2 cans (8 ounces each) unsweetened crushed pineapple, undrained
1 package (1 ounces) sugar-free instant vanilla pudding mix
6 vanilla wafers

Steps:

  • In a bowl, whisk the sour cream, pineapple and pudding mix until blended and thickened. Serve immediately with vanilla wafers. Refrigerate leftovers.

1 (3 ounce) package vanilla pudding mix
1 (8 ounce) can crushed pineapple, undrained
1/2 cup plain yogurt

Steps:

  • Measure milk in 4 cup glass measuring cup.
  • Stir in pudding mix and pineapple.
  • Microwave (high) uncovered for 5 and 1/2 minutes or until mixture starts to bubble, stirring once or twice during last half of cooking time.
  • Cool.
  • Stir in yogurt.

1 can (20 ounces) unsweetened pineapple chunks, undrained
10 cups cubed dinner rolls (about 17 rolls)
1 package (8 ounces) cream cheese, softened
3 tablespoons confectioners' sugar
5 large eggs
1 can (14 ounces) sweetened condensed milk
1/2 cup heavy whipping cream
2 teaspoons vanilla extract
SAUCE:
1 can (14 ounces) sweetened condensed milk
1/4 cup butter, cubed
1-1/2 teaspoons vanilla extract

Steps:

  • Drain pineapple, reserving 1/3 cup juice. Place half of the bread cubes in a greased 13x9-in. baking dish. In a small bowl, beat cream cheese and confectioners' sugar until smooth; drop by tablespoonfuls over bread cubes. Top with remaining bread cubes and pineapple., In a large bowl, whisk eggs, milk, cream, vanilla and reserved pineapple juice until blended; pour over pineapple. Refrigerate, covered, several hours or overnight., Preheat oven to 350°. Remove bread pudding from refrigerator while oven heats. Bake, uncovered, until lightly browned, 25-35 minutes., In a small saucepan, heat milk and butter until butter is melted. Remove from heat; stir in vanilla. Just before serving, drizzle over warm bread pudding.

THIS WONDERFUL old recipe was a treat during the Depression. We didn't have dairy topping in those days, so we enjoyed it with real, heavy cream. Mother served this as a special treat for our family. 1 cup cooked long grain rice
1 can (8 ounces) crushed pineapple, drained
1/2 cup heavy whipping cream
2 tablespoons confectioners' sugar
1/4 teaspoon vanilla extract
Maraschino cherries and fresh mint, optional

I use to hate banana pudding as a child, so my mom would make a variation of it using chunks of pineapple instead of bananas. It's the best pudding I found I have liked all these years later.

1 can(s) sweetened condensed milk
1 1/2 c cold water
1 box 4serving package instant vanilla pudding
2 c whipping cream, whipped
36 vanilla wafers
1 can(s) large, pineapple chunks, drained

Steps:

  • 1. In a large bowl, combine the sweetened condensed milk and water. Add pudding mix, beating until well blended. Refrigerate for 5 minutes.
  • 2. Remove pudding mixture, folding in already whipped whipping cream. Spoon 1 cup pudding mixture into a 2 1/2 quart glass serving bowl.
  • 3. Top with one-third EACH of the vanilla wafers, drained pineapple chunks and pudding mix. Repeat layering twice, ending with the pudding mixture on top. Chill thoroughly. Store leftovers covered in the refrigerator.
  • 4. TIP: For a festive individual pudding dessert for holiday guests, prepare mixture and layers in individual dessert dishes or cups with stems. Serve chilled.
