SPRING GREEN RISOTTO

1 1/2 tablespoons good olive oil
1 1/2 tablespoons unsalted butter
3 cups chopped leeks, white and light green parts (2 leeks)
1 cup chopped fennel
1 1/2 cups Arborio rice
2/3 cup dry white wine
4 to 5 cups simmering chicken stock, preferably homemade
1 pound thin asparagus
10 ounces frozen peas, defrosted, or 1 1/2 cups shelled fresh peas
1 tablespoon freshly grated lemon zest (2 lemons)
Kosher salt and freshly ground black pepper
2 tablespoons freshly squeezed lemon juice
1/3 cup mascarpone cheese, preferably Italian
1/2 cup freshly grated Parmesan, plus extra for serving
3 tablespoons minced fresh chives, plus extra for serving

Steps:

  • Heat the olive oil and butter in a medium saucepan over medium heat. Add the leeks and fennel and saute for 5 to 7 minutes, until tender. Add the rice and stir for a minute to coat with the vegetables, oil, and butter. Add the white wine and simmer over low heat, stirring constantly, until most of the wine has been absorbed. Add the chicken stock, 2 ladles at a time, stirring almost constantly and waiting for the stock to be absorbed before adding more. This process should take 25 to 30 minutes.
  • Meanwhile, cut the asparagus diagonally in 1 1/2-inch lengths and discard the tough ends. Blanch in boiling salted water for 4 to 5 minutes, until al dente. Drain and cool immediately in ice water. (If using fresh peas, blanch them in boiling water for a few minutes until the starchiness is gone.)
  • When the risotto has been cooking for 15 minutes, drain the asparagus and add it to the risotto with the peas, lemon zest, 2 teaspoons salt, and 1 teaspoon pepper. Continue cooking and adding stock, stirring almost constantly, until the rice is tender but still firm.
  • Whisk the lemon juice and mascarpone together in a small bowl. When the risotto is done, turn off the heat and stir in the mascarpone mixture plus the Parmesan cheese and chives. Set aside, off the heat, for a few minutes, sprinkle with salt and pepper, and serve hot with a sprinkling of chives and more Parmesan cheese.

Fresh peas provide contrasting color, a gentle pop when bitten, and summery flavor when added to traditional risotto. The dish is made with Arborio rice, chicken stock, fresh marjoram, and Asiago cheese.

6 to 8 cups homemade or low-sodium canned chicken stock
3 tablespoons extra-virgin olive oil
2 shallots, minced
1 cup Arborio or Carnaroli rice
1/2 cup dry white wine
1 1/2 pounds garden peas, shelled (1 1/2 cups)
3 tablespoons unsalted butter
1 cup grated Asiago cheese (about 4 ounces)
1 tablespoon coarsely chopped fresh marjoram leaves, plus several sprigs for garnish
Coarse salt and freshly ground pepper

Steps:

  • Bring stock to a boil in a medium saucepan over medium heat; reduce heat, and keep at a low simmer.
  • Meanwhile, heat oil in a large heavybottom saucepan over medium heat. Add shallots, and cook, stirring frequently, until they are softened and translucent, about 4 minutes. Add rice; cook, stirring frequently, until it is thoroughly coated and slightly fragrant, 3 to 4 minutes. Add wine, and cook, stirring constantly, until it is completely absorbed.
  • Using a ladle, add 3/4 cup hot stock to rice mixture; stir constantly with a wooden spoon until it is thick enough to leave a clear wake behind the spoon.
  • Continue adding stock 3/4 cup at time, stirring constantly after each addition, until rice is mostly translucent but still opaque in the center and liquid is the consistency of heavy cream, a total of 18 to 20 minutes; the mixture will continue to thicken slightly when removed from heat. About 12 minutes into cooking, stir in peas. Watch carefully, adding smaller amounts of liquid if necessary to make sure it does not overcook. The rice should be al dente but no longer crunchy, and the peas tender and bright green.
  • Remove from heat. Stir in butter, cheese, and chopped marjoram, and season with salt and pepper. Serve immediately, garnished with marjoram sprigs.

1 cup short grain brown rice (or brown sushi rice)
1/2 tablespoon olive oil
1 medium yellow onion, finely diced
12 ounces mixed mushrooms, thinly sliced
1/2 cup white wine
1 red bell pepper, cored and diced
1 1/2 cups vegetable broth, room temperature (or chicken broth)
1/2 tablespoon cornstarch mixed with 1 tablespoon water
1/2 cup grated parmesan cheese
sea salt
fresh ground black pepper, to taste
truffle oil (optional)

Steps:

  • In a medium saucepan over medium-high, combine the rice and 2 cups water. Bring to a boil, then cover, reduce heat to simmer and cook for 20 minutes.
  • Remove the pan from the heat, leaving it covered. The rice will not be completely cooked and there will be some water in the pan. Set aside.
  • In a large skillet over medium-high, heat the oil. Add the onion and mushrooms, then saute until just starting to brown, about 3 to 4 minutes. Add the wine and stir vigorously for 1 to 2 minutes to deglaze the pan. When the wine comes to a simmer, add the bell pepper and the rice along with any liquid in the pan. Stir well.
  • Add the broth and stir well. Bring to a simmer and cook, stirring frequently to prevent sticking, until the liquid has thickened and reduced, about 10 minutes. Stir in the cornstarch mixture, then cook for another minute. Stir in the cheese until melted. Season with salt and pepper. If desired, drizzle with truffle oil just before serving.

12 ounces mixed spring greens, such as tatsoi, baby mustard greens, lamb's quarters and arugula (about 12 cups)
1 tablespoon extra virgin olive oil
1 large bunch scallions (wild leeks) or 1 bunch ramps, trimmed and thinly sliced (wild leeks)
1 teaspoon finely chopped fresh ginger
1 teaspoon finely chopped garlic
sea salt or kosher salt, to taste
3 1/2 cups cooked brown rice, preferably basmati, from 1 1/2 cups raw rice
1 tablespoon unsalted butter
2 ounces finely grated asiago cheese, plus additional for serving (about 1/2 cup)
fresh ground black pepper, to taste

Steps:

  • Bring a large pot of salted water to a boil. Add the greens and boil until they are just wilted, about 1 minute. Use a spider or slotted spoon to transfer greens to a colander and let cool slightly, reserve cooking water.
  • Press greens to remove excess water, then transfer them to a board and chop roughly.
  • In a large skillet over medium-high heat, warm the olive oil. Add the scallions, ginger, garlic and a pinch of the salt, and cook, stirring, until softened, about 2 minutes.
  • Stir in the rice, butter, chopped greens and 1 1/2 cups reserved cooking water and cook, stirring over medium-high heat, until water is almost absorbed, 3 to 4 minutes. Stir in the cheese and season with salt and pepper, to taste.
