus it's all ready in 30 minutes!

Number Of Ingredients 9

5 medium potatoes (yellow, gold, or russet)
3 tbsp olive oil (extra virgin)
1 tsp salt
1/2 tsp dried basil (or 1 1/2 tsp fresh basil)
1/2 tsp dried rosemary (or 1 1/2 tsp fresh rosemary)
1/2 tsp ground mustard
1/2 tsp garlic powder
1/2 tsp black pepper
5 medium apples (I prefer gala but others work as well, leave peel on)

Steps:

  • Preheat oven to 425 degrees.
  • Slice your potatoes in half. Slice again so each potato is in four pieces. If your potato is fairly large you may need to cut some of them one more time. You want your potato pieces to be about the same size as the apple slices.
  • Add the potato pieces to a large ziplock bag or large bowl. Drizzle with olive oil, basil, rosemary, salt, ground mustard, garlic powder, and pepper. If using a bag, squeeze out excess air, seal, and shake until potato pieces are coated. If using a bowl, stir and flip potato pieces until they're coated.
  • Spread coated potatoes on a 12 x 17 baking sheet.
  • Place in the oven and bake for 5 minutes. (We are not fully cooking the potatoes at this point.)
  • Slice apples into quarters, removing and discarding the core and seeds.
  • Remove pan from oven. Add sliced apples. Use spatula to flip the potatoes and move the apples around so they too are coated with oil. Spread everything in a single layer.
  • Bake for 15 to 20 minutes or until potatoes are done. They should give a little when you press them.
  • Remove from the oven and serve immediately.

3 heads garlic, cloves peeled
3 pounds Yukon gold potatoes (about 4), peeled and cut into 1/2-inch cubes
3 Granny Smith apples, peeled and cut into 1/2-inch cubes
1 1/2 tablespoons extra-virgin olive oil
1 1/2 teaspoons coarse salt, or more to taste
3/4 teaspoon freshly ground pepper
3/4 to 1 cup skim milk
Low-fat sour cream, for garnish (optional)

Steps:

  • Heat oven to 425 degrees. Toss the garlic, potatoes, and apples together with olive oil, salt, and pepper in a large nonstick roasting pan. Cook, stirring mixture occasionally for even browning, until golden brown and tender, 45 minutes to 1 hour.
  • Transfer the mixture to a medium bowl, and add the milk. Gently smash some of the mixture against the side of the bowl, leaving some whole pieces, until all of the milk is incorporated. Season with salt if needed. Serve immediately, topped with a dollop of low-fat sour cream, if desired.

1 whole garlic bulb
1-1/2 teaspoons plus 2 tablespoons butter, divided
2 pounds potatoes (about 6 medium), peeled and cubed
2 medium onions, quartered
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
6 cups vegetable broth, divided
4-1/2 teaspoons all-purpose flour
1/2 cup milk

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves); cut top off bulb. Melt 1-1/2 teaspoons butter; drizzle over garlic. Wrap in heavy-duty foil. Place in a 9-in. round baking pan; set aside., Place potatoes and onions in a single layer in an ungreased 15x10x1-in. baking pan. Drizzle with oil; sprinkle with salt and pepper. Toss to coat. , Bake garlic and potato mixture at 400° for 35-40 minutes or until tender, stirring vegetables once. Cool slightly., In a blender, combine 2 cups broth and half of the vegetable mixture; cover and process until blended. Butternut squash, sweet potato, carrot, and garlic roasted in large pieces and then added to onion, celery, apple, and vegetable broth. Immersion blender does the trick for thickening without adding fat. Use curry powder in place of cayenne if you prefer more savory flavors than spicy. Apple juice can also be used in place of cider, and chicken broth in place of vegetable.

1 butternut squash, halved lengthwise and seeded
1 large carrot, cut into large chunks
1 sweet potato, cut into large chunks
1 head garlic
1 ½ tablespoons olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Arrange butternut squash halves, carrot chunks, sweet potato chunks, and whole garlic head onto the prepared baking sheet. Drizzle 1 1/2 tablespoons olive oil over the vegetables; season with rosemary, salt, and black pepper.
  • Roast in preheated oven for 20 minutes, turn the carrot and sweet potato chunks, and continue roasting until everything is tender, 20 to 30 minutes more. Set aside to cool.
  • Use a spoon to remove flesh of squash from skin. Cut carrot and sweet potato into small pieces. Squeeze roasted garlic from skin.
  • Heat 1 tablespoon olive oil in a large pot over medium heat; add celery and onion. Season the celery mixture with nutmeg and cayenne pepper; saute until the celery and onion are tender, about 8 minutes. Add apple and continue to cook and stir until apples begin to get hot, about 2 minutes more.
  • Pour vegetable broth and apple cider into the pot; bring just to a boil, reduce heat to medium-low, and cook at a simmer for 30 minutes.
  • Stir squash, carrot, sweet potato, and garlic to the pot. Blend soup with an immersion blender until smooth.

I made these roasted garlic potatoes for Thanksgiving although it's a simple enough recipe for any day! I wish I had more right now.

2 heads garlic, separated into cloves and peeled
1 tablespoon olive oil
4 pounds potatoes, peeled and cut into chunks
½ cup half-and-half
4 tablespoons butter, melted
½ (8 ounce) package cream cheese, softened
¼ cup sour cream
salt and ground white pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place garlic cloves in aluminum foil and drizzle with olive oil.
  • Roast in the preheated oven until very soft, about 25 minutes.
  • Meanwhile, place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Mix potatoes, half-and-half, and melted butter until well combined. Add cream cheese, sour cream, and roasted garlic; mix with a hand mixer until well blended. Season with salt and pepper.
